      I think they were referring to the rabbit as being bland. As somebody who was born in New Orleans ... I have to agree. Rabbit just has no flavor compared to literally every other type of meat used in a "traditional" gumbo.

    I live next door to Louisiana (Texas) and have been there many times. I didn't see anything that resembled gumbo. and if it is bland, it damn sure ain't gumbo.

      @@fredcarlson5873 There is a chain (few restaurants) here in Texas (Houston to be exact) called Goode company seafood, they have the BEST (my opinion) seafood gumbo with oysters and crab meat. We're close to Louisiana and know a little about it, Houston is a melting pot of cuisines!

      @@fredcarlson5873 my grandma makes turkey oyster gumbo the Sunday after Thanksgiving every year. Alot of people use oysters. I've seen cracked crab, eggs, okra, almost any type of sea food, chicken, sausage but lamb and black eyed peas never in my life lol

    I'm from Louisiana and have been eating gumbo all my life (over 60 years) and I've never seen any gumbo like ANY of these, ever, in the South. And I've eaten gumbo in restaurants and homes and civic occasions in over 8 states. The ONLY time I've seen anything like this was in New Jersey at a "Cajun" restaurant where NONE of the help or even the cook have ever even been to Louisiana; the cook said he got the recipes for his Cajun meals from a cookbook published in Philadelphia. Sometimes take a gander (but certainly not a taste) of "authentic" Cincinnati (or Cincinasti, as a lot of people call it) chili

      I thought the first one was pretty close (edit: Correction. The first one PICTURED, which they didn't actually get to eat). They served it in the most bizarre way imaginable, but the gumbo itself looked pretty good. Then again, I was born in New Orleans but my family moved when I was young, so I may not be 100% "authentic".

      I think he is right the people from the south created gumbo I'm sure they have enuff experience. My understanding of gumbo was they created it in the rural South none could have afforded to buy shrimp so they used crawdads instead.

      Depending on where you live in Louisiana, gumbo can vary a bit. From the creole influence close to New Orleans, to the basic chicken and sausage of North Louisiana, the seafood gumbo down by the Gulf, to the chicken & andouille along with boiled eggs in Avoyelles Parish...Ain't none of that crap gumbo...

    I grew up in New Orleans and Lafayette Louisiana. Nobody there has ever, since the beginning of time, eaten lamb or rabbit gumbo. Or put oysters in a file gumbo.

      Gumbo was a grab bag(pot?) of stuff at my house I liked my moms, Loved my grandmas and hid whenever my uncle decided to 'treat' us to his finesse in the chicken. Man I miss a good crawfish boil ! Hey Facts fly some of your people down to Louisiana for a Crawfish Boil they'll love it !

    Just to give some context, Louisiana Gumbo is an old Cajun tradition where everything in the yard is cooked up into a soup over rice. So, if they caught shrimp and fished all day, the left over bait went into the pot. (Small Shrimp) Any vegetables, tomatoes, garlic, onions, peppers, and all of this is started with a pot with butter and flour and garlic that is heated until the mixture is golden brown. Add spices and vegetables and let it simmer. Add water and broth from boiling other ingredients and finally, oysters, chicken, fish, crawfish, and finally, Okra as a sizing agent to thicken the soup and then dump it over rice and there is the traditional Gumbo. In fact, the recipe varies by the season and what is being harvested. It is a hearty and tasty soup filled with flavors and nutrients that keep Cajuns healthy, wealthy and wise. Never discount the Boudain Sausage either. It is a Cajun mixture of wild pork, rice, spices and is used in some Gumbo recipes as a supplement when other protein is in short supply. Some other Proteins include Alligator, Crab and Rabbit. Possum is usually reserved for only true Cajuns.

      I disagree that gumbo is a “Cajun” recipe. It’s actually a cultural blend. Creoles also traditionally make gumbo. The word gumbo is actually derived from an African word for okra and obviously the term came from the slaves who were brought over. That’s why I hate when people say okra doesn’t belong in gumbo because gumbo means okra. .

