My only issue with this is that with the way the color is on things it looks shaded. So the top of the tree appears "lit" when it should be shaded. So lighting effects may end up looking weird.
I think you could use a gradient that doesn't change the value but does change the saturation to give some texture depth and not affect value changes from lighting.
because its easier than micromanaging tens of materials, i tried both methods and color palette like on video is faster and easier for me, both ways are valid tho

Because they are game assets. Blender material functions don't always transfer. Uv maps always do
