I would just add a tablespoon of molasses. Up here in the north we use a lot of molasses so it could be added to the yams instead of dark brown sugar and would give it a depth of flavor that it could use.

Hey luv thanks!! The total cooking time was about 25-30 minutes, but it depends on how many sweet potatoes and layers you have. As far as the amount of sugar, I used about 4 Cups of sugar, I usually don’t measure 😩.. but you will know when you have enough because the sweet potatoes will start to look very shiny and slick. But it’s always best to have more sugar than not enough, again thanks for watching! If you make them let me know how they turn out 🤗
@@MrSteady36 hey luv! Hmm you might have used too much sugar and it absorbed most of the water, and it probably candied too quick before the potatoes got done, which could cause the leathery/hard texture.
@@MrSteady36 Ok let me know how it turns out, remember to keep flipping the potatoes from the bottom to the top once it starts to boil, until the sugar gets mixed in and all the potatoes are covered in glaze, they should look syrupy and shiny, then turn the heat down between medium and low. They get done quick, don’t worry it took me a few tries 😩 practice makes perfect, you will get it 🙌🏾

I got mine and slices like yours because whatever's leftover I make little yam Patty t a r t s. I use a muffin tin and then I add a custard and they are delicious!

Why the use of cheap nasty bottled nutmeg and using the fresh as well? I don't use anything but fresh and have been using fresh for more than 10 years. Also those nutmeg balls will keep forever put in some sort of an airtight jar like even though small pickle jar or anything glass with a lid. A tip: mix all your dry ingredients- white sugar, brown sugar, cinnamon, nutmeg, salt, and combine them well. It will make the layering easier.
