    12 оne bowl muffins by Jamie:
    300 grams grated carrots
    300 grams grated sweet potatoes
    300 grams sliced bananas
    Raisins or any dry fruit
    6 large eggs
    250 grams self-raising flour
    3 tablespoons of cottage cheese
    1 tablespoon of honey
    Pinch of cinnamon
    Sliced almonds
    Mix it all up, save 12 sliced bananas for decoration. Get those slices of banana, sliced almonds, some honey and put on the top of the muffins.
    Bake 35 minutes at 180C/350 degrees. Enjoy it!

    I made these for my 2 year old, it was a hit. Because it’s a pandemic and I minimise shopping trips: I only had 5 eggs and subbed ricotta. It was a hit. These make very full muffins. Love it Jamie. Cheers from Melbourne.

    Made these over the weekend and they came out just like Jamie’s. Love that the sweetness is coming from bananas, raisins and the honey. The texture is pretty dense, unlike your usual muffin. Other than that, I think I’d make this again!

      ellajo1209 B This everything Jamie Oliver's recipes are all about. 👍🏽 4-5 ingredients; everything he is using is for the everyday cook that may not particularly have all the kitchen tools, with his emphasis on nutrition- it is totally budget centered. 👍🏽 Search through his entire YT channel, there is a wealth of info; including the series in schools with kids. 👍🏽

    Sooo made the recipe. Discovered “muffin tin” is much bigger than “cupcake tin” but they turned out amazing! Just had 22 muffins instead of 24

    I didn’t have some Bananas and Almonds however I did not stop to do it. At the top I put some coconut flakes. My Family loved it.

      They're ok. Can't see my kids eating them. But good for my breakfasts. It made 15 large muffins, not 12 & I didn't even have anywhere near enough banana either.

      It didn’t turn out as well as I expected. It tasted really weir: not sweet not salty. My kids don’t like it at all. I ended up eating 19 muffins myself for several days for breakfast, lunch, and dinner 😀 I will not repeat this recipe 😕

    I took this basic recipe and substituted pumpkin for the banana (don't like them) changed from cinnamon to pumpkin spice and topped with toasted pepitas.
    Turned out fantastic

    I made these today and they are very delicious! It's a huge batch! I could make 23 big muffins (which is great! Now I can freeze some) They are not very sweet, so I would take a little bit more honey next time

    This looks SO unctuous and delightful. The bananas, carrots and raisins are a perfect combo. Lovely tip with drizzling the extra bit of honey at the end. I shall try this out when I buy a new oven ^w^

    Tried these muffins not bad they aren't overall sweet but they are ok my daughter likes them. Hope they go fast. It's great with the ingredients though healthy thank you.

    If you don't have self-raising flour at home, do you use baking powder or baking soda and how much is needed??? Looks like a yummy recipe. Need to make it asap.

      To make 1 cup SR flour :
      1 cup All-Purpose Flour
      1 1/2 teaspoons baking powder
      1/4 teaspoon salt

    So I love the idea of this muffin. I’m allergic to eggs and most dairy, not sheep’s milk. How would you make those changes?
