I keep a 1.5 quart Tupperware freezer container in my freezer at all times and after meals I add any leftover veggies to the container, whether it be a few tablespoons of leftovers or a cup. When the container is full, time to make veggie soup!
✍Hello...I'm 78 and I grew up eating home made vegetable beef soup and I've also made vegetable beef soup made with left over beef roast, carrots,potatoes,onions, and I add green beans,peas, corn and chop up some cabbage it really makes a difference. A can of tomatoes and tomato sauce. I don't add water I add tomato juice and some beef broth. If you want to sweeten it a little a cousin of mine(A W.VA country girl) told me to use a little catsup. But don't forget to add the chopped cabbage. I don't like can vegetable soup but love homemade soup.

This is good made with ground beef also. I use low sodium V-8. The V-8 gives it a cooked all day taste. I make it with frozen mixed vegetables. I do not use chicken broth. I don't think it is necessary. I will sometimes add a handful of quick cooking barley. Cool that huge pot in a sink full of cold water to get it ready for storage. Bring the water up to the level of the soup and stir the soup often and change the water with fresh cold water. This will cool that huge pot quickly and safely. Do not put the hot pot in the fridge. It will heat the interior of your fridge and will cool too slowly to be safe for the soup. If you don't have a critter problem, you can cool the pot in a snowbank lol.

My mother always saved any leftover veggies in a freezer bag. When soup season rolled around she already had " the fixings " ready to go. She was just like Tom... Nothing goes to waste 😊. We also love cabbage in our soup. I LOVE the full soup pot. Just like Mom's.
Just as my mom did. Saved eveything. Almost. Mom's are so smart. Mine didn't can like Tom does, she dated and froze about everything in freezer bags after it cooled. She laid items flat on oven cookie baking sheats then froze in a floor style freezer. Once frozen, she could stack them by date.

I absolutely love vegetable beef soup. I never heard of using chicken broth in it. I use beef broth and the tomato juice. I also use peas and cabbage in mine. I think the cabbage adds a lot to it. Thank you so much for your recipes, I am always watching from Indiana.
My grandma always put cabbage in hers. Of course, as a kid I hated cabbage so I would always pick it out. Now, as an adult, I ❤ cabbage any way it’s cooked! My husband hates cabbage so I don’t put it in my soup and I sure do miss it.

My dad always put mushrooms in it. And yes he used canned mushrooms. When I was a kid you couldn’t just go to Walmart and get fresh ones. 🤣 I can’t remember what all he put in it but I just know it was anything and everything. He would make the most giant pot of it that I have ever seen. And I hated it. But I would pick the mushrooms out. Now I wish he were around to make that giant pot of soup. I’d eat every bit of it, mushrooms or not. 💜
Did something similar today Tom! Two days ago I’d done a ham joint in he slow cooker, with onions, carrots, celery and a bottle of cider! There was well over half of everything left so today I added some potatoes, and red lentils (to thicken) and made ham and lentil soup with veggies! Delicious

This is the ultimate comfort food. One of my favorites. My mom always made vegetable soup when the weather was cold or when anyone was sick with a cold. My dad absolutely loved it. He'd sneak spoonfuls of the broth before it was even ready. Good soup and good memories!

I thought I had a good idea by using V-8 juice for soups-more vegetables, but I see you do too. I personally prefer a meat broth for my base instead of V8 or tomato juice. I love adding okra(not everyone's preference) and barley. I like Italian Seasoning but didn't realize it had all of those seasonings in it. Thanks a bunch for the recipes that use common ingredients. I don't have to go out and buy something that i normally don't use. Keep up the good work. Love the program.
This is straight up comfort food for me! It was one of my most favorite winter meals that my mother made when growing up. I've used V8 also, it adds great flavor. I've never used leftover roast, only ground hamburger. I use my leftover roast for quick meals that are frozen for a later date. I live to make vegetable beef soup! When the bags of “slaw” are on sale, I puck up several bags and put in the freezer. Then when making this soup, I’ll put in the cabbage too!
That time of the year again where soup is more common meal, great recipe I do make something simular to that except for the V8 but one thing I have tried and we really like it is finely chunk up a small head of cabbage and add to your soup, I can't explain it but it really adds a unique flavor.. This is almost identical to mine, which was originally my mother's. I make a 22quart pot.. I put anything I can think of including cauliflower, or broccoli, peas, Lima beans, okra, & I definitely must have CABBAGE. I use stewed tomatoes in place of V8 & barley. I love the 2 of U & love ur videos
This is so close to my Mama's recipe for it! The only difference is cabbage. Mama always put in some cabbage but she always would cut the core from the cabbage and toss it in while cooking. She would remove it and throw it away before we ate the soup. She said you got more flavor from the core than the whole head of cabbage. Thank you Tom and Melissa for this trip down Memory Lane. I would definitely use beef broth / stock instead of chicken, never thought of grating the onion but I will certainly do so in the future. Think that the already cooked veg & beef should go in at the last minute. No reason to cook them again. I'm not a fan of tomatoes in my beef soup but I like the idea of using V8. Use V8 in my gazpacho. I would make cornbread to go with.
My family loves homemade soup and I often use chicken instead of beef. Nothing better with a big piece of cornbread. I can it for my youngest son, his children and grandchild to have on nights they work late.

