I am Turkish and I approve this recipe but we don't use much cinnamon in our kebabs and we use large amount of cayenne. Actually, we sometimes marinate the chicken kebabs only with vegetable oil, salt and cayenne. This one looks yummy, we usually serve it with bulghur pilaff.
I saw my comment below from 2016 and had a hard time believing that it has been that long! This dish remains our absolute favorite of any of your recipes. It is the one we make the most often, and we are having it again today. I just put the chicken in to marinate. We often have it with lemon beer, which we first tasted when we were in Spain a few years ago. There is nothing like sitting in the sun with a plate of grilled chicken, vegetables, and lavash bread, sipping on the lemon beer. Thanks for this amazing recipe, and for your entire channel. As a turkish I can easily say thats a quite delicious recipe. But I wanted to say we do not use cinnamon in marinate. You also should try finely chopped parsley in marinate and maybe little fresh mint and thyme.

Ihsan Kibar I like practically any dish that is seasoned the Turkish way :) I like all the kebaps and koftes, also pide, cacik, piyaz, paltican salatsi, mucver, love Turkish bread and cheese. And sucuk is simply delicious :) (sorry for not inserting Turkish letters) Turkish flavours, aromas, music and landscape are very closely connected with my childhood - my father worked for over a year in Turkey and my mother and I visited him there a couple of times. :) Although I know only few words in Turkish, I love the sound of Turkish language :)

I made this today and it was absolutely fantastic! Very tender and flavorful! I made a few additions though- added a tabslespoon of hot chili garlic paste and 1/4tsp of cardamom powder. SO GOOD, THANK YOU!

I've made this recipe a couple of times now and it is the most tender and delicious chicken. Do yourself a favor and make it. Also make the tzatziki sauce to go with this. One more thing, cut up s and veral pitas in to chips, baste with olive oil, garlic, lemon juice, salt and pepper, bake in 350 degree oven till crisp. It's amazingly awesome.

But guess what ketchup is a staple in U.S. kitchens and is often a secret ingredient or a go to as a substitute. As a matter of fact I use allspice instead of cinnamon sometimes.Experiment within the family of ingredients and enjoy a great basic recipe.

Actually used this marinade the other day on pork tenderloins. I had some on hand and was searching for a middle eastern inspired marinade. Chef John is never wrong, so I thought, "Why not?" Marinated in the fridge for 3 hours and then seared in a pan and roasted in oven at 400 till 160 degrees inside. I swear to God this was the best pork tenderloin I ever made. I can't wait to try it on chicken next. Thank you!

In Turkey you have special vendors that sell these spices on the spot so they are not factory made or pre packaged. So i do not think you can get the most authentic taste in the US but if you were to find it somewhere i think arifoğlu brand would be your best bet over there. Have nice day.
Another great recipe. You can’t beat marinated grilled chicken thighs and the combination of cucumber, tomatoes and red onions used in the wrap with the tzatziki and hummus was spot on. Will make again when all the kids and grandkids are over for another Sunday dinner.

Wow. we have an amazing Turkish restaurant down the road from my house and this looks exactly like my favourite dish! they serve it with the same vegetables but also add a mix of pickled veggies and red pepper couscous on the side with some amazing ridiculously soft bread.

I am from Turkey and kebab we make is not even close to this BUT I must say it looks delicious. We cook kebab not in a grill but on embers. NEVER USE KETCHUP,just no (but you are forgiven since you are american and my favorite chef). Dried pepper you used is being used in red meat kebabs especially on eastern cities, it is so hot that not much people can eat without sweating. I am not a yogurt marinade fan btw, I think it takes away the chicken flavor. But hey,thanks John! You did a great job anyways :)
Chef John I tried this recipe tonight and it was phenomenal. I know my way around chicken but this blew most of my recipes out of the water man. My wife (generally impossible to please with chicken) was scouring her plate and thats unicorn-rare territory thanks for sharing this winner!
Just tried this awesome recipe, was absolutely bombastic! We don't have a garden so made it in a grill pan, and since most of my family doen't like hot food we skipped the chili flakes, though to make up for it we used tomato paste and not ketchup. Needless to say the kebabs were better than any other we had before :)
For anyone wondering, whilst this does (of course) work best with chicken thighs, I have done this several times with chicken breasts and it works beautifully.

Given the comments from other viewers, I subtracted the cinnamon and for my own benefit also left out the ketchup. Otherwise, followed the recipe exactly and my family loved the Turkish chicken. Also served it with homemade tzatziki and grilled veggies. Amazing!