      Your wrong as well...learn your Cajun history...Gumbo is not Originally a Cajun dish...it was a African dish that black folk brought over and mixed with the Cajuns and made Creole and the Recipe evolved

    I'm from Lafayette Louisiana, the heart of Cajun country. I haven't seen some of those gumbos EVER! I'm positive you would love my wife's gumbo. She makes her roux from scratch and is so thick it's nearly a stew. She puts in chopped onions and bell peppers, chicken, sausage, and a pork meat called tasso. It's served in a bowl over rice. We season it for spice, not burn. Many people here use different things for their seafood gumbo. Most often used is shrimp (prawns), crawfish tails, oysters, and sometimes a fresh caught fish added in near the end of the cooking since it doesn't take look to cook once it's been cleaned and deboned. Some go crazy like the other gumbos you hated. Would love for you to taste ettouffee (shrimp, crawfish, or chicken).

      Sara Duty, we take our coats out the closet when it gets down into the low 60s. An average winter can have several days below 32. When it might get to the mid 20s it's called a "hard freeze". Keep in mind many homes are built a few feet off the ground and our homes are insulated more for hot summers than cold winters.

      The first one is (edit: correction, the first one PICTURED. They didn't actually get to eat that one). It's served a little odd (I've NEVER had a ball of rice with the gumbo poured around the edge) but otherwise it's about as "traditional" as you can get. Shrimp, sausage (I'm hoping it's Andouille but they may not have that over there), and chicken in a roux sauce. Personally, I have to make it without the shrimp because it makes me sick (not as in a "it'll kill me" allergy, just all seafood makes me nauseous for unknown reasons) but it's still one of my favorite meals to make. For the record, I was born in New Orleans but my family moved out when I was young, so I may not be 100% "authentic" anymore, but I've had that first style of gumbo since before we moved.

    I’m from Louisiana and first of all these gumbos were super thick and I’ve never heard of lamb, black eyed peas or oysters in gumbo. Gumbo is more of a soup consistency normally instead of gravy. If you’re making a gravy base then you have étouffée instead

      What they serve is an Irish interpretation. Sometimes they get it right. I wish they would go on the road to the source of some of this food to compare; NYC for pizza, Nola for some gumbo. Gomez, go eat a taco.

      Well, some gumbo is Creole; the holy trinity for the roux base (onions, bell peppers and celery) from the French/Cajuns, Okra is African, File powder is Native American. Add in fresh ingredients from the local waters/land and there you go.

      Viva Europa that is no wonder why we Europeans don't have such high obesity rates, our Irish government has banned Subway bread because of its high sugar contents. Government said that it is not bread with too much sugar. Subway bread is classed as a cake.
      Americans never had high obesity rates in 1980s, as their foods were healthier. If you compare obesity map of USA with the divorce map, crime map, suicide map, etc, you will find that unhealthy foods are triggering most societal problems.

      It is still in the Southern US. Irish folk can't possibly know about it unless they visit. I cook all my own foods, and gumbo is on my list. Eateries must really be special for me to go and eat out, but only because they can't do a good job at cooking. I usually have complaints.

    I'm trying to be positive here, but I live in New Orleans and I've never heard of most of these "Gumbos". They also look really weird and I've also never seen a gumbo so thick it could be eaten with a fork.

    I am sad & disappointed!!! Whoever made those so-called 'Gumbos' did a GOD AWFUL job!!!!!!!!! None had the right color, nor the right consistency. There is no way in hell a Gumbo should be eaten with a fork. Different Gumbos have different colors & flavors. If it is bland, sorry Boo, you haven't had Gumbo!!!
    I saw not a SPECK of filé in the File Gumbo.....Like,what da hell.... That's my favorite one!!!!! BTW...I'm a Louisianian, in the city of New Orleans to be specific.

      Well, if someone from Louisiana taught you how to make a gumbo, then you might get a pass. My mom was a hillbilly from Kentucky, but my dad's sisters taught her how and she nailed it to the point that hers ended up being about as authentic as you can get.

      Growing up in Beaumont and Lafayette, I know gumbo. Nothing in this video looks like gumbo. Start with a dark roux, then add whatever you have. That's a gumbo!