When I was cooy alot, I started with the biggest pot I had and still had a pot overflowing. Yes I frozen my soup all the time with potatoes and even pasta. V8 is a must for veggie soup. It has all the spices needed in addition to the other ones added.

What I really appreciate fm Tom & Melissa is that all of the recipes I've seen are dishes of food that down to earth ppl like me eat as opposed to dishes with fancy names I wouldn't even think of eating. Plus, the simplicity - with standard measurements - of which they're made. I can imagine the number in Melissa's sewing group has grown in size! 😂 😋 I have not seen one thing amongst the recipes for 'Come Sit At My Table' that I wouldn't eat. That's not to say I wouldn't omit the carrots in the Vegetable Beef Soup, but aren't all of our own recipes tweaked to our personal preferences & dietary restraints?! You just have to Canet longer for the meat to get sterile so it lasts for a long time. I canning jars when you can soups and vegetables and so forth it’s better and it’ll last up to a year as long as you process it the right way it’s real simple are used to do 2 to 300 jars of homemade tomato sauce and give it to the needy in the church, it’s very easy to do. I’ve been doing it for quite a few years and this year was the first year that I didn’t do any canning but that’s OK. You can still make it in a crockpot or a pressure cooker and we have a pressure cooker that we use and we can have soups and stews within 35 minutes real easy and cannons. Easy to you. Will enjoy it because you’ll enjoy the benefits of when the winter comes.❤”
This soup looks yummy!! I live in Kansas and around here we make Steak Soup. It’s made with hamburger and vegetables and it is beyond amazing!! That time of the year again where soup is more common meal, great recipe I do make something simular to that except for the V8 but one thing I have tried and we really like it is finely chunk up a small head of cabbage and add to your soup, I can't explain it but it really adds a unique flavor.. This is almost identical to mine, which was originally my mother's. I make a 22quart pot.. I put anything I can think of including cauliflower, or broccoli, peas, Lima beans, okra, & I definitely must have CABBAGE. I use stewed tomatoes in place of V8 & barley. I love the 2 of U & love ur videos

This is so close to my Mama's recipe for it! The only difference is cabbage. Mama always put in some cabbage but she always would cut the core from the cabbage and toss it in while cooking. She would remove it and throw it away before we ate the soup. She said you got more flavor from the core than the whole head of cabbage. Thank you Tom and Melissa for this trip down Memory Lane. I would definitely use beef broth / stock instead of chicken, never thought of grating the onion but I will certainly do so in the future. Think that the already cooked veg & beef should go in at the last minute. No reason to cook them again. I'm not a fan of tomatoes in my beef soup but I like the idea of using V8. Use V8 in my gazpacho.
I would make cornbread to go with.
My family loves homemade soup and I often use chicken instead of beef. Nothing better with a big piece of cornbread. I can it for my youngest son, his children and grandchild to have on nights they work late.

When I was cooy alot, I started with the biggest pot I had and still had a pot overflowing. Yes I frozen my soup all the time with potatoes and even pasta. V8 is a must for veggie soup. It has all the spices needed in addition to the other ones added.

What I really appreciate fm Tom & Melissa is that all of the recipes I've seen are dishes of food that down to earth ppl like me eat as opposed to dishes with fancy names I wouldn't even think of eating. Plus, the simplicity - with standard measurements - of which they're made. I can imagine the number in Melissa's sewing group has grown in size! 😂 😋
I have not seen one thing amongst the recipes for 'Come Sit At My Table' that I wouldn't eat. That's not to say I wouldn't omit the carrots in the Vegetable Beef Soup, but aren't all of our own recipes tweaked to our personal preferences & dietary restraints?!

You just have to Canet longer for the meat to get sterile so it lasts for a long time. I canning jars when you can soups and vegetables and so forth it’s better and it’ll last up to a year as long as you process it the right way it’s real simple are used to do 2 to 300 jars of homemade tomato sauce and give it to the needy in the church, it’s very easy to do. I’ve been doing it for quite a few years and this year was the first year that I didn’t do any canning but that’s OK. You can still make it in a crockpot or a pressure cooker and we have a pressure cooker that we use and we can have soups and stews within 35 minutes real easy and cannons. Easy to you. Will enjoy it because you’ll enjoy the benefits of when the winter comes.❤”

This soup looks yummy!! I live in Kansas and around here we make Steak Soup. It’s made with hamburger and vegetables and it is beyond amazing!! Basically the same thing as what you have there, except it’s creamy. Let me know if you’re interested in trying it, I’m happy to share the recipe, it’s a great one!!
