    Ingredients
    For Sai Bhaji
    Spinach - 100-150g, chopped
    Drill leaves - 50-75g, chopped
    Fenugreek leaves (methi) - 30-40g, chopped
    Red amaranth leaves (maath) - 30-40g, chopped
    Ginger - 2 tbsp, chopped
    Garlic - 1 tbsp, chopped
    Green chillies - 4-5, chopped
    Carrot - 1 medium, chopped
    Brinjal (eggplant) - 1 medium, chopped
    Potatoes - 2 small, sliced
    Bottle gourd - 1 medium, peeled and chopped
    Oil - 1 tbsp
    Cumin seeds (jeera) - a pinch
    Onions - 2 medium, chopped
    Chana dal - 100g, soaked
    Tomatoes - 1-2, chopped
    Salt - to taste
    Turmeric powder (haldi) - 1 tsp
    Coriander powder (dhania) - 1 tbsp
    Red chilli powder - 1 tsp
    Water - 1 cup
    For Koki:
    Flour - 250g
    Millet flour - 100g
    Onions - 1 medium, chopped
    Fresh coriander - 2 tbsp, chopped
    Green chillies - 2, finely chopped
    Anardana (dried pomegranate seeds) - 1 tsp
    Salt - to taste
    Ghee - 100g, gradually added
    Process:
    Sai Bhaji:
    • Prepare the Pressure Cooker: Heat oil in a pressure cooker and add a pinch of cumin seeds. Add chopped ginger, garlic, and green chillies. Sauté for a minute. Add the chopped onions and mix well.
    • Add Vegetables: Stir in all the chopped vegetables (except leafy greens). Add soaked chana dal, diced tomatoes, and salt.
    • Season: Add turmeric, coriander powder, and red chilli powder. Mix well.
    • Pressure Cook: Pour 1 cup of water and add the leafy vegetables. Close the pressure cooker and cook for 3 whistles. Then, simmer for 10-15 minutes.
    • Mash and Mix: Open the cooker, and smash the veggies slightly using a masher.
    Use a wooden whisk to mix everything.
    Koki recipe:
    • Make the Dough: In a mixing bowl, combine flour, millet flour, chopped onions, fresh coriander, green chillies, anardana, and salt. Gradually add ghee while mixing to form a dough.
    • Prepare Koki: Heat a tawa (griddle). Divide the dough into 4-5 balls. Dust the surface with flour and roll each ball into a flat disc using a rolling pin.
    • Cook the Koki: Place the rolled koki on the hot tawa. Cook until it starts to brown, then drizzle a little ghee and flip to cook the other side. Repeat for the remaining dough.
    • Serve: For the Sai Bhaji, heat a little ghee with some garlic for the tadka and pour it over the bhaji before serving. Serve the Sai Bhaji alongside Koki and some yoghurt sprinkled with cumin powder
