So I got into cooking about 3 years at home, for myself, family, and friends. I cook almost daily now for myself. I decided to try this, as I've never made a meatloaf before and this recipe looked pretty easy. This might be the best dish I've ever cooked. I made slight variations to the recipe, but essentially followed Jamie's instructions. Absolutely incredible flavor, love the combination of fennel and herbs with the meat. And I made the sauce with Blackberry jam, and it was the most delicious sauce ever. Served with hasselbach potatoes instead of mash. Thanks jamie! Love this stuff

Thank you so much. This has made the self imposed isolation, much more tolerable . I Also wanted to say how much I admire how you are with your children and how Buddy is progressing as a cook and a Internet personality. Keep up the great videos.

@@marials9245 Hope you enjoy it as much as I do. The original recipe had rosemary and sage in the initial onion stage too, which I definitely recommend. Even just the gravy alone is genius. All great stuff.
I left a comment mentioning that i really just don’t like fennel; since you’ve tasted this recipe, would something like leeks / garlic be ok for underneath? I’m hoping this recipe is online so I can follow it!
@@LauraBidingCitizen The great thing about the fennell in this is the sweetness and the caramelisation; to that end something like white onions might be a nice replacement. Maybe some tarragon or Thai basil to get some similar flavour notes (although that may defeat the purpose of removing the fennell haha). Whilst I adore thr fennell in this, it's still absolutely worth doing without it! 😀

I’m not the most confident cook in the world but I’m getting there 😏 I just can’t abide fennel so I was pondering on what to replace it with. Since you mentioned sweetness (when I think of fennel all I think of is aniseed 🤢 haha!) im wondering if red onions would work too?! Oooh! I’m excited to give it a go. I’ve just subscribed too! I saw this on the Jaime Oliver Channel and it looked so good. I made it with a few little changes. It was the most amazing meatloaf! My family can't wait until I make it again. The house smelled great from the time I started the veg.

Also, for all you meatloaf lovers, try finding a meatloaf recipe with french onion soup added to meat. Mom mad this a few months ago and WOW, what a treat. The recipe she used also used golden mushroom soup as a topper...

This meatloaf is just SO SO SO SO awesome. Thank you Jamie, I did it a few times and it was amazing. I personnaly replace carrots by peppers and dry tomatoes, and put half the bread crumbs you use.

Sounds wonderful. I made meatloaf for myself last night. Cooked the carrots and onion like you did. ((Only I added a cooked potato mashed and added that into it, along with egg, catsup, brown sugar, half a dried brown gravy mix, and a little soy sauce. Then I crumbled 3-4 slices of cooked bacon, and added that in. And added the meat. Made a glaze of catsup and brown sugar over the top of the loaves. I make small individual loaves. Yours is a little more complicated than what I would do. I'd like to try it someday though.
I always make your Pork/Feta/Oregano meatloaf, cooked with the carrots and tomato based sauce (So good) since I discovered it, but this is looks Lush! Will have to try this one next time. Thanks Jamie x
I dont know if its an american thing... but ive never had a meatloaf that wasnt absolutely horrific. But this... i can work with this. Hell... its given me ideas to do my own.

My 10 year-old son recently discovered fennel and he eats them like they're apples. 😂 Such a wonderful vegetable.
