Cucumber kimchi is a popular dish of Korean cuisine. Fresh cucumber aroma in combination with spices makes a taste of this appetizer unique. And one more merit - it is easy to cook a cucumber kimchi.

✅ Ingredients:
• cucumber - 21 oz | 600 g
• salt - 2 tsp
• garlic - 4 cloves
• scallion (whites) - 1 oz | 40 g
• ginger - 1 oz | 30 g
• fish sauce - 1 tbsp
• rice vinegar - 4 tbsp
• red chili flakes - 2 tbsp
• sugar - 4 tsp
✅ You will need:
• grater
• carving board
• bowl
📙 Preparation:
1. Halve the cucumbers lengthwise and then across into small slices. Lay out into a bowl and combine well with the salt. Leave for 30 minutes at room temperature.
2. Meanwhile chop the scallion whites and garlic and grate the ginger.
3. Combine the garlic, scallion, ginger, vinegar, red chili flakes, sugar and fish sauce in a bowl.
4. Drain the cucumbers and add into the prepared sauce. Cover the cucumber kimchi and put into a refrigerator for 12 hours before serving.