    I didn't see okra, and that's the stiffest andouille I've ever seen. Not enough fat and rice in the mixture before they cased it, but I'm happy they are trying something close. Maybe Irish People try Mudbugs (crawfish) , Gator, and possum would be good

    Gumbo?! Nah. Here in New Orleans, we'd call that thick, nasty gunk they're eating "curry." Gumbo is supposed to stay in liquid form and rice is the complement to the gumbo, not the gumbo to the rice. Oh my god. This was so painful to watch! Haha! I mean, WHOLE vegetables?! Lamb?!       It sounded to me like they were referring to the rabbit, not the gumbo itself. I actually have to agree with them on that... rabbit has no flavor, which is why it's never made in gumbo. Cajuns love flavor. For the record, I was born in New Orleans but my family moved when I was young, but I've always had that "flavor is king" attitude towards food.

    Where I live Gumbo is always made with Seafood & Cajun spices. Never knew their was any other except the sausage gumbo but they cut up the sausage & I have never had it with rice. It was always served as a thick soup.

    Best definition of gumbo ever, Tornado of Murder! Gumbo is an "at hand stew" so usually a ton of seafood, but meat and veg in a broth is basically all it is....and usually a ton of spice.

    As a Cajun, gumbo should never make your mouth burn. The spices and seasonings should hold good flavor without overpowering any single part of it. Next time, get an actual cook who knows what they're doing because this is just a disservice to everyone.

      Considering standard Irish cuisine, what you'd see as not overpowering could burn the average mouth there. It's a matter of tolerance and what you're raised with. I grew up on much blander food and had to adjust to hotter spices. I'm still a bit of a wuss on that end. But the fact "bland" came out of any of their mouths regarding that food is the mark of an incompetent cook for sure. It's Cajun and Creole cuisine, for pity's sake. The chicory coffee has more of a kick than the gumbo they were tasting.

    I've lived in Louisiana and this is not how gumbo is served, that soup is too thick. There is usually more soup than rice, it's not meant to be served like a curry. I have never had gumbo with black eyed peas or lamb, this is a terrible representation of gumbo.

    Gumbo is a classic dish made in the Cajun community. It utilizes whatever is growing in the garden and what can be gathered from the swamp. Spices and herbs are used and Okra is added toward the end as a sizing agent and also for taste. At the start, several sticks of butter are melted and flour is added while stirring over medium heat. The butter cannot be allowed to break and burn or the roux is ruined. Chopped onion is added and when the roux is dark and chocolate colored, vegetable or chicken stock is added along with bell pepper, celery, and chicken, Boudin (A Cajun sausage made with rice and liver with other meats and spices). It is served over rice and garnished with shallots. A seafood gumbo has leftover bait shrimp, oysters, crawfish tails, fish filet and anything else the swamp provides. Add some Tabasco and you have a wonderful meal. In South Louisiana, this meal is usually made in large pots and served communally. If you didn't like it, it probably was not done well. From the looks, none of your Gumbos was actual Louisiana style gumbo. That looked more like Campbell Soup from a can. Also, Boudin needs to be sliced into pieces so it can be eaten with a spoon and it can release its flavor while cooking. Don't judge this food by what you ate here.

    Love gumbo. But,I had lived in New Orleans about 2 weeks when my boyfriend said we were going to his grandparents friends for gumbo. You can smell it 2 houses away, amazing smell. These were cajuns, I could barely understand them. I sneaked a look in the pot and there was a squirrel head looking back. Took 5 years before I tried again. Somewhere else.

      As somebody who was born in New Orleans ... yeah, that would turn me off of gumbo too. The first one shown (edit: Correction. The first one PICTURED, which they didn't actually get to eat) was pretty close to "traditional", although they served it in the most bizarre way possible. Every other form ... I've never even heard of, and can't imagine anybody actually making them and calling them gumbo. NOBODY puts rabbit in gumbo. Rabbit has no flavor, and it would make the entire dish bland (as they said in the video).

      Yeah if someone tried to give me that as gumbo I'd send it back and probably find another place to eat.
