Hey Chef Carmen, I had to make a comment. I tried this recipe for the second time yesterday and my family LOVED it hands down. I was definitely the one who could not make this right and gave up after so many tries and eventually started making whipped sweet potatoes instead. My daughter couldn’t take it anymore. She said can you please go back to making them the normal way. So I started searching for recipes and while I watched quite a few videos yours seemed to be the best. yep! i do believe this is it!...been searching for the perfect candied potatoes/yamms....my grannie made em & they were to die for. She learned to cook at a boarding house...they served the best meals around...Butter is a Must!the more the better. i figured out how she made her baked beans &she got mad at me...then i figured out how she made her blue ribbon Bread...and she never forgave me. So...she took to her grave her potato pancakes, salmon patties, & candied yams/sweet potatoes.
I love this womaan.. She had dme cracking up laughing. She said if you don't know how to make candied yam " she gonna have to come through". LOL... " you gonna learn today" hysterical!

This is a very easy to follow video. Just to have the reassurance of this video saved my life today. My yams turned out SOOO GOOOD. Way better than the first time I made em. Will be following.
Hello Chef, I'm new to your channel and the sweet potatoes looks delicious. I've never seen anyone candie the yams before cooking but they look so good and I plan to try your recipe.
I agree wit everything in this video ...I would eat it .!! But try this " blistering the potatoes" Oven about 430°-450° put whole skin on potatoes (either put water or oil all over the pots) onto a pan lined with parchment paper (washed or not don't matter) place said pan wit paper and potatoes on top into hot hot oven and about a half hour in keep an eye on them and when you see the skins balloon and separate take out and cool (it starts and sets the natural sugars in the potato and will release smooth as you add your slurry of sugars and seasonings as a "gravy" (cooked separately add some real apple juice or even add maple syrup /I did this year ) then return to oven at time of needs it ....cook on low/med until bubbly ....you don't know till you know ... LovePeaceHappiness
