Where did you get your guanciale in BK? We have found a lot of US guanciale is kind of funky, but in Italy it's always great. Would love to know a good source locally! P.S. Amatriciana is also my fav Roman pasta, so glad you made this video!
Reaching here....maybe an amount of butter or coconut oil similar to the amount of rendered fat from the guanciale plus maybe reconstituted dried mushrooms to get the chewy bits. Possibly a bit of miso, fish sauce, or your anchovy thought for the "meatiness". Good luck.
