Pan-Fried Chicken in a Creamy White Wine & Garlic Sauce

  • This is my pan-fried chicken in a creamy white wine and garlic sauce with mushrooms. Ready in 25 minutes it makes a tasty and impressive date night dinner or a lovely alternative to a Sunday roast.
    I love this for a luxury dinner served with sauteed potatoes and greens.

    Ingredients for the creamy chicken:
    4 chicken breasts
    ½ tsp salt
    ½ tsp pepper
    2 tbsp vegetable oil
    8 chestnut mushrooms - sliced
    1 small onion - peeled and chopped finely
    3 cloves garlic - peeled and minced
    ¼ tsp dried thyme - or 2 sprigs fresh thyme
    ½ cup (120ml) white wine
    ½ cup (120ml) chicken stock
    ¾ cup (180 ml) double/heavy cream
    To Serve:
    Saute potatoes
    Steamed green beans
    Fresh thyme
    Method:
    Season both sides of the chicken breasts with the salt and pepper.
    Heat the oil on a large frying pan (skillet) over a medium/high heat.
    Add the chicken breasts to the pan and cook on both sides until golden (about 6-8 minutes). They don’t need to be cooked through at this point - they’ll continue cooking in the sauce.
    Add the onion and mushrooms to the pan and cook for 3 minutes, until lightly softened.
    Stir in the garlic and thyme and cook for the 30 seconds.
    Add the wine and turn up the heat to high. Bring to the boil, then simmer until almost all of the liquid has evaporated (this will take about 5 minutes).
    Stir in the stock and cream and heat through for 2-3 minutes.
    Turn off the heat and place the chicken breasts on 4 plates. Spoon over the sauce and serve with your choice of sides (I love green beans and sauté potatoes with this dish).
    Sprinkle over the fresh thyme and serve.

    I had this sauce on a shore excursion from a cruise with thin pieces of chicken that was pressed down with a meat Tenderizer and long pieces of onion, not diced.

    White wine sauce for fish uses fish stock . It’s takes 15 to 20 mins to make fresh or use a cube. It’s extremely naughty do sauce like this if you have vegetarians for dinner. You put a little butter in the pan add the garlic, shallots and a bay leaf. On a low heat cook it out so it the butter absorbs the flavours. Add the white wine and reduce. You add the fish stock and reduce. Add the double cream reduce. ( mix flour and butter together.) add little bits at a time to thicken the sauce it should coat the back of a spoon. It’s then put through a a very fine strainer. That’s how the pros make it. You can also use very cold butter to thicken any cream Sauce up. Hope this helps peeps please try

      Red wine is best on red meats,

      White wine is best on poultry and seafood,

      Wine can either be dry or sweet,
      .
      Dry wines are best used for general cooking ,
      .
      Sweet wines are best used for things that are already sweet in nature like fruits , sweet wines tend to caramelize because of the sugar content, wich makes it almost impossible to deglaze a pan or cooking surface.

    May I make a suggestion? I bought your cookbook and I use the QR code but the titles of the recipe are different (for example I looked up chicken with creamy mudroom sauce but it brought me to a casserole and not this recipe which is the correct one) but also all your recipes that say chicken breasts, I’m confused whether it means boneless or bone in. By reading the cooking instructions I can figure out by cooking time which type you mean, but in the US recipes ALWAYS specify what type of chicken breasts.

      Chicken breast are boneless unless stated . Breast with bone in is a Chechen supreme or supreme of chicken

      Also you looked up the wrong recipe, chicken in Mushroom sauce is a casserole recipe. This recipe is chicken in white wine and garlic sauce

      Personally, I sometimes substitute white wine with lemon juice diluted in water ( 1:3 ratio). At least it will still have some of the acidity that a white wine has.
