  • Hey guys! Today I’m sharing with you some vegetarian brown bag lunch ideas! If you’re looking for some healthy vegetarian meal ideas then I’ve come up with a few here to get you through the week. I’m always trying different vegetarian lunch and dinner recipes to switch things up in my diet. Hopefully this video inspires you to meal prep some lunches for work for the week.     I loved that you used similar ingredients in each meal for the week. I dislike when videos use a billion different ingredients each meal, it feels wasteful if you don’t use everything you buy.

      yes I thought this too!! especially when there's something cooked in the oven. It takes a while for my electric oven to heat up so cooking and roasting one thing one time (the chickpeas, or if it was a versatile vegetable) that I can use in a couple different meals is so approachable.

    Hey guys! I’ve been veggie for 3 weeks now and I have to say, ITS SO WORTH IT. It makes you feel so clean in your body I love the lifestyle. Also, you’re helping the environment which is even better .Im a vegetarian in a non-vegan/vegetarian household and it’s been difficult some times but you have to set boundaries. Especially since my family are hardcore Mexicans, they always still try to offer me chicken or fish but i’ve learned to say no! And yes, I’m only 14 years old but i’ve chosen what’s best for my body. Hope everyone who thinks of going veggie takes this in consideration!💕

    Hey Madame, I am Sicilian. I can tell you that our Sicilians cuisine is full of vegetarian and even vegan dishes. Very ancient, delicious meals! You should get a Sicilian cookbook and you will find tons of vegetarian dishes.
    We use tons of different vegetables, a lot of Lentils, beans and chickpeas, We make also sweets out of chickpeas!
    One typical dish is fried pumpkin with sweet-sour Onions and Olives, I love it, that is delicious!

    I really want to be vegetarian and feel better about my impact on the environment, but cuz my parents make all of my meals for lunch and dinner, my parents really don’t want to change their eating habits so ig I’m gonna have to try making my own meals and be a responsible teen!

      I turned veggie years ago and it’s definitely worth it! You could persuade your parents with the meat substitutes available such as Quorn? But making your own meals would be a good idea!

      Same! Only just started and my parents are in control of the kitchen, I have began to make my own meals, look at the meatless farm website for ideas! And these vids deffo help to make you meal healthy and veggie!

      I would suggest starting with egg salads first or salads n egg, then switch in to Indian mung bean pancakes, u can grind n refrigerate the dough for 4days. Then slowly go the entire way.

      Idea: Make lunch for the whole family (a new recipe) and see if everyone or most people like it :) if they do then you can ask your mum to make it more often xD

    Try boiling your balsamic vinegar into a reduction ...so it is the consistency of honey ...keep it in your fridge for your avocado toast or salads . You will enjoy it and your toast will not get soggy 👩🏼‍🍳🤗😘

    This is such a good resource! I’m not veggie, but I’ve been trying to limit the amount of meat I eat. Definitely need to make that chopped salad

      For anyone going vegetarian or vegan, don’t be afraid to use Morningstar or Gardein type products. They are transition foods when you don’t know what to eat or you are missing sausage, burgers, etc. You’ll get there! Each healthy veggie meal you have is a win. Keep going :-D

    I’m going to start up my vegetarian diet again, I did it about 3 years ago but I found it difficult being in school, but I’ve known finished school and have 5 months off as a result of corona, these are great ideas for me to use during food prep! Thank you😊

    Thanks, it all looks yummy. I am collecting recipes to do a month of vegetarian in March. One I have already tried is a roasted sweet potato and a coleslaw made with carrot, purple and green cabbages. Serving in a bowl is the way to go and beautiful food makes me feel so happy.

    Really loved all of these ideas!! I really struggle with what to eat for my lunch at work that is also healthy. I work in a mall so all we have to choose from is a bunch of fast food and I don’t really like how fast food makes me feel and I’m not big on the taste. This video was perfect!     I made the quinoa salad. I added salt, pepper, cumin and coriander powder to the qinuoa for flavour. Squeezed some lemon over it all instead of lime. Turned out delicious and could keep it in the fridge for a few days. Thanks for this recipe!

    I've been vegetarian for a little over two years, sometimes I get pretty lazy with meals and I'll just make a pb&j and maybe toss a banana in there. This really helped me to be more creative again ! Thank you

    Can’t even lie. Family was vegetarian. They always had new recipes they wanted to try. Two years later I’m the only one now.
    Can’t just keep eating my odd diet of eggs beans and odd veggies now that summers ending.

    I always get inspired when I watch your healthy eating videos, Erin! My diet has been slacking since my vacation a couple weeks ago, but I'm slowly getting back into it. :)

    I really liked how you used a lot of the same ingredients in diffrent ways to keep things diverse. It's a great way to save time and money of shopping 😊 also I'm looking forward to trying that wrap

      Exactly! We try not to be wasteful with food so we'll use certain things one week and then switch it up the next ❤️ Hope you enjoy if you do try!

    lmao that first quinoa salad lasts you a week! It would be long gone by tuesday in my & bf's house. Matter of fact, it will bc it looks delish & I'm gonna make it.
