During WWII, my family had a large enough "victory garden" that they had a neighboring farmer plow it with a horse. The USDA published a booklet on how to dry vegetables in the sun. Maybe in Arizona, but the sun did not do it in Michigan! Dad made little wooden frames covered with cheese cloth that fit in Mother's oven rack. With very low heat, that dried things easily. Later, when in my teens, I grew a lot of sweet corn. Mother did the same with it. Put in a regular fruit jar, it kept well into the winter. With no freezers back then, we thought dried corn was miles better than tin can corn!
When I lived in Italy I learned how to make risotto from the kind women of the village I lived in. We would pick mushrooms and go back and make the risotto after a few days. I have moved back to the US after my husband’s death. I have to thank you for bringing back memories of a wonderful time in my life. Guess who is making risotto this weekend? Happy Holidays,Darren!

Risotto is one of my all time favorite dishes!!! Recently, I had Bison Risotto. I can't begin to tell you how good that was. It was a Bison tenderloin sliced over a Chanterelle Mushroom Risotto. I have GOT to try to make your risotto, and if it doesn't turn out, oh well, try - eat - try - eat until I get it right! Thank you for this!!!
Every recipe I’ve ever seen says you have to add BOILING HOT stock to the rice a 1/4 cup at a time. Chef Darren just proved them wrong. The risotto looked delicious!
@@alexandresobreiramartins9461 Not cold but it doesn't have to be boiling hot either. The rice keeps the heat and rewarms that one ladle full of stock.

Antonio Carluccio was a great chef, and that's pretty special you got to spend the day with Prince Charles exploring the estate for wild mushrooms. Something you never forget.

This has me thinking of the BRAT diet, which isn't culinary by any means but rather a medical diet that can be easily digested. Bananas, Rice, Applesauce, Toast. I never thought of Risotto as health food, but the combination of rice and chicken stock certainly is a comfort food, much in the same way chicken soup is. I won't wait till I'm needing an easily digestable meal to try this recipe, but I will give it a try if I do. Thanks again Chef!

I was pleasantly surprised to hear you say “wood ear”… I thought it was only particular to Asia! Whilst we have quite the variety of mushrooms here, porcini is not one of them and so expensive to buy when available in supermarket. I enjoy your videos and like your recipes. Thank you
Congratulations Mr. Darren is similar to the Italian recipe, the only difference is the final creaming where we add a spoonful of butter, stirring with the heat off. Let it rest for three minutes and then serve.
I admire Darren for his professionalism and kindness. But he should have sliced some of the mushrooms to fit more kindly in the drying pan. I love mushroom risotto.

I have an all stainless steel dehydrator that I use for jerky. I'm fairly certain that dehydration of meats goes back thousands of years to the indians in what is now Mexico.
I like grinding the dried mushrooms into a powder and sprinkling them into dishes. I use dried porchini mushrooms ground into a powder in my fried chicken flour mixture 😋

Hmmm... never saw that one. All risotto recipes I've ever seen, just ask for the stock to not be cold.
I've never used boiling hot for any risottos I've made and they've always turned out great 🤷♀️

If I remember correctly, dried mushrooms packs more flavor than fresh mushrooms. Great source for giving stock a depth of flavor.

A refreshingly simple recipe, but one suspects that the truffle oil, chives and really good Parmigiana Regiana ARE necessary. Risotto is wonderful! 🌟👍