Years too late I know, but I have made this recipe in an oven (on a tray, gas mark 8 for 30-40 minutes, turning 1/2 way through) and then once cooked give it 1 minute or two each side on a hotplate for that final searing and bit of burning! Maybe you're out of that flat now. :)

***** You can get a table-top grill, or even a cast iron grill pan. I live in an apartment myself, and you can get some great grilled recipes. You won't get the charcoal flavor unfortunately, but you will still get those great grill marks. Go with a cast iron pan, and make sure you follow the proper way to maintain it.

Looks delicious but it's funny how american guys think greek, turkish, persian and arabic cultures are (maybe almost) the same. Cinnamon? Really? You never eat chicken kebab with cinnamon here in Turkey. :) Cinnamon is a very strong spice we usually use in desserts and hot sweet drinks. If I used ketchup in a kebab, mom would never talk to me again. We use salça and we normally make it at home. Cacık (what you call tzatziki) is; yogurt, water, minced cucumber, garlic and dried mint. You don't buy it from the store. It's like "I have ice and water but I need to buy iced water from the store". American people have quite a low resistance to marketing. Cacık is a Turkish food but you can't find it at a store. Nobody will buy it. Anyways, this could be called a kebab by Americans but it's definitely not Turkish. :) btw, if they sell you that taco bread as lavash, they are stealing your money :)

Just a Turkish guy here just to say everything was on point except serving with cucumber, and adding yogurt in the wrap itself. I mean it is just not traditional. And the closest yogurt you can find to the Turkish yogurt is strained Greek style yogurt. As you always say, I really enjoy this channel and your recipes. Thanks a lot

I am from Turkey and kebab we make is not even close to this BUT I must say it looks delicious. We cook kebab not in a grill but on embers. NEVER USE KETCHUP,just no (but you are forgiven since you are american and my favorite chef). Dried pepper you used is being used in red meat kebabs especially on eastern cities, it is so hot that not much people can eat without sweating. I am not a yogurt marinade fan btw, I think it takes away the chicken flavor. But hey,thanks John! You did a great job anyways :)
Chef John I tried this recipe tonight and it was phenomenal. I know my way around chicken but this blew most of my recipes out of the water man. My wife (generally impossible to please with chicken) was scouring her plate and thats unicorn-rare territory thanks for sharing this winner!

Just tried this awesome recipe, was absolutely bombastic! We don't have a garden so made it in a grill pan, and since most of my family doen't like hot food we skipped the chili flakes, though to make up for it we used tomato paste and not ketchup. Needless to say the kebabs were better than any other we had before :)

For anyone wondering, whilst this does (of course) work best with chicken thighs, I have done this several times with chicken breasts and it works beautifully.

Given the comments from other viewers, I subtracted the cinnamon and for my own benefit also left out the ketchup. Otherwise, followed the recipe exactly and my family loved the Turkish chicken. Also served it with homemade tzatziki and grilled veggies. Amazing!

I just moved to a flat that has absolutely nowhere to have a BBQ, and this is the nicest looking BBQ chicken I've ever seen! :'(
Years too late I know, but I have made this recipe in an oven (on a tray, gas mark 8 for 30-40 minutes, turning 1/2 way through) and then once cooked give it 1 minute or two each side on a hotplate for that final searing and bit of burning!

***** You can get a table-top grill, or even a cast iron grill pan. I live in an apartment myself, and you can get some great grilled recipes. You won't get the charcoal flavor unfortunately, but you will still get those great grill marks. Go with a cast iron pan, and make sure you follow the proper way to maintain it.

Looks delicious but it's funny how american guys think greek, turkish, persian and arabic cultures are (maybe almost) the same. Cinnamon? Really? You never eat chicken kebab with cinnamon here in Turkey. :) Cinnamon is a very strong spice we usually use in desserts and hot sweet drinks. If I used ketchup in a kebab, mom would never talk to me again. We use salça and we normally make it at home. Cacık (what you call tzatziki) is; yogurt, water, minced cucumber, garlic and dried mint. You don't buy it from the store. It's like "I have ice and water but I need to buy iced water from the store". American people have quite a low resistance to marketing. Cacık is a Turkish food but you can't find it at a store. Nobody will buy it. Anyways, this could be called a kebab by Americans but it's definitely not Turkish. :) btw, if they sell you that taco bread as lavash, they are stealing your money :)

Just a Turkish guy here just to say everything was on point except serving with cucumber, and adding yogurt in the wrap itself. I mean it is just not traditional. And the closest yogurt you can find to the Turkish yogurt is strained Greek style yogurt. As you always say, I really enjoy this channel and your recipes. Thanks a lot
