In this video, we’re going to talk about lard and coconut oil-which one has more saturated fat?
Coconut oil has 90% saturated fat, while lard has 40% saturated fat (50% monounsaturated).
The question is, why would you be concerned about saturated fat? For the last 5-6 decades, people have been afraid of saturated fat based on a lie. A scientist in the 50s omitted information from a study, which led to a false conclusion. This then started a campaign to get millions of people to stop consuming fat.
Recently, the new dietary guidelines finally changed their viewpoint on cholesterol and fats. It now says that increased cholesterol does not increase the risk of heart disease.
The problem with seed oils is that when you cook them, you create trans fats. When you reheat them, you also create more trans fats. Trans fats can cause some serious damage.
When you combine trans fats with heat and with carbohydrates or starches, you get another toxic chemical and other things that cause proteins to become very sticky. This can potentially lead to certain health problems.

How an elderly man, he was working with ate 24 eggs a day every day and had perfect cholesterol numbers. This is crazy. Crazy! In my country, in Europe, there was a huge propaganda against lard in the early '90s. Lard is unhealthy, causes heart problems, cardiovascular diseases, high blood pressure etc. But seed oils are perfect, healthy, cheap.. That's what the official guidelines said. Why? Because pigs were home grown, organic animals at that time, free of GMO, free of antibiotics, and really cheap source of fat, but the government had no profit on them. Seed or "vegetable" oils: another story. Significant profit for food companies. Incredible.

I've been off of butter and dairy since 2006. It took many years to get my life back but dairy was causing me all sorts of problems, I had IBS, pancreatitis, chronic sinus pressure and migraines, to name a few. At the worst of it I had bloody stools and I weighed 145 lbs. (I'm 6'-0" tall). I've been using coconut oil since to substitute butter in all my recipes and it works out OK I guess. I do miss butter though 😢. I don't miss all the cramps and diarrhea.

So when you heat saturated fats, they turn onto trans fats? Or just they oil types you spoke of?

Any chance on doing a video specific to Crohn's disease? My late wife had it. Her sister has it pretty bad. My daughter is now showing signs. I saw the testimonial video of a Dr Berg patient years ago who had success in controlling hers after a month... but she doesn't talk about the specific program Dr Berg put her on. I know Dr Berg's made videos on digestive disorders, but Crohn's is so unique, it would be nice to know what program he's put his Crohn's patients on. :)

Dr. Berg, can you do a video on grains, I know Dr. David Perlmutter wrote a book about grains. What I would like to know is, is it okay to eat animals(pigs/chickens) that eat the grains?

Thank you Doc. I normally use coconut oil for cooking, but did not use for deep fry as it might turn to trans fat. Looks like this is not the case now.
