This is the first time I didn't feel like the Level 3 chef didn't go overboard with their ingredients. Like every ingredient was meticulously placed at each interval and had value in the recipe. If quarantine baking has taught me anything, it’s that Gabrielle’s loaf fell because there’s no gluten to trap that co2 and get rise. I’m sure it was delicious, but the crumb immediately gives it away as gluten free. I’m disappointed our food scientist did not mention that, it’s kind of important.
@@MalleusSemperVictor people believe it's more healthy. It's not and it's a pain to work with.. (my partner has celiac) however there's also people who are allergic to wheat.. It's not the same as celiac, but they tend to use a lot of the same flours.
I was diagnosed with celiac a couple months before Covid locked my state down. I’ve baked and cooked tons of things gluten free (cupcakes, double chocolate muffins, banana muffins, blondies, brownies, pizza dough, nuggets, pancakes, and of course, banana bread amongst other things), and all came out perfect! My bread didn’t cave in either! I’ve used Cup 4 Cup, Bob’s Red Mill 1 to 1, King Arthur, and Krusteaz! All of them worked just fine and the King Arthur didn’t even have xantham gum like the others (so I have no idea how it worked- but it did thankfully!). Good gluten free baking is 100 percent possible 😁

Love Sim. He’s a very chilled, down-to-earth Brit who admits he came from a poor & pretty rough background, did a cooking diploma in London as a very young teen, then travelled the world learning his craft. He’s achieved the highest status in his field and taught so many people along the way. Like Frank, Saul and many other Level 3 chefs, he has high standards but no pretensions. Just a top bloke.
He's like me, a Brit who has lived in the States for over a decade. You don't get the American accent but it's hard not to pick up a twang. And a Brit with a twang always sounds Aussie... :)
For my banana bread, I usually use 4 bananas in 3 banana recipes, and add an extra egg. If you coat the top with brown sugar before putting it in the oven you get a nice sweet crumble on the top

Actually in the Philippines we use plantains more in banana breads because usually they ferment fast and the usual banana is more expensive than a plantain. It's actually more sweet. We use it in bananaque and turon and it hits close to home that he used plantains. We use it in banana breads too and u'll see it in bakeries here. It is more dry than the usual banana bread. But the flavor is more distinct and it kinda makes you nostalgic.

Made banana bread just last week. I used 2 cups of mashed bananas and about 1/3 cup mashed up sweet potato (I had a leftover baked one from the night before). I topped it with a mixture of sugar, cinnamon, flour and softened butter to make a crumble. It was Delicious and very moist. I will add sweet potatoes to my mix from now on!

One of the only foods made when things are going bad? There are so many recipes for that! Bread has croutons and French toast, vegetables have stock, meat has stews, fruit has smoothies and jams. There is so much you can do with "off" food.

Seems Jon pulls off a solid basic recipe. Level 2's tends to go "beyond" and it doesnt always pay off. Sometimes the basics are just better. I will admit I used to really dislike Jon but man has he grown on me. I smiled when I saw him.

The Gros Michel Banana still exist just hard to find because most of the plantation were devastated and I have seen them for sale on Miami Fruit website.

Tbh where I live we just call plantain a different type of banana and it makes sense for cooking since it's much cheaper here

@@oraisteunyu that's because you're not supposed to eat plantain raw like regular bananas, you have to cook it. My grandma likes cooking them in the microwave for 2 - 3 minutes and add cinnamon and sugar to it.

Frank couldnt make it in time because he was creating Gros Michel(the bananas that went extinct in 1950, Its flavour is still used so thats why banana flavoured food tastes different from bananas we eat) bananas again.
The Gros Michel Banana still exist just hard to find because most of the plantation were devastated and I have seen them for sale on Miami Fruit website.
