    BETH’S ULTIMATE BANANA BREAD
    Makes 1 loaf
    PRINT RECIPE HERE entertainingwi...
    INGREDIENTS:
    4 overly ripe, mashed bananas
    3 eggs
    3/4 cup (180 ml) of canola oil
    ¼ cup (60 ml) of water
    ½ cup (100g) of sugar *I find this is enough sugar if adding the chocolate chips but if you have a sweet tooth I would increase it to 3/4 cup (150g)
    1 tbsp (15 ml) vanilla
    2 ½ cups (300 g) of flour
    1/2 teaspoon (5 ml) salt
    2 teaspoons (10 ml) baking soda
    ½ cup (75 g) of bittersweet chocolate, chopped
    ½ cup (75 g) of Pecans or Walnuts
    METHOD:
    Preheat oven to 350F (176C) degrees. Spray a 9” x 5" (23cm x 13cm) loaf pan with baking spray.
    In a medium bowl mix dry ingredients and set aside. In a large bowl mix wet ingredients until combined.
    Combine the dry into the wet, 1/3 at a time, being careful not to over mix! (Or you will have tough bread!) Fold in the chocolate chips and nuts.
    Pour into a loaf pan. Bake for 55 mins or until a toothpick comes out clean.
    If bread starts to brown too much on the top, cover with foil and continue to bake until cooked through. Slice into thick slices and serve

    I have made this recipe 3 times now. It is by far the best banana bread i have had. Right now i am baking this but i only had 2 ripe bananas, so i cut the whole recipe in half and i got 10 perfect cupcakes
    Edit: they were ready in 20 minutes

    just made this. my gf says it didn't have enough sugar. I feel bad for making 4 loafs of this and they're all bland. add more sugar peeps.

    Aaah! I forgot to add water and the batter is in the over already... It was pretty runny because my bananas were pretty large. Fingers crossed something edible comes out...

    Made two loaves last night and they are almost gone. They are awesomely amazing. Went to store today and bought three bags of bananas for more of this bread. Cant go wrong with this bread. Thanks for the recipe.

    Mine came out perfect. I used over ripe plantains instead of bananas as those are what I had to hand and coconut and olive oil in place of canola. I also about 30ml of agave instead of 100g sugar.

    My little brother had a delicious banana bread recipe that he brought from school of all places, that we made from time to time. Unfortunately, we lost the recipe and haven't made banana bread since, but seeing your recipe has got me excited that banana bread will be in my near future again, haha.     I just finished making my banana bread, it came out better than I thought. However I used a bit more sugar than the recipe stated and used only 1 teaspoon of baking soda. The cooking time for me was a bit over 55min. Thank you for sharing this recipe. :)

    I have this in the oven now! Only difference is that I did 1/2 cup of oil and 1/4 cup of melted butter and I added an extra banana. I thought it called for 5, mine were overly ripe! Can't wait to try this!

    Excellent! I use pecans as well… I also love the fact you use a whole tablespoon of vanilla instead of just a teaspoon. Makes a huge difference and bread- it simply tastes better. Love your recipes Beth!!!!💛💕💛

    Hey Beth!
    In ur video u say 1-1/2 teaspoons of salt and 2 teaspoons of baking soda. But the recipe says differently.
    What’s the correct version?

      Standard salt is about 1 tsp and the baking soda is about 1 to 2. Baking soda helps make it darker. I made this loaf but found the sugar needed to be increased 1/2 cup. I found it bland but well formed. I would make it again.

    this recipe is really good I would just recommend dividing the recipe into 2 pans so it doesn't over cook on the outside before the inside cooks

      Yara Asfour I think it should be a good idea. I will try next time. I followed this recipe and baked twice. Every time came out good, tastey, and moist. But I don't know why the it still looks litter wet inside. Nothing come out on toothpick and the outside of bread is cooked really well too. Why inside still looks too "wet"? Or it just moist? Cannot figure it out.....

      Lu Liang, one more idea - I used muffin pan (having no bread pan), so got banana muffins with no wetness inside.

    Oh my gosh, those are some thick slices of banana bread. Banana breads are amazingly tasty but so decadent. Does your friends ever tell you that they love you for making delicious food but hate you for making them fat? Lol
    When it comes to banana bread, I like to go simple and plain; but if you insist, maybe I should try pecans and chocolate!

      Oh yes I insist! It's really the ultimate combo! LOL! And yes my family will at times beg for mercy and tell me to stop baking all these fattening treats! LOL! But we are headed into the holidays and that's the best part about them ha! (Healthy recipes coming up in January! Promise!)

    Tastes delicious!! Thanks for the recipe :) But I was wondering why the chocolate chips in my banana bread is only at the bottom. How do I get it to be evenly distributed throughout the bread?

