    I bought big amount of cucumbers couple days ago and didn't know what to do before it's soggy. It was always in my mind to try this recipe after I tried your amazing traditional kimchi recipe. I tried it today and I'm speechless to describe how tasty is it! I lowered the quantity of hot pepper flakes but my tongue is still burning yet I can't stop myself eating it. Thanks Maangchi!!!

    I love how the spice is hot and the cucumber is cold. It cools your mouth and then you are ready for another bite.

    This is my go to recipe for cucumber kimchi. My husband won't eat cabbage kimchi but he loves this. Keep those recipes coming!

      ​@@riyamitawaHello, I'm very late for this reply but you can probably store this kimchi for like a month if you like fresh kimchi 😅 As long as you store it properly it won't go bad!

    This just made my night. As a child my best friend was Korean and her grandmother ALWAYS made these and we would devour them. I've never been able to remember the name and my description of them has always baffled people; but, the flavor and sight has always stuck with me. Soo tasty.

    This is beautiful I didnt make the kimchi I bought chonga kimchi and stuffed it inside with red pepper garlic salt and pepper, honestly korean food is beautiful and amazing in every way and kind

    I tend to make something similar but with regular kimchi paste. I stuff them and pour the leftover paste on top. Then slow ferment them in the refrigerator for a day. So delicious!

      @@indaanisa1132 it's the probiotics from fermenting - good bacteria are essential for good but health, and good but health is essential for good overall health. This is why, since ancient times, all cultures have eaten fermented foods, and is also one of the many reasons modern processed foods are unhealthy - almost nothing available in a supermarket is properly fermented (except sauerkraut and traditionally made dill pickles). Fermentation equals life.

    What a lovely Lady! It is such a joy to watch you cooking your national dishes just the way your mum used to cook it. It's also very interesting because fermented dishes could be discovered in many cultures but in most Western ones they had been forgotten and replaced with unhealthy fast food just for the sake of convenience . Also, last 2 - 3 generations of modern women don't make such fermented dishes either because they have not been passed such recipes from their previous generations, or , they just don't have time or desire to spend hours in the kitchen. But, I think , cooking something from a very scratch is rather therapeutical because it does takes mind off daily stress and pressures of our modern lives.

      My family is Korean and I've watched my mom make kimchi at home ever since I was little - even helped her make the paste or collect the excess ingredients for a geotjeori(겉절이). The salting part is a teeny bit easier these days, because many plantations have started to offer pre-salted napa cabbages online. Still, it takes two or three full days to get everything in order! I know how difficult kimjang (the process of makig kimchi) is, and my mom does NOT want me to make my own kimchi when I start living alone. Guess what? I WANT to do it by myself xD

    Now that I have the Kimchi process worked out nicely, time to try something new. THIS IS IT ! :)
    I very much enjoy watching your videos not just for fresh ideas but also because of your joyous nature & the way you teach us how to prepare these delicious recipes of goodness & health. I like your recipes because not only are they heavenly, delicious & HEALTHY, but they are also extremely affordable to make & we all know how expensive healthy food really is. With your recipes I can alter them if I choose to change up the recipe once in a while which I have done with the Kimchi by adding Turnips & other fruits vs using pear.
    I will be changing my diet very soon to help me find other ways to cope with 2 health conditions & these fermented foods are ideal for me. Thank you for sharing your knowledge with us, it really helps make being in the kitchen a joy & not a chore.

It was delicious. :) I had some skin allergies and i have been researching and tried cooking vegetable dishes that would tone it down. Guess what?     Thank you Maangchi, I tried this recipe with slight variations and it came out well! My first attempt 6 months back with some other recipe was a flop.... so I am happy I am able to make cucumber kimchi at home.
    The variations ..... substituted soy sauce for fish sauce as I am a vegetarian, diced the cucumber into large pieces as I did could not get Kirby cucumbers, add one tsp of perilla oil along with sesame seeds as I love the flavor. Will try the steamed perilla leaves next ❤️❤️

    I never cared much about cooking until I found your channel. Thank you so much. Also I don't have white onions so I used red (violet) onions, I think it's ok.

    I live on Sakhalin and it has historically happened that many Koreans live here. and Korean cuisine is very common here, but I see cucumbers doing this for the first time. Usually cucumbers are cut into strips with red pepper and onions, as you also add thinly sliced boiled beef. But my favorite Korean salads are still 1) fern 2) Sik-he from pollock

    I love hw u keep ur kitchen hygienic and also the way u wash ur hands, ur board, use gloves to fill the cucumber so much cleanliness and ur cutting skills and ur very cute. Basically I love u ur too swt

    My friend had a Korean restaurant in Newton Kansas for over 30 years. She used to make these for me. They are my favorite kimchi!!! She also gave me the recipe for her famous Korean hot sauce!!!! Thank you for posting this video and recipe! You look like my friend's sister in law.

    Thank you for sharing! I've tried baking with different recipes but it wasn't successful.
    Then I tried making cinnamon rolls with this recipe last night!the dough was so fluffy and the cinnamon filling was not to sweet and I really like it!🎉
    few things I changed: instead of all-purpose flour I used bread flour, for the filling I mixed soft butter, sugar and cinnamon(I add a pinch of nutmeg and salt) coz I'm lazy😂
