I just made these today for my wife and I. We both are turned off by the erythritol cooling effect which really detracts from the overall flavor (which is otherwise quite good, actually). So, I really should have known and just substituted allulose from the get go. This made a LOT of cookie sammiches, so most of them are going to be frozen and brought out over the holidays this year.
Try adding a smidgen of lemon juice to the erithritol to counter it's cooling effect. If you can hit it just right (taste your mixture before cooking!) you won't taste either the coolness nor the lemon. :)
yes, the filling does have a marshmallowy taste... because it's basically an 'industrial' marshmallow buttercream. they used to say 'marshmallow cream filling' through the 70s, maybe 80s... not sure why they dropped it. these look great! will be trying with real molasses. & dont forget a bit of cimnnamon *now do nutty buddys, star crunch, swiss rolls & strawberry shortcake rolls and youll be my best friend!* 😃

I made these today with my granddaughter. I used molasses instead of flavoring and omitted the marshmallow flavoring and they are still delicious. Thanks for a great recipe.

You must have a cast iron digestive system. I have issues as a result of too many keto foods involving almond flour, turmeric, cacao, cinnamon, etc... all high oxalate foods. They really wrecked me. I felt fantastic for the first few months, then got symptoms of oxalate dumping like gut sensitivities, skin problems, irritated eyes, joint pain, and other issues. 😢 It has been 4 years of trying to clear my body of this toxin. From what I've researched, some people are more sensitive to oxalates than others. Unfortunately, the person won't know until it's too late if they are one of the unlucky people and then it can take a long time to get well again.
I always get discouraged when I see a recipe calls for Swerve brown sugar substitute. A small bag is almost $13 which is unfeasible if someone wants to bake a lot. I use erythritol monk fruit blend for almost everything. Is there ANY other brown sugar substitute? By the way you deserve way more viewers, this channel is great. 😊
I made these yesterday but I didn't use oatmeal fiber instead I used powdered psyllium husk powder and they came out really good, I also didn't use the cream filling instead I used a different one that didn't require oat fiber but thank you for the initial recipe

Hey, Annie! I wasn't ever a Little Debbie fan. Don't get me wrong - if offered one, I would have "yes, please" probably half the time, depending on the item, but I never bought them for myself. Maybe 2-3 times a year for long car rides, especially if I packed a picnic lunch for the family or for the very occasional lunchbox treat. For myself? I had other forbidden treats. 😂 Having said all of that, oatmeal raisin cookies were my faves for a long time. Then I couldn't eat oats or oatmeal due to GI issues so... When I went keto, nothing changed for me here. I've even avoided oat fiber because of being unsure of the GI thing (I have no problem with it on keto grounds). This may be where I decide to test it! I might just make the cookies plain to see how I fare first then maybe step it up to include filling. 😂 Thanks for this. I also think I might just use a bit of real molasses. Spread over 36 cookies (not sandwiched) the sugar would be almost nil.

An article compared Quaker Oats Strawberry US product to UK product. Interesting, UK had roughly 6 ingredients compared to mega list of US additives. Chemicals are being pumped into Americans-& for many yrs.

You can add oat fiber to any baked good. Just a few tablespoons - it really helps with the "bread like" texture. I have other recipes on my website that use oat fiber too.
Just remember when you’re buying ingredients those ingredients will last for multiple recipes. Try shopping around for yourself. Oat hulls and oat fiber were different ways to find the same thing.
@@SRose-vp6ew Oat fiber is probably ground fine oat hulls but BE CAREFUL if you have digestive issues or diverticulosis. This is a LOT of fiber in a recipe that people who are keto may tend to binge on because they've been 'behaving' themselves so long and want a treat. I find anything made with almonds to be VERY filling and the addition of the fiber may be just too much.

Same here. Unfortunately, Allulose (or Monk Fruit/Allulose blend) cause bloating, nausea and other unpleasant effects in many - myself included.

I flip cookies and biscuits halfway through baking. This prevents burned bottoms and ensures the middles are done. 😊

You could just omit it. I tried to use sugar free marshmallows, melt them down and whip them into the frosting but it made a big mess 😂
