fun fact for you euro peeps from across the pond. Beef jerky was an american staple in the exploration of the west, it was intended to be a food you could chew all day almost like chewing tobacco, but meat instead of tobacco. This way you could ration your meals and stretch your food rations by snacking on jerky while traveling. An added plus is that its a good protein source that doesnt need to be preserved. Jerky can for weeks on end and are usually made from lean parts of the animal that are usually the cheapest, so its very affordable to make a lot of it.
When I studied in England, I had my mom send me a monthly ration of Jerky. Sweet and Hot is my fav, damn... now I have to go to the gas station and get jerky.
It was really hard for my cousins from Ireland to understand the concept of "jerky", I tried to explain more than a few times about how it's a travel food, a ritual in a way, something you have to experience just as much as the journey, none got it, then my Dad told us we were driving to see Grandma in Phoenix AZ, that means we had to drive from Fort Worth TX, pick up my uncle in Bayton TX then Drive to AZ, HAHA the concept of "Jerky" became real clear the moment they realized how far we had to go. See, unlike in Ireland where you can cross the country from North to south and east to west in a day, traveling in America is different, even to this day you can go such huge distances where there is nothing, NOTHING but Gas stations far, far apart. In a way, jerky gives you something to chew and distracts you from the reality that you can be alone for large periods of time while traveling in a landscape that changes every few hundred miles.
Justine, it's easy to make jerky at home. I do it all the time for my daughter -- she likes to snack on it after working out. 1. Start by getting about 2 pounds (4kg) very lean beef, usually bottom round. You don't want the beef to have any fat, because that's the stuff that will go rancid. Stick the beef in the freezer for about half an hour first -- that will make the beef easier to slice. 2. While the beef is cooling, make your marinade. You'll find lots of recipes online and even a few TH-cam videos, but the recipes I like start with 3/4 C Worcestershire sauce and 3/4 C soy sauce (about 180 ml each), followed by whatever spices you fancy. I like using a mix of paprika, molasses OR brown sugar, cayenne pepper, onion powder, garlic powder, and either lemon pepper or lemon extract. Use a whisk or a fork to stir it vigorously to make sure everything is mixed together. 3. Slice the beef across the grain very thin -- around 1/8 inch or between 0.3 and 0.5 cm thick -- and put into the bowl of marinade. Make sure all of the beef is covered by marinade. If I'm making a big batch I'll use a large cake pan to make sure everything gets covered by marinade. Cover the bowl or pan with plastic wrap and put it in the refrigerator either overnight or about 24 hours. 4. Next day, start heating your oven to 170F (between 75C and 80C). Take a large cake pan (33 x 23 x 5 cm or 13 x 9 x 2 inch pan) and line the bottom with baking parchment. (Not essential, but it makes cleanup much easier) Place a cookie rack over the pan. (Not sure what you might call it -- it's a rack that you use to place freshly-baked biscuits (cookies) on to let them cool.) 5. Take a strip of beef out of the marinade, let it drip off, and place on the rack. Continue until all the beef has been racked. Discard the marinade. Place the pan with the beef in the oven and let it set there for between 4 and 6 hours. 6. Remove from the oven and eat. Repeat as necessary. Store the jerky in an airtight container or a zip-lock bag; keep it in a cool place and it will last for a few weeks.
I love jerky but it legit is expensive for a reason. If you ever do it yourself jerky you get a firm appreciation of how much meat goes into making small amounts of jerky. Take the bulk of the water out of something and it shrinks A LOT.

2:55 The dehydration process (what makes jerky jerky in the first place) is what makes it so long-lasting on the shelf. No moisture in it, basically impossible for anything to grow on it. So yeah, pretty much just making it is what makes it last so long without it growing anything.

Justine, it's easy to make jerky at home. I do it all the time for my daughter -- she likes to snack on it after working out.

(Not sure what you might call it -- it's a rack that you use to place freshly-baked biscuits (cookies) on to let them cool.)
5. Take a strip of beef out of the marinade, let it drip off, and place on the rack. Continue until all the beef has been racked. Discard the marinade.
Place the pan with the beef in the oven and let it set there for between 4 and 6 hours.
