That looks yummy! I think I will make that to change it up from my usual. I eat mine the Asian savory way. I soak some kombu and dried shiitake in water in a large mason jar in the fridge for Asian stock ( dashi) . I use some of that water, and add some nooch with the oatmeal. I top it with green powdered seaweed (aonori) and homemade salt and sugar free kimchi. This is like the rice porridge I grew up eating all of my life but with oats. I used to just eat rice but switched to oats for breakfast. I also switched from eating white rice to sprouted GABA rice for other meals. Rice is life. Hahaha 😁 I'm Korean-Japanese 😅

you can use the instant pot, all the veggies and oatmeal cook in about a minute- if using old fashioned oats . For steel cut oatmeal I batch cook for the week, then just do the veggies and spices each day in the instant pot.

I love oatmeal, also. My kid hates oatmeal! WHY?! The texture. The texture makes my kid gag. I have tried hiding it by making a "pudding", making a sausage, by wrapping in rice sheets, (kid is not fooled by this one, so they no longer will eat these) I put it in stew and chili, that still works, but it is less oats ingested. i make granola or try, using y'alls' recipe and video but for some reason it never crisps or it is over cooked. I use my small oven. Have y'all used your small oven for granola? I experiment with the time and temp, but Kid won't eat the stuff I make. Dang it.
Maybe try steel cut oats? They take longer to cook (cook on stove top, not microwave) but the texture is quite different in my opinion. More solid and denser.

Me too but steel cut definitely last longer as well as adding in fruit (banana), peanut butter & ground-up flax seeds.

They will eat oatmeal cookies but that is the least healthy way to eat oatmeal.
