I perfected the melted butter I don't melt it all the way. bits sort of like chocolate where you leave some unmelted and then stir. The residual heat will melt the rest without heating it up too much. didn't have to wait for the bitter to cool down. Thank you for tips and know how and your well researched testing. They were great!

I've been watching his cooking videos gor a while. but I want to keep this easy gor me. I have both a ice-cream sandwich pan, that makes small ice cream sandwich cookies, that can make this. Instead of a ice cream scoop.

I have everything listed, but I bought a container of marshmallow fulff cream. I have a flat ice cream sandwiche pan that I bought from Avon products. my niece has a 8 yr. Old son in the 2nd grade, and I am a retired day care worker teacher, his aunt.I do monthly activities with him every week and this is his favorite snack. my niece buys Little Debbie's for his lunch. and my sisters and I have been enjoying them when our mom bought them home.
As always I love to watch all your videos, I have a question,how to store them? I'd much rather make my husbands snacks then to buy those horrible snacks in the "box" . Will they stay moist but first if packaged in a heat sealed bag up to a week as I would put one a day in a lunch box?
Sam, is it possible to use whole oats (5 min. oatmeal) instead of instant? I never use the instant. I'd hate to buy a box of instant just for one recipe. Would it help to toast (thus partially cooking the oats) the oats to speed up the baking process? These look absolutely yummy!

Hello, I made these and they are yummy. I didn’t make the filling right. The next day the filling turned to sugar granules in your mouth. I did bag them and refrigerate after they were made. Could that have caused it. They were creamy and yummy the day I made them. Soooo good.

I've recently made homemade oatmeal cream pies. I followed the same recipe as you did for the cookies themselves. I just did the cream a little differently. Instead of making marshmallow fluff, I just mixed store-bought marshmallow fluff with powdered sugar and vanilla extract. My siblings liked them, but surprisingly, my parents didn't, probably, because they hardly use molasses in any recipes. I can't even think of any recipes that require molasses, other than the oatmeal cream pies and gingerbread cookies. Can you?

If you don’t have a stand mixer, you can mix the filling with a hand mixer, but it will be quite an arm workout and will likely take 10 or more minutes. I'm not sure how a food processor would do; if you try it, please let me know how it goes for you! 😊
Can you skip the heating of the egg whites for the filling or is that because the sugar won’t dissolve otherwise? (I realize it’s also for safety but…salmonella pssh 🤣🤦🏽♀️)

Have you tried the homemade marshmallow? Just checking because I can’t stand the store bought “fluff” but homemade is a whole different ballgame and you may be surprised! Alternatively, try my buttercream (pretty sweet) or cream cheese frosting or ermine frosting :)

It will work without the cream of tartar. It is just used here as kind of "training wheels". It helps keep the filling from breaking down. :)

I prefer the texture with the instant oats, but you can use old fashioned/whole oats. No need to toast them 😊

O no! Humidity can normally cause the sugar crystals, but in this case the refrigerator probably caused it.

Cream of tartar is a stabilizer here. It could potentially work but your filling may end up being pretty soft

If you just want a cookie I would recommend my oatmeal cookies. These are really soft and meant to be made into a sandwich.

Would the dough turn out ok without corn starch? I can’t have corn at all, but these look absolutely wonderful.
It will still turn out. You may just need a touch more flour. The cornstarch helps keep the cookies really soft. :)
