Sai Bhaji - Spinach And Mixed Vegetables Recipe - Easy Main Course Recipe By Ruchi Bharani

  • Sai Bhaji is a traditional Sindhi recipe. This dish is a powerhouse of nutrients as it is a combination of green leafy vegetables and dal. It is best served hot with rotis or pulav. Check out Ruchi Bharani's take on this popular Sindhi dish.
    Ingredients:
    Indian sorrel, chopped
    Spinach Leaves, chopped
    1 tsp cumin seeds
    2 tsp Asefoetida
    2 medium size onions, chopped
    1 1/2 tsp garlic, chopped
    1 1/2 tsp ginger, chopped
    Bottel gourd, chopped
    Aubergine, chopped
    Potatoes, chopped
    Tomatoes, chopped
    1 bowl of soaked Gram Dal
    1 tsp finely chopped green chilli
    Salt to taste
    1/4 tsp turmeric powder
    1 tsp red chilli powder
    1 tsp coriander-cumin seed powder
    Oil for cooking
    Method:
    - Heat oil in a pressure cooker.
    - Once the oil is hot, add the cumin seeds, asafoetida, onions, ginger and garlic and saute the ingredients for a couple of minutes.
    - Cook the onion for about 2 minutes but make sure that they do not turn brown.
    - Add the bottle gourd (soaked in water), aubergines and potatoes and cook them for a couple of minutes.
    - Add the tomatoes and mix well.
    - Add the gram dal (chana dal), green chillies, khatta bhaji and the spinach leaves and stir well.
    - Add salt, turmeric powder, red chilli powder and coriander and cumin seed powder and mix well.
    - Add water and cover the pressure cooker with a lid. Let it cook until 1 whistle on high flame and then for 10 minutes on low flame.
    - Once done, turn off the flame and let the pressure cooker cool down for at least 15 - 20 minutes.
    - Once you open the lid, slightly mash the bhaji with a masher.
    - Sai bhaji is ready to be served.

    Sai Bhaji means Mixed Bhaji. It contains Chavali , Methi , Palak and Sua. .Though I am Gujarati , we migrated from Karachi . Sindh ,Either Mung dal or Chana Dal is used Of course Brinjol and other veg like Tomato are common.

      Sai bhaji means green vegetables..sai means green and bhaji is self explanatory..we use some dill leaves and a little methi as well

    I make palak/methi with whole masoor or white peas (vatana), pre-soaked and boiled with salt and turmeric powder.

      any type of squash should work for the bottle gourd though I would stick with other white squashes like zucchini; I probably would not worry about a replacement for the brinjal if you do not use it--just add a bit more of one or more of the other vegetables.

      Don't worry too much about the quantity. Based on what I saw, you would be good with 1 bunch spinach, half a bunch of khatta patta, 2 small potatoes, 2 medium eggplants, half a bottle gourd and around half a cup of chana. Happy cooking! Most dishes of this nature come from villages wherein every produce is thrown into a pot with spices without too much worrying about the quantity of the veggies.

    Please clarify. At Ajmer, we had a sindhi family friend. They used to put potatoes with skin, and rather big pieces. You have put small pieces skinned potatoes. Moreover, the quantity of spinach was nearly double of what you have used. Reply please. Thanks.

    One thing i have noticed sindhi people are basically sea side people beacuse maximum sindhi refugee came from karachi and karachi is same like mumbai sea side city and maximum sindhi people got settled also in sea side area for example mumbai then gujarat basically near arabian sea despite of that their not much into seafood mainly their food is more lentil base

    This is not SAI Bhaji ... sorry ! Sai bhaji has chana daal which needs 6-6 whistles to cook first of all then simmered for 5 minutes . It is made of only Palak and chana Dal with another small amount of green vegetable which is SOUR and it is called. “LUNAK “ .. the only variation to this is that some add one potato cut into pieces . All the other recipes are MODIFIED and rather MIXED VEGETABLE SABJI THAN “ SAI BHAJEEE . Addition of all the vegetables with not face it the TYPICAL TASTE THAT IT GETS ON THE COMBINATION OF CHANA DAAL AND PAALAK . These the the two chief ingredients . It frustrates me as a SINDHI to see the wrong RECIPES AROUND . The one you have made is not the ORIGINAL RECIPE ... but you can say A TOTALLY MODIFIED RECIPE . NOT LET ME TELL YOU ALL ... that another similar recipe that has a typical taste is “ DAAL LAUKI “ ... so my question is why should you mix up the vegetables to destroy each one’s typical taste . Because by doing so you are taking away a particular taste of that vegetable . A DAAL LAUKI COMBINATION IS JUST SUPERB .... and so is the CHANA DAAL AND PAALAK . So kindly do not mix all together such that you do not enjoy the taste of any one vegetable . PLEASE AS A SINDHI I WOULD NOT LIKE THAT OUR DELICACY BE SPREAD AROUND IN THIS WRONG FORM WHICH IS LOSING IT’S ORIGINALITY . ALL SINDHIS PLEASE COME OUT WITH ORIGINAL RECIPE ONLY

      U can add dilli leaves n methi u don't need tomato as it already has ambar chuka-sore vegetable which is green Sorrel curry. U don't even know the name. Pls correct it
