How to cook Edikang Ikong soup (Calabar style). Nigerian food

- Edikang Ikong is a Nigerian vegetable soup made with fluted pumpkin leaves and water leaves. This recipe shows how to cook Edikang Ikong soup.
1 big bunch fluted pumpkin(properly cut)
2 small bunches water leaves(properly cut)
1 onion
1 cup crayfish
Pepper (Yellow and red scotch bonnet)
3 seasoning cubes
1 cup palmoil
Meat
Kpomo
Dried fish
Stock fish
Salt to taste
Place washed meat, kpomo, stock fish and dried fish in a pot. Put in some water, one seasoning cube and some salt. Bring to a boil. The water should be small because Edikang Ikong does not require much water.
Blend pepper, onion and crayfish together. Pour this Mix into the meat pot when it is almost ready.
Add palm oil. Add the remaining seasoning cubes. When the liquid in the pot is almost dry, add water leaves, stir and allow to cook for about 2 to 3 minutes. Add the fluted pumpkin leaves, stir properly and correct seasoning. Let the leaves cook for about five minutes before turning off the heat. If you like your leaves a little more cooked, you can let them cook for a little longer.
Serve with semovita, eba, pounded yam or any swallow of your choice.
Kitchen Tip: Sprinkle a little salt on the cut ugu leaves a let stand for some minutes. Squeeze the leaves and you'll notice some water coming out. This will reduce the amount of liquid you have in your Edikang Ikong.

It's a vegetable stew, 🤣🤣🤣don't mind some Nigerians, they mess up English then they say that is what we call it as if English is their first language
"liquid dish, typically savoury and made by boiling meat, fish, or vegetables etc. in stock or water.".....In Africa the term "soup" is totally different from the western world, though Africans have soups like chicken pepper soup, goat etc which more liquid, stew is totally different though it is a kind of soup

You can customise it to suit your taste. Locust beans will change the taste though from the traditional Edikang Ikong.

Was the pomo already cooked? I thought it would take so long to cook pomo. I usually cook my cow foot in the slow cooker then use it after. Is that what you did. I didn't hear you say it was pre cooked. Anyway it looks so yummy. And all thoes greens water leave and ugu leave do good. Well done sis
It's soft pomo I bought. These ones are roasted and soaked in water to soften before selling. They are different from the fresh ones which take forever to cook. Thank you.

What other leafs can I use instead of ugu leaf cos I don't have it around me.
Ugu(Fluted pumpkin leaf) is the only leaf you can use for Edikang Ikong soup. You can cook other vegetable soups with vegetables you have around. Sorry I couldn't be of more help.

This looks so delicious.. please what is the english name for the other leaf.. i will probably call this a sauce. The colour is incredble, alive and vibrant. licking my lips now..Might try it with rice too.
The other leaf is Talinum fruticosum(water leaf). I take it with rice sometimes. Thank you for watching.
