As a real Pizzaiolo, I absolutely love seeing these Instagram pizza makers struggle in the heat of a real pizzeria. Her hair being down is making me cringe tho, id never let anyone on my line with their hair going everywhere and getting in everything like that. The employees laughing in the back made this entire episode. 🤣
This place reminds me of a place I cooked in/ General managed in Cleveland Called the Green Rooster. It’s a fast paced gourmet breakfast/sandwich/salad shop. We also did other types of food on our daily specials and we would experiment allot which I loved to do. We literally have an open broiler 9 feet high the customers can see with 40 chickens going at once everyday. So that’s probably the focal point of the place, very cool. We were only open breakfast to lunch. Lunch rush from 11-1 we would get 300-400 people. Also we were all family and many day one people. It is owned by amazing Food Truck Finalist Chef. My favorite person I’ve ever worked for.
Oh hey I tried going there a couple times, both times we got sent packing because they ran out of food. The first time we went to Edisons pizza kitchen, the second time we went to another pizza place that I can't remember the name of. I imagine you probably know it though. It's the one that starts with a G, and has been on the food network. Both pizzas were fantastic, absolutely the saving grace of being in Ohio both times.
Think about even a place like McD. You've GOT to get the product out EXACTLY as it's supposed to be. And the volume is HIGH. That takes real skill. For anyone who says "flipping burgers" is an "easy" job, I challenge them to work a rush period at one of these places. That's why when I was a McManager, I was always sent to show folks how it was done.
Anyone who downplays the labor of a service industry worker is delusional and living in a fantasy world. They're the same people who would cry and walk out the moment a real rush hits. The stress would be too much for these entitled babies.

Tony Boloney's is my kinda place to work in. High volume pizza shop and the creativity with the toppings? It's got the speed of big franchise but the quality of what you expect big franchises to deliver to you and miss out on every time.
Those pizzas look amazing. Tony is quite the character, and that joint must be intense, but he must be a great boss to have everybody stay in that environment.

Those are loaded 18 inch pizzas. That is enough food for 16 people, minimum. $12.50 a person is certainly high, but it isn't outrageous with inflation these days.
I wouldn’t be able to work at a super fast pace place at my age of 42 and feel 82 I’ve slowed down and virtually handicapped. I’m glad the workers seem happy to work fast.

While the pizzas look interesting I do hate the way they stretch out the dough. Even the experienced guy had a bit of a rough crust but I guess that's how people like that one?
