Traveled for my career. Ended up in New Orleans and south LA for many months. Dang, Cajun food is the best food on the face of the earth. One of my staff members was from Lafayette and was 100 percent to the bone Cajun. She taught me how to cook gumbos, etoufees and red beans and rice. Most requested dishes in my family.
I will agree with you 100% @EICid70 Cajun food is the best on the planet!! Thanks for watching
Lol, ok...."Isa" 😊

lol yes indeed we are always excited about cooking @praisealcolic but even more excited about eating! Thank you so much for watching! Keep cooking and I’ll see you in the kitchen!
I have some of those red beans. I'm a small sized prepper grand person. I am a Texan that makes the best pintos this side of San Antone. God bless you CUZZIES! so I'm using pintos. They are more pale and fresh. That's a big deal regarding cooking time, according to the mexican girl that taught me how to make them. We were both poor in south tejas at the time. I don't pre soak unless high up. I'm missing high up. It's hot here in NW Oklahoma.
Please let me know how that turns out with the pintos @margaretlouiseable
Love their energy together

Just left NOLA yesterday after a (way too short) vacation. It was my first time visiting and aside from the heat, I could stay there forever. Just hearing y’all speak does something for my heart. My daughter who was with me on the visit is officially addicted to red beans and rice and I am right behind her. Believe that I will be on this recipe!

I love this! I will add this to the long list of "must make recipes". I don't think I have ever heard of beef bacon here in Indiana. That a new one for me.
lol Clarence come up with some shit!! @andrewhedger3872 regular bacon works just fine!
@captaincobyscajuncooking6144 You both had me rolling. Geezy trying to keep you in your lane as his Sous Chef and not take over and adding that sausage " too soon" had me busting up. I would love to be in the live audience watching you two go at it. 🤣
I LOVE IT!!!.... Perfect
Thank you @newventureproperties1982
This very well may be my new favorite channel! That meal looks like straight fire! I love the comradery and the mutual tension and resolution. That said, the man chose beef bacon of all things, and then you wanted to throw in pork? Take a hint my bro. We're all trying for something

Reminds me of Paul Prudhomme's old bean recipe. The trinity goes in at stages and the browned sausage goes in the last 15 or 20 minutes. The tomato paste and bullion sound interesting and I'm definitely going to give them a shot. Thank ya'll.
Thank you @user-ul8cr4tu7j please let me know how it turns out! Keep cooking and I’ll see you in the kitchen

Looks Amazing! Foremans!!!
Yes Indeed Foreman’s undefeated!! @THxHITMANx thanks for watching brother
Looks delish. You guys put a lot of meat in that pot. I don't use turkey tails anymore because they aren't as meaty and are very expensive. So I have been using smoked beef sausage. I plan on using smoked turkey wings next I make a pot. Great job 👍👍👍😋😋😋
Thank you @youdontsay3379 more meat the better for me! And the turkey necks are a bit pricey but they do bring the flavor! Let me know how the wings turn out in your next dish!
I Love the camaraderie at firehouses, as well as there cooking, my father in law was the chief for yrs we were invited to a few meals there and I swear some of these guys could be chef's. Looks great can't wait to try this recipe.

Does taste good too @brianvannorman1465 lol thanks for watching
I'm going to make these
Awesome @Msmichelledavis please let me know how that turns out!
You got to wash and pick your beans before putting them in your pot because there are usually dirt and rocks in that bag. Take it from a NOLA girl, wash and pick those beans and leave out that tomato sauce/paste.
Thank you @lindasmith9834 we will give that a try! Thanks for watching and commenting
If you’re using cheap beans maybe, not with Camellia.
"Look" your beans. :)
Not only the beans, turkey neck & any other meat who knows what has handled that meat
That brand comes pre cleaned I do believe
I guess firemen don't have time to sort and rinse their beans. Besides, I hear eating little rocks and dirt and things builds character.
I always add a little Zatarains liquid crab boil too. I don't add tomato paste, but Satchmo added a whole can of tomato paste in his, so I can't say it's wrong - just a matter of taste. Good Job for a couple amateurs. Just kidding! There's no accounting for taste. Seriously though, I like how you layered the flavors by staggering when your vegetables are added. This works with Chili too. Chef Paul Prudhomme taught me that back in the 70's. C’est Si Bon!
The Camilla Beans are pretty clean not saying they don’t have any little gremies in there but like you say it builds character! lol may have to try the crab boil out! And I agree with you on the taste thing it’s definitely a personal. If we all cooked the same all our food would taste the same!! Thanks for watching and commenting! Keep cooking and I’ll see you in the kitchen
That Foreman’s is where it’s at! Off Da Chain!!
Yes indeed @firefightergaines you know your stuff!!!
Damn! LA is hot to begin with, and you guys go to fires LOL! I grew up in Vermont where when I was a kid, 20 below zero was normal for a couple months. It has gotten warmer over the years, but damn! I was in the Infantry too. Fort Bragg and Benning (visited Polk as a civvie) in that heat and humidity with a helmet and ruck! Prayed for night time! Thank you for the videos, be safe and take care.
Thank you for watching jack and thank you for your service! It does suck pretty bad fighting a fire in July and August in south Louisiana but like we did in the military some how we manage!! lol keep cooking my friend
@@captaincobyscajuncooking6144 You were military too? Well you take care. I am hitting like 5 countries next year, but when I get to visit LA, maybe we can cook up a BBQ at your firehouse (no photos or publicity) on my pension dime for you and your buddies. LOL, I promise not to cook. It scares the children! You ever come to South America, drop me a line.
@@jackwalker9492 you got it!! Where you at in South America
@@captaincobyscajuncooking6144 Bogota, Colombia for now. An old Army buddy is going to visit next year and we will hit Peru, Chile, Paraguay and Uruguay. You get down here and its cheap! A simple, but good full meal with fresh juice, beef, chicken or pork, simple salad, beans and rice costs about 2.50 USD! Less than a dollar a beer. 10 USD, you eat fancy! What did you do in the military? I was Infantry and loved it.
Good stuff-”Trinity” is historically onions, bell pepper, and celery.
You are correct @Mpcancienne thank for watching and commenting
I Loved Your Guys Interaction. I've Subscribed. Please send more Interactive Content from the Firehouse ❤😊👍🙏

Lmao! Old geezy always fussin at me because I’m stirring his pot! You know I gotta do it jut to rile him up!!
You got the right idea and you dont need the sausage
You gotta have the sausage
I believe that's a Lodge 14" "camp" style dutch oven...14 inches in diameter across the top.........deep model not the shallow bread oven..........2.25 gallon capacity.......approx 250 ounces or 9 liters/quarts. Mine has a heavy rimmed lid that you can place hot charcoals on top of to make it a real "oven".
GREAT oven for cooking for a big crowd.......that's 25, 10 oz bowls or 30+, 8oz bowls or servings
It’s a 18 quart Cajun Classic! I know the pot you’re talking about with the heavy rimmed lid! Unfortunately mine just has a regular lid! But it does the job!! Thanks for watching and commenting my brother!!
The garlic powder and chicken base is the secret
It definitely makes it pop!!
Looked good although it seemed a little heavy on the chicken "boo yawn 🤣"
lol! Thanks for watching brother!

So Capt I think you use celery in just about every Cajun dish there is right?
No not really! @dg1019 I do use it in some dishes when I cook but when I cook with Clarence he like to cook with it!! I actually don’t like celery that much! But I do like to eat!! lol thanks for watching
But the smoke turkey is the dezl add a little chicken base to the turkey and boil it done
