This is making me proud that my friend from Texas gave me mad props on my dry brined Tri-tip BBQ I brought to a friends birthday. Cooking for people already has me nervous but I try my absolute best and having the nod of a Texan native meant a lot to me. Half the battle is having the patience to do prep work for at least 24 hours before ever cooking the meat.

A multifaceted, complex art requiring knowledge & experience, often handed down through generations! And a labor of love. Chopping wood, stoking the fire, hovering over hot smokers tending the meat makes you dirty, gritty, hot & sweaty. The smoke burns your eyes & so does the sweat when it rolls into them. BUT you counter that with the company of those you love, hours of conversation & laughs, coolers full of ice-cold beer & cokes, & pitchers of iced tea & lemonade. And the payoff is sublime!

Start preparing to pay for your daughter to go to university in texas! For a great school and the best BBQ, stay between Waco and College station, A&M and UT. The closer to Austin, the better the food. Roadside shacks are your best friend! I live north of Dallas, but it’s worth the drive. Oh, and pecan pie and banana pudding are Texas’ favorite desserts. One of my favorite things about America is how every region has it's own foods they do better than anywhere else. If you're ever on the east coast, like right on the water, you need to try the local seafood, best I've ever had. Everything from the the maple syrup in Vermont, to the peaches of Georgia, to the wines and oranges of California, food is culture, and Americans love sharing good food with everyone, it's one of my favorite means of cultural exchange.

What's amazing is that TX BBQ is totally different from other southern states. Kentucky or Tennessee enjoy the sweeter flavors. TX goes big and bold. The amazing thing about the US over any other country is that we have so many different cultures that have made their homes here and the cuisine follows. Seafood in the northeast, cajun (french/african) in Louisiana, BBQ is the south, West coast asian fusions and chinese/japanese/korean. You can find everything here.

I WISH I could go back in time to this place, the food was just mind bogglingly good. And shockingly, one of the best BBQ joints I've been to outside of Texas or a more southern state, was in NY in Brooklyn. You can make barbecue just like that at home. All you have to do is smoke your meat.Don't bake it don't grill it on a grill.Don't broil it in a broiler. You have to smoke it With hard wood at about two hundred and twenty five degrees For about eight to sixteen hours depended on the size of the meat... General Rule of thumb for beginners is 45 minutes a pound for each slab of beef or pork for poultry 30 minutes a pound for fish, 15 minutes a pound...... Never smoke food on the flame, always away from the flame.
The flame on one side the food on the other side of the Grill

I don't even really eat much meat other than turkey (every day for breakfast and only the good stuff: Boar's Head)... and I was drooling over watching this. Sam's near crying reminded me of the time I went to a New York deli in Colorado (ex NY'er that opened it)... my friend had an egg salad sandwich and he had the same sort of reaction. Then he started to cry and I asked what was wrong and he sobbed, "It's almost gone!" 🤣 I told the deli guy how much the sandwich meant to my friend and he packed us each a sandwich to go free of charge for our journey! @@johnroberts1849 I lived in KC for 25 years, and while I'm OK with those showing some hometown (I moved there as an adult) pride, I won't say it's better. I will say it's on par with Texas, but it has a different heritage and philosophy. That makes direct comparisons impossible, and Carolina BBQ's yet another thing. There can't be a "best" when the players all take a different approach to a similar, but not identical outcome. That's the three BBQ centers, but I'll give a shoutout to Memphis for its ribs, and all the little BBQ joints in other towns and following other traditions. It takes a national-level chain to fuck up Q, and in a good sit-down restaurant you might get some good stuff, but a joint will give you as good or better, for a much lower price.
Yeah, I dove right into the KC Q culture, then wallowed in it. I want to send some of my homemade rub to Atlanta, but managing packaging, shipping, and who knows what applicable laws, not sure I can swing it on a disability income. All I can say about that is once I got it dialed in, folks started refusing to use sauce on my ribs. This ain't me trolling, this is from an important part of my life. As a Texan this makes me happy, I've been in Africa for almost 3 years now, and these videos always makes me miss home. Definitely an emotional experience when you have proper Texas BBQ, even as a Texan born and raised I've had this happen at specific restaurants. Brisket is one of the best foods in the world, and I've had all kinds of authentic food from all over the world.👍
Being that I've eaten at one of Texas Monthly's top BBQ places and many others, had it made by family, and made it myself a few times, I've had some great BBQ in my life, but for me my favorite is in San Antonio, Texas at a place called 225° Urban Smoke. Everything is cooked to perfection with love, and the owners and staff are super friendly. I have to say my go to favorite is the brisket as I'm sure you could tell form the earlier part of my comment, usually love the mac & cheese a lot if done right, but it's tough to choose just one because I love a good potato salad when done right as well. For desert, banna pudding is usually great and sometimes the only desert they have, though if they have other types, cheesecake is great, as well my favrotie would have to be peach cobbler or other cobblers, if they have it. Awesome review, keep up the great work, and hope y'all get to come back to Texas often, can't wait to show my Ghanaian family God has blessed me with here in Africa places like Terry Black's and 225° Urban Smoke. I suggest next time, try a brisket sandwich, especially one with a nice burger bun, and use some good BBQ sauce, at a place like Terry Black's, for brisket, I always prefer the BBQ sauces with more black pepper, and just bread, meat, sauce is usually perfect. Also, if y'all haven't had the chance, I suggest going to San Antonio, Texas some time for some of the best, if not the best, TexMex (Texas, Mexican) food you'll ever have. Check out this little place called AGUASCALIENTES TAQUERIA,12790 W Loop 1604 S San Antonio, Tx. Ask for the al pastor, make sure its pork and with cactus, you wont regret it. This one is a little more authentic Mexican though, so more of a TexMex taste, try any Gringo's Mexican Kitchen in or near Houston, Tx. Cheers and God bless.

As a Texan, your reactions to the turkey mimicked what I felt when I moved here from California. Hahaha. You all were crying tears of joy! Americans may be overweight, but we eat happy!

I remember going to Jack Stack BBQ in Kansas City, after a Chiefs game. I got this huge meat platter, with like 5-6 different BBQ meats on it, including smoked turkey. I took one bite of the turkey, thinking I’d probably not eat much more & just focus on all the ribs & burnt ends. Msn, that turkey was so friggin’ good, it almost brought tears to my eyes🤣

You can't beat Texas BBQ, but the best Texas style BBQ in Colorado is for sure Rudy's BBQ down in Colorado Springs. I'm in love with their brisket and pulled pork sandwiches.

As an American I enjoy how they just sample our culture and enjoy it. I hope their adventures lead to other states and other foods. I find foods everywhere I go in the states that I love one of the joys of living here. We got problems for sure, wish we could sit around tables sharing our cultural gifts with each other and settle our differences.
