Chicken Cacciatore

- A classic Italian dish that I love making. The “caccia” in cacciatore means “hunt,” so I guess this is chicken hunter’s style. It's been an Italian-American favorite for years and a dish with roots going back to the Renaissance. This dish is good made with a whole chicken, but I prefer it made with drum sticks and thighs only. It's great with polenta or some pasta, but I love it with a chunk of crusty semolina bread. Join me in my kitchen as I make it here. #LidiasRecipes #LidiasItaly #LidiasKitchen #LidiaBastianich #ItalianFood #25YearsofLidia #FromLidiasTableToYours #lidiassoundtrack

Lidia, just love watching your relaxed way of cooking. I am 89 years old and you bring my Mom's Italian way of cooking to memory. Both she and my mother-in-law taught me so much. God bless you.
Omg her mom is so adorable!
Always a good meal 👍🏻 thanks for sharing

Delicioso Lidia. I love seeing Grandma. I miss her and the singing. ❤
A classic hearty and satisfying meal
We all miss her Lydia...but you miss her the most.....she was always so proud of you ❤
❤
One of the first meals I made for my new husband and several of his GI friends. I honestly don’t why I knew how to make it but I watched you and by gum, I did it right…I learned to cut up a chicken when I was 8 years old…( out of necessity). We had a crusty bread and a good wine they brought….i cooked this in England 56 years ago…when finding all the ingredients wasn’t as easy as you might think. I prepared the tomato’s myself..not the same kind as I would in later years…when I canned my own. Thank you for making me feel so good about as you say..using common sense.
So fine! I already ate.. sausage with pasta.. but watching made me hungry aqain! Fantastico indeed!
She makes it look so effortless

Always try and make these dishes so easy to follow with the best results thank you Grazie Lidia 👏👏
I had to laugh when i saw Lidia save the backs for soup. It so reminded me of my grandmother who made something she called "Social Security Soup." It was the meal she made when there was too much month left at the end of the money- hence the name. In those days her grocer got whole chickens with just their heads missing. His butcher would cut up the chickens and if the customer wanted the necks and backs he would put them in with the giblets. If not then they would be trashed. My grandmother and he had a little game. She would come in an say that she found a stray dog she was nursing to health and wanted to make it some chicken broth and the butcher would wrap up some necks and backs and give them to her for nothing. The dog ruse was so people would not think she was begging for food for herself. She woulld then buy carrots, celery, and an onion or two, and a small box of barley at a price in the 1950 that was less than $1.25 for everything. She would then boil the necks and backs and cut up and saute the vegetables. Everything would then go into a pot of boiling water seasoned with chicken boullion or broth and then the barley. Add to that a generous amount of black pepper and salt to taste and you have a hearty and cheap soup. With a loaf of buttered bread and a glass of wine it was heaven. I'm 74 , older than she was when she first made it for me. She never saw her grandkids. but they have all enjoyed that soup and now make it for their own families. And they don't have to beg the butcher to make it. We all can still afford chicken.
😊💙🙂 hi Lydia you made one of my favorites Chicken Cacciatore I didn't know you can use wine in the sauce so I learned 😂something new today thank you🎉

Wow !!!😮 very delicious food.
Love these shows and when your mom appears in them. Your recipes and techniques are super!
I always enjoy your show, Lidia. So did my blessed and beloved mother. Her family was from Sicily. They sailed from Naples to New York before she was born, obviously. She and her siblings were the first to be born, here. We lost her last year, she was 91. But your show helps me remember the fun I always had with her in the kitchen. She especially always loved it when your mother was on the show. God bless you both and thank you.😊
Yes!
All this is True!
It's The Only Cooking Show my Husband of Sicilian descent loves to watch with me.
We repeat after Lidia...
" JUST LIKE THAT"

It's a long time since I've made this dish and now, I will try it again very soon!

I love Ms. Bastianich's videos, so helpful & so delicious. Her son is the image of her.
Beautiful meal. Thank you.🎉
I loved this recipe.
Looks yummy Like all your recipes 😍
My recipe for chicken cacciatore came from my Sicilian mother-in-law. She baked it in the roasting pan with poatoes, celery, and peppers. Then the last 15 minutes you add the peas, mushrooms, and olives. The first part also includes the tomato sauce. And we added rice to serve at the table. There was always extra veggies for some reason, so we added pasta to it for another meal.
Also, I say an Italian table is set with knife, fork, spoon and bread.
Ok thank you my Italian neighbor makes me chicken cacciatore n uses peas, but I don’t see it in a lot of these recipes.
So good!
Thank you very much for your recipes ciao ❤❤🌹😘
What a sweet mother
There’s pure love there 🇮🇹 ❤
Such a simply delicious dish and the rustic bread with cheese really adds to it . Polenta underneath would give it an extra kick, or serve it Cuban style, over rice !

Hello Lidia from KC ! Looks delicious! 🥂
Maybe noodles or rice on the side or underneath it !
Question please, do you marinated chichen and washing?? Or directly used?
Which way is the best,
No marinating the chicken for this. Of course, wash the Chicken and clean it up before cooking. Follow what Lydia does!
Hi Lydia
Just watched your chicken cacciatore segment on utube.
I would love to make this dish for my family, however I have no experience with wines.
Could you recommend a good white wine
Love to hear from you

My mom and i love your recipes lidia.
I am intrigued at the fact I saw no garlic go in this dish. Or did I miss it? Thank you!
Black olives added would be a nice touch
I added it to mine. Great flavor
Would you use Calabrian pepper flakes instead of pepperoncini?
Molto ben'!
What is your recipe for the punch? I am new to your Channel and I just loved this video ...
This type of dish is like chicken Afritada as called in our country only we don’t put mushrooms instead we put potatoes and carrots the bell peppers are there too
We kids had the virgin style or the Shirley Temple, virgin Bloody Mary's and after watching my Godfather make the Virgin Bloody Mary with pepper, celery stalk, a dash, it was never just "plain" 💕💕💕💕💕💕💕
Maybe a fish recipe with a lot of onions is an old recipe for you, maybe a sardines with steamed calamari recipe
My Great Grandma liked to eat the backs. What there was to eat on them I have no idea! But according to Grandma she'd fry them.
Ciao, Sembra Delizioso 🇺🇸✝️🇮🇹
