- Chicken Cacciatore:
1 whole Chicken (cutup)
4 cloves Garlic (halved)
2 Onions (sliced)
4-6 Scallions (Green Onions) - bottom portion
1/2 cup Parsley
1/2 cup Basil
2 qts Peeled Plum Tomatoes
1/2 cup Olive Oil
1 tsp Oregano (approx)
Salt & Pepper to taste
Optional:
1 lb Pasta/Linguine
Grated Pecorino Romano (sprinkle on top)

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

This message is not for Mama Gina, but for the Son-in-Law and those behind the scene that are helping this woman to do what she loves. Psychologically you are helping her stay healthy and this is helping her mind stay sharp. By doing the many dishes, she remembers the many good memories of when she was younger, and that alone makes her feel good. What a blessing she is to you and the memories she's leaving behind are so precious. So please as long as Mama Gina can and wants to cook please let her. This is what's keeping her going. I made this for my family last night. I added bell pepper to mine but everything else was made to spec. My youngest son ate EVERYTHING on his plate and he normally won't touch pepper, large chunks of onion or tomatoe. He just asked me if he could have leftovers for lunch. I also posted pictures yesterday, and my aunt msgd me this morning for the recipe. I linked her the video. Ty, Grandma Gina! ❤

So something funny happened today, I cook this dish today and I have an eight-year-old who does not like to eat anything that my wife and I cook. So he told me daddy this looks good and it smells good. He had his first plate and he liked it so much he came back for seconds then he proceeded to ask me, who taught you how to cook this? I told him grandma Gina. He tells me well I love grandma Gina and I wish she would come and live with us and cook for me every day because your cooking is not that good daddy. And he walked away.
I just laughed. lol 😆

Australia. I grew up with Aussie-born children of Greek, Italian, Maltese and other Immigrants. My luck was I got to dine on top meals. My Aussie Mother would reciprocate with roast lamb and veggies or a BBQ.
I have been lucky and admit I watched and learned much meals. I still cook them as learned. I bless Gina and all women I learned from - even the Maltese Fathers who trained me how to raise rabbits and make delicious pies.

Some people post negative things on Gina's cooking videos. I personally have been a professional chef for 22 years and she is amazing at what she creates...I love watching these videos. Please people if u dont like her videos , leave the website .. as for me. I love them :)
I think those that dont like the show are just unable to interpret her thick accented english ... sure tit takes a lil to get ones ear attuned but once it is ... it is worth it ...

Gina I love your chicken cacciatore, I put green Peppers, black olives, and mushrooms in my cacciatore I also put a cup of red wine and I use crushed tomatoes thats how my nana taught me that Sicilian way ...... so yummy

I try this chicken cacciatore’s recipe it was the best meal I ever made. I am a Italian man myself I pride myself and a good cook as a lot of people I cook for my family when they come over. This meal I loved along with my wife.

Grandma magic in the kitchen. My grandmother was born about the same time as Gina, but sadly, she passed away and I miss her wisdom and her love of cooking and feeding us every day. Treasure these videos. Grandma Gina will live forever through them...

Hello....My mother was born in 1903 in Leoni, Province of Avelino and was considered Napolitana. Her Maiden name was Calabrese too. She grew up on a little family farm and cooked exactly like Gina. I am so grateful for Gina and her recipes because as a child or teen it was hard to save or write these recipes down as it was more like a handful of this and a glassful of that...thank you Gina's daughter and son in law for preserving these recipes on You Tube. They mean so much to me. I'm 75 years old and Gina reminds me of my mother. Hugs pieazano. My Italian spelling leaves much to be desired.

My mom passed at the end of 2019. She was Irish and raised in Brooklyn, NY for most of her life, and she would tell all of her children tales of the wonders of Brooklyn's multicultural culinary background. She was the greatest cook I have ever known, and she would cook us Irish, German, and Spanish foods, things she had access to in her youth. But far and away her favorite (and mine) was Italian food. I could sit here and spin tales of the Italian foods she would describe to us and eventually cook for us. Her homemade pasta sauce was so addictive that you didn't even need pasta. I would consume it greedily by itself. One time in my youth she made us chicken cacciatore, and I thought it was simply incredible, and I have wanted to recreate it ever since, but I don't think I could make it as good as my mom could. Ms. Gina, I have watched a lot of your videos and I can tell you that my mom would have LOVED watching these with me. She and I would have LOVED talking about you and your recipes brought to life in videos. We would discuss good food (especially Italian food) and spend hours thinking of great dishes to cook up and enjoy together. I miss my mom so much and I don't think I can do this dish justice like my mom or you can make it. But I want to try, and so I'm going to give it a shot and hope it turns out as good as you can make it. I think my mom will be proud in Heaven if I follow your recipe and instructions.
