Nonna, that's the pasta I definitely like the most! I ate tons of bucatini all'Amatriciana when I was living in Rome, where it is one of the most popular traditional dishes. Nonna, do you know why it's called "Amatriciana"? Because it's a dish from Amatrice, a small town not that far from Rome, where a couple of years ago a very bad earthquake occured. Oh cara - that is very, very special. My brother-in-law, rest in peace, made it for me about 50 years ago. It is handmade and absolutely wonderful. I love it.
