He couldn't find any, but chanced upon American troops camping out in the Dales as part of an exchange programme by way of the Special Relationship. Gennaro needed to get his risotto done, the hob was on and Jamie had already prepped everything else! So he took the next best thing to chicken of the woods, a wild mushroom fed US marine; his name was Austin. "Tastes just like chicken!", they said. - just for laughs Jamie and Gennar... ;) you guys are great!
Why not put a summery of the ingredients in the discription? Would make things a lot easier. I like the video's and the skills performed but it lacks a timetable and an ingredientlist that is preferred by people who actually like to cook it for themselves.

I've have taken notes from this recipe and followed it for so many years. Every time I make risotto it's my goto recipe reference.