      +wonderland22 you can take a tablespoon of the flour mixture and toss your chocolate chunks in it to coat them thoroughly this will help prevent them from sinking to the bottom during baking :)

    have made few banana breads, diff recipes, n it never came out the right way, decided to try this one, couldn;t believe how moist, n delish it was, thx

    You are so wrong about the amount of sugar. My bananas were beyond ripe and very very sweet, but the 1/2 cup of sugar was not enough for the average taste. It is compared to eating corn flakes with no sugar. If you are the no sugar type of cereal eater, then this is great. But, if you like your sweets to taste sweet.... add more sugar or substitute sugar product.

      +Robin Webb Totally agree. We don't have many in our home with a sweet tooth, but the 1/2 cup of sugar even with the ripest bananas didn't do too much. My next batch will have an extra 1/4 cup to see where that brings it! But a full cup I believe would be too much.

      Robin Webb even with the chocolate? I absolutely loved it with less sugar (which surprised me). This is the best banana bread I've ever made.

      That's weird. The bananas I use are super super ripe and I always put a small amount of sugar and they still come out with the perfect amount of sweetness. Guess it just depends.

    Hi Beth! I just made this and it is AMAZINGLY GOOD! I didn't even have the pecans/walnuts or the baking kind of chocolates but I substituted them w/chocolate raisin balls and slivered almonds I had lying around. STILL very good! The RIPE bananas are the best! Thanks so much! I wish I can meet you! :D

    Made this immediately right after i saw this video. Cuz it looks too amazing.
    I made a HEALTHIER version tho.
    Half of the recipe:
    - 113g applesauce
    - 15g sugar + 2 TBSP Stevia.
    Try it if u are looking for a fat free version. Its still super moist and fluffy.

    Hi Beth, the recipe is so yummi! i backed it this morning and half is gone already. My husband is a fan of banana bread but is very particular whether it has the right amount of sweetness or moist. I substitute sugar with honey and it turned out perfect. Thanks a lot!

    I made this and just came out so delicious. I use 2 cups of Wheat Flour and 1/2 of white flour instead. . flavor wise just right.

    Do not add the amount of salt she says in the video! Made it yesterday, had one slice, and still suffering the consequences today! Follow the recipe description or do not add salt at all. I tried following this video on my phone and the "salt" message did not pop up.

      The use of salt is as a raising agent when combined with the bicarbonate of soda. If you want you can use self-raising flour, or just use a very small pinch of salt. Personally, I don't use salt in my own banana bread recipe, but some people like that extra taste.

    Hey Beth, I love this recipe so much! I tried to make it twice now, but the first time I accidentally set the oven temperature too high and burnt the outer layers, this second time I set it slightly lower (thinking I needed to do so as I'm using a glass loaf container), and it puffed up majorly but then deflated when I took it out and was a bit too moist at the bottom (also, I feel like the batter itself was too liquid-y when I put it in). I don't know what to try next? Raising the oven temperature? Letting it cook for longer at an even lower temperature (both times I had to cook it for 80 mins instead of 55)? I'd love to hear your thoughts as either way it is absolutely delicious and I really wanna nail it :D :D

    Hey Beth, I did it but in a cake mould. Does it make any difference? Also I need to know why using baking soda? ¬ baking powder or a mix of both?
    Baking soda has left a bit of weird taste sometimes. As for salt, I put half the amount u said, yet I still think less than that would be ok !
    I got to mention that everyone at home liked it.
    What do u think??

      Sure if using a cake pan, you could use baking powder. I like to use baking soda in loaf pans because it forces it to rise quickly before the top can burn. Especially since loaf pans are so deep :) So glad everyone enjoyed it! :)

    I've made banana bread about 4 times, each time I come here for the recipe.
    I do have the issue were the top browns way to fast leaving the middle uncooked. Working on that lol

      @@swaddygeetha so I baked it tell the top was barely golden brown. Then covered it with aluminum foil. It was in about 65mins.
      Turned out better.

    I made this yesterday and it turned out AMAZING! I'm so glad I had exactly 4 overly ripe bananas. The only thing I wish I had on hand was a loaf tin, so I made them as muffins. They still tasted delicious :D

    I just made this bread this morning. It is perfect! I love that the sweetness in this bread comes from the ripe bananas. The pecans are so buttery. I also added the very dark chocolate hand chopped. I too thickly cut my bread and did add a light smear of soft butter to the top. This was a super easy recipe. Thanks Beth! My new “classic”. :)

    made this today, but instead used 1/4 cup olive oil and 2/4 cup melted butter because i ran out of oil. i also used 100g white sugar and 50g brown sugar. and the loaf came out amazing! it’s moist and soft in the centre but crunchy on the outside. love this recipe thankyou!
