    I’ve been away from NC for ten months now, overseas on my first deployment with the army. Watching this is a little taste of home over here. This place is amazing and I can’t wait to get back to it. It will be my first meal back home!

    Now this is the type of BBQ that I remember as a child - old fashioned BBQ, not today’s gentrified BBQ - living in Southern Illinois and visiting in Tennessee. I have spent years coming up with BBQ flavors that I recall, and I have come very close using simple ingredients likely to be found in yesterday’s southern farm homes - nothing fancy. Your ingredients are similar to mine, but even simpler. Your recipes are definitely what I will be trying next. I am so thankful for having found your channel! And thank you for sharing what real BBQ is all about.

    What kind of wood did you use?
    What temp did you smoke it at?
    At what internal temp did you pull the meat off?
    Did you ever wrap it in foil or did you smoke it entirely unwrapped?
    How long did you let it rest? Did you use a dry cooler?

      I'm sure they all know what they are doing, but good grief these videos are more lectures than how to. They leave out way too many key elements.

    Looked really good until you put cole slaw on it. Can't be real NC BBQ without the red "BBQ" slaw!!

    You should not be able to pull it. You are pulling it. So you over cooked it
