    I actually use tahini as a vegan cheese alternative as I find it adds a cheese flavour to my tomatoe sauce. I also add come coconut milk for a creamier consistency and it makes for a far better cheesy tasting sauce then actual cheese. I also use this combo for a creamy tomato soup and paneer or tofu makhani, it’s really amazing. In addition I use tahini for creamy salad dressings and Asian stirfrys and replace it for peanut sauces

      Ingredients for aloo posto:
      Ingredients:
      1.Potatoes cut into medium cubes , 2.kalonji,
      3.poppy seeds+white seasame seeds + watermelon seeds make a paste with 2-3 green chillies (chillies can be increased or decreased according to ones preference).
      Method:
      In a kadai heat oil put kalonji . Put the cubed potatoes and toss along with salt (can also add turmeric). Lower the flame to minimum and cover with a lid . After short intervals toss and turn the potatoes so it does not burn. I don't use water but if needed little water can be sprinkled for cooking the potatoes. Turmeric is optional. Some likes it white some like the yellowish color. If Turmeric is used then put it along with salt. When the potatoes are just softening add the paste and mix with the potatoes and put the lid for 2 minutes. Add sugar ..(as this dish tastes a bit salty and sweet with a little hint of chillies).The consistency of this is on the drier side with just little bit moist. Eat with rice or chapatis. For those.. who doesn't like sweetness in their side dish can put a few grains of sugar or might skip it altogether. But we Bengalis like this dish a bit on the sweeter side.       The same ingredients can be used to make ridge gourd curry. (Jhinge posto) just switch the potatoes with Ridgegourd . Enjoy.

    Great idea. I love tahini but I was never able to make it even if I did try once. I love sesame seeds in flat bread cooked as you would chapati. I didn't know you can roast watermelon seeds as well, the creamy paste you made at the end looks so delicious. Unfortunately, I cannot cook at the moment! 😞🤗💖🌞👍😁

    We make chutney with sesame seeds Red chillies and Salt grind into smooth paste by adding water little by little unto dropping consistent.very good with vada and pakoras as a dip and also with white rice along with papad.

      you should take any 1 or variety of nuts and seeds everyday.. keep rotating as each one has its own benefits.. sesame should be ok taken 1 or 2 times a week.

      1-2 tbsp twice a week is enough. Have other nuts and seeds on other days.

      Most ideal way will be soaking, shade drying and then sun drying before roasting. But it's not very practical on regular basis, since you are roasting it's ok to roast directly as roasting also removed some anti nutrients.

      Black is healthier but the milk will be bitter. Both can be soaked and had in summer

    I'm stuck with 250 g of sesame seeds in a parcel for over 5 month now because I have no idea of what to do to them. It was to sprinkle them over baked goods but than I discovered that I would be wasting their nutrients. I thought about making homemade Tahine, but had no idea on how to make it. The milk sounds nice. Do you have any tips on how to use sesame oil in food, besides oil pulling??

      Make salad dressing, ginger, garlic, chilli flakes, soy sauce, lemon juice and sesame oil. Let the dressing sit for 2 hours before consuming. It's delicious.

    I have a question about roasting seeds and nuts. There is so many conflicting views to heat or not to heat them as it changes the nutrition and oxidizes the oils? I believe Ayurveda does recommend roasting to make lighter for digestion? Can you explain more on this?

      Once in a while it's ok, but not on regular basis , if you want to have raw in large amount then soak it, then shade dry and Sun dry it.

      I get problems/pain when eating them raw, but when i soak, roast and blend with sesame oil its fine.

      I've noticed, sesame seed milk will taste best when we soak just for 1 hour. Longer soaking sometimes make it taste bitter. Now i only soak for 1 hour

      for dates u keep the soaking water.

      Yes. Unhulled seseme seeds are the ones which are high in calcium as most of the calcium is in the skin or hull.

      you can make milk - 10 soaked almonds + 1tsp soaked sesame seeds + water.. black is better, but u can use both. for flavour you can add jaggery/stevia / dates/ pure vanilla extract

      depends how often you eat them.. if you are eating almost every day, then 1-2 spoons, if you are eating less frequently then 3-4 spoons.
