- Learn how to make Tomato Ketchup at home an basic recipe with The Bombay Chef Varun Inamdar.
Be it french fries, sandwich or pizza nothing tastes better without tomato ketchup.So The Bombay Chef Varun Inamdar is here to show you how to make tomato ketchup at home in most easy way only on Rajshri Food.
Ingredients
1.5 kg tomatoes
1/2 cup brown sugar
1 1/2 cup vinegar
1/2 tsp chillli powder
Salt to taste
500 ml water
Method
Roughly cut the tomatoes then put it in the pressure cooker with little bit of water and cook it for 3-4 whistles.
Allow the pressure to subside and later open the lid of pressure cooker.
Once done, blend it into very fine puree and run it through the mesh.
Cook the puree on moderate heat, add brown sugar, white vinegar, chilli powder, salt.
Let it continue cooking for 15-20 minutes until it becomes thick.
Put few drops on clean plate, tilt it and if its not runny then the ketchup is ready.
Put the ketchup into a squeeze bottle.
And homemade tomato ketchup is ready!

I made it with 11 kg raw tomato.. its good thanks for recipe.. I got 7 kg of sauce with using 11 kg raw tomato.. 2.5 litre of vinegar. 1 kg of sugar..3-4 tsp salt.. 5-6 tsp red chilli powder.. used sodium benzoate 1 tsp for entire sauce (7 kg of sauce).. dissolved sodium benzoate 1 tsp in hot water and added in warm sauce..

This is a pretty straightforward way of making making ketchup at home, especially for someone with a restaurant, one can take advantage of overproduction and buy the tomatoes cheap and produce as much as they need and just freeze the rest. That's mate, though I would have added some spices and herbs too, like onion , garlic, oregano, black pepper and maybe even thyme.

Can i use lemon juice instead of vinegar??
It may be fine for taste but lemon juice over a few days would not preserve it as good as vinegar. It would probably decrease the shelf life to a week. If you tried and found it any otherwise do let me know.

It’s more tangy if you add the vinegar right at the end of cooking. I boil off a lot of the water and then add the vinegar right at the end. When you add the vinegar when it’s really hot, a lot of the acetic acid evaporates off. Unlike other acids, acetic acid is actually quite volatile (the reason your nose burns when you smell hot buffalo wings that have been freshly tossed). This is just a suggestion if you like your ketchup really tangy (which some people may not).

Could I substitute the brown sugar for honey?
Boil the tomatoes in a pan for like 15 to 20 mins.. and no you can't substitute sugar with honey coz the flavour will change completely.

My pressure cooker doesn't whistle. How many minutes are 3-4 whistles?

6 minutes and 72 seconds. I hope, this clear's it all. Cause my cooker whistle's, through out the night, even when it's not on the stove. Be aware get a good timer. Addictoholic have nice time. Regards...

Kyle Dapilos, The duration of whistles depends on the amount of water being used to turn it to steam. As for your PC, whistling continuously is on the safer side than not whistling at all.The DEAD WEIGHT VALVE (which goes up during a whistle) is faulty/ damaged or of inappropriate weight. DWV has to stay put, till the water turns to steam. Timing of boiling different vegs is preferable , in case you miss hearing a whistle or two. Regards ...
