I suspect that, in order to know what can taste good and look disgusting, you have to be really really good at plating. Like he knew he could make wonderful palak paneer, AND he knew it looks super gross on a bare plate like that.
"There was a little puke in the inspiration I feel", nah bro he wanted to serve that dish in a babies diaper... His inspiration for that dish was far more cursed than mere puke.

I just had a punjabi saag paneer today that I'm particularly happy I found. Looks fine when you don't slop it on a plate. Lots of flavor.
