Well I want to let you know that I made these Green's Thanksgiving and it was so delicious my family went to drink the juice from the greens they pulled it over some cornbread when all the greens was gone so I just want to thank you LOL.

Your greens looks great PhillyboyJayCookiNgShow, I can't say they are the best ever or aren't the best ever, we all have different taste buds, all I can say is keep on cooking, and enjoy doing it. I love cooking greens too, using the right meat will flavor the greens, salted & smoked meats are the best to season any greens. It also depends on where you are from, I'm from the Eastern part of North Carolina. Us real southern country folks do not use garlic powder, onion powder, Lawry's seasoned salt, boullon cubes, we do add a little sugar to the pot of greens, sugar helps blend the flavors together. We do not add chicken broth, we use the broth from the meats that's cooking with the greens in the same pot. Fried meat grease, bacon and ham drippings/grease helps with seasoning the greens too. We use crushed red peppers, fresh green or red cayenne peppers cut up real small to put on the greens after they are done cooking, and sometimes we uses green bell peppers on the greens after the greens are done cooking. The way you are using green peppers, red peppers and onions in your greens, they will bring out the flavor for cabbages better, all you will need is a little bacon grease, and no water, stew fry them for about 15 to 20 min and Wow, it's so good. You get better flavor from the onions, green & red peppers when they are not over cooked. It takes 30 min. to 4 hours to cook collard greens. Here's the reason why, if the frost hit them in the fall, it takes only 30 min. to an hour to cook if they are old fashioned cabbage collards, if they are the dark green Georgia collards, they will take longer. It takes longer to cook collards in the spring and summer, depends on what kind of collards you have. All collards do not taste the same, you need to know what kind you're buying. If you cook collards for 1 to 4 hours, they will not be mushy, like I said, it depends on what kind you are using and the time of year you're cooking them. If you cut up a full cup of green onion tops and bottom, cover it with apple cider vinegar and add a dash of sugar, it's good on cabbages, salat, mustard greens and turnip greens, try it. I'm hoping one day we can share our recipes, be blessed. One more thing, the meat that you are using is called smoked pig knuckles/shanks, they taste better in pinto beans, ham hocks is the left over bottom part from the country ham. Living in the city, they call them ham hocks. The best pork seasoning meats for greens are salted/corned pig tails, salted pork belly & fat back, corned back bone, ham hock, bacon, ham bits and corned hog head, that's what you call real seasoning for greens. I don't use smoked turkey product, if I'm going to eat greens, give me pork.

What's sad is that back in the day, smoked ham hocks/or neckbones would've taken that long to cook, but NOW, they're actually falling off the bone in an hour and some change (on the stove in a regular pot) which let's me know that these factories are doing something to the meat causing it to decrease the cooking time. That alone made me stop using those meats. It's the same with the raw dried beans. I cooked some kidney beans the other day, & when I tell you that they nearly turned to MUSH in UNDER AN HOUR....I AIN'T LYING. Beans SHOULD NOT cook that fast unless they're in a pressure cooker. All in all, this recipe & ALL YOUR VIDEOS ARE FABULOUS!

I cannot believe how he doing that. He needs to move to South Carolina. No stems in my collards plus the first step is washing. Then cut the stems out and put several leaves together roll and cut thin. So much more to this and they are great. They are very easy to season.
If you use the stock you probably wont need so much salt or butter to try to flavor the greens. I am not sure what purpose the stems served. But the greens look good. Everyone has there own way of making greens good!

Great recipe that I'm going to try! One question, do you worry about little pieces of bone that comes from the smoked ham hocks being in the collards? If so, how do you handle that? There's nothing worse then biting a piece of little bone and break a tooth! Thanks for sharing your recipe and talent!

The stems carry a huge amount of vitamins, nutrients and fiber, so keeping them is a health bonus

ham shanks flavor the water very well so that you won't have to use so much salt but this is a good recipe an i will try it
