Cheese and onion pie is pure comfort food. I used to make this at the school I work at but it wouldn't go down well these days kids eat different things now. I'm going to make this and eat it with baked beans.

I do the same ingredients, but thinly slice the spuds ( use spuds you could mash, not new ones!), and onions, grate the cheese, then layer them in a baking dish with the cheese and onion, ie, spud, onion, cheese, spud, onion, cheese,and so on, then pour enough whole milk on to just come to the top, then bake till the milk has absorbed, the cheese is brown on top and melty and saucy inside, and the spuds are tender. Great as a meal with your favourite veggies (sweetcorn is yummy), or make it to accompany sausages, or homemade meatloaf, or just scoff it on its own! To vary it a bit, add a little ham or cooked bacon into the layers (not too much... salt!), and you can, if you like, top the final cheese layer with thinly sliced tomato.😊

Many Many years ago the pie company Bowyers sold a cheese and onion pasty that was 'chunky' inside very tasty and filling especially on night shifts
Sprinkle of parmigiana on the top towards end of cooking time or any cheese you fancy but not to much
I cook my onions in the microwave
I don't think you get that nice caramelised taste with the microwave

Yes you could freeze before cooking and after cooking I normally cut into portions and freeze then just take out what we need x
