I've been making this for decades. My Great GMom (from Rocky Mount, NC) showed my Mother who ended up teaching it to me. They included the pig skin to add to the tecture and flavor. I modified it some when I got my hands on Sriracha sauce blending it with the hot sauce. The spicier, the better, over here. 🙂

Come to find out the owners are from Scotland Neck, NC😂 But there’s a place in Roanoke Rapids, NC calling Ralph’s BBQ and it’s the best BBQ I’ve ever had!

The best barbecue I’ve ever had in my life. I live in Albuquerque and we used to go to North Carolina And we always stopped at one of the little restaurants to get a pulled pork barbecue sandwich. I have the funniest story on his first time tasting Carolina BBQ. Today I had to give him a USA BBQ history lesson. I made the sauce about 3 days ago and I thought I was gonna wait at least a week, but I was tasting it everyday 😬… and I couldn’t wait anymore 😅. It came out so good. I really appreciate it!!

Can you sub brown sugar and apple cider vinegar instead. I have always loved the Carolina pulled pork better than BBQ drenched in red BBQ sauce. And the cold slaw with a little hot sauce to top it off is OMG yummy. With leftovers I make pork carnitas making myself hungry now. Thanks for sharing😊 ❤❤😊

I do like it with crispy skin. I like to use the crispy skin to make crackling cornbread too.

In growing up we use white or cider vinegar with white sugar and crushed pepper to make our barbecue. It’s really good. I’m from Windsor NC.
