- 👍I am so proud of myself! Bread is such an important part of my Diabetic diet! This bread was an experiment, I only filmed it so that I would remember how I did it just in case it turned out ok! My first reaction was "wow, it tastes like real bread!" I absolutely love it and it is so easy to bake...it's my new favourite and guess what I don't need insulin when I eat it and...Nospikyspikys... but please (as I always say) remember that everyone's Diabetic and health situation is different & what I do/eat may not suit you so adjust accordingly and enjoy!

Ingredients
1 Tablespoon of Dried Yeast
1 Cup of luke warm water
A Sprinkle of salt
Half a cup of Egg Whites
4 tablespoons of Apple Cider Vinegar
1 teaspoon of Baking Powder
Half a teaspoon of Bicarbonate of Soda
1/3 cup of Psylium Husk Powder
Half a cup of Coconut Flour
Total net carb 16.8g for whole loaf of bread
Based on bread having 10 slices total net carb per slice would be 1.68g per slice (approximate)
Measurements and ingredients may vary, please weigh and calculate your own carbs.

👍Quick note- Half a cup of egg whites is equal to approx 8 tablespoons which is around 4 egg whites depending on size of egg! Hope that helps! Enjoy baking....

Thank you for this amazing recipe. YUMMMMMMY, I have made it 3 times and it is truly delicious. Only question I have is how do you get to rise and be so fluffy. Mine always fall flat. No big deal. Just love the shape and fluffiness of your loaf. Thank you so much for sharing this great recipe. I'm glad that you enjoy this bread, I find this bread so helpful when I am going to be out all day due to not needing to take fast acting insulin when I eat this bread which means that I can relax without worrying about hypos! I also find my muffins useful for that too 🙂 On the subject of getting a better rise, are you finding it droops or would you just like it more fluffy? If it droops I would drop down my water slightly, if you would just like more rise then maybe a little more egg white or baking powder or baking soda may help. Unfortunately ingredients and ovens can vary in results, however I'm sure that with a little tweak you can get it perfect! Please let me know how you go! Wishing you a lovely day 👍

Yes. I've found that old baking powder just doesn't work as well.

Many thanks for sharing this. It is one I will try. I just made another TH-cam video Tube one that was only made with ground flaxseed, psyllium husk, water, salt and baking powder. It turned out a little more dense than I expected. So I will be curious to try your recipe and see how it compares. I just have to pick up some egg whites as I have all other ingredients. I’ve made it & it’s cooking. I was a bit confused about the 4 tablespoons of ACV, your spoon looks a lot smaller than a tablespoon, more like a desert spoon. I used 3 tablespoons with a measure and it still seemed a lot. The dough wasn’t as firm as yours so I added a dash more coconut flour.
I also added 1 teaspoon of inulin to get the yeast working. A printed recipe would also be good, starting with the oven temps. I’ll let you know how it comes out in a few hours! 😊

How did to turn out? Would you make it again?
Mine sunk in the middle after I took it out. What did I do wrong? My oven only goes down to 170.
👍 Some say that after you finish baking it turn the oven off and leave the bread in the oven as the quick change in temperature when you take it out can causes it to sink! So that may be worth considering. Some even tip the bread upside down when removed but I haven't yet tried that 🙃 Also different Flours can vary in thirstiness so you could try slightly reducing the water which is mixed with the yeast. Does it have to be a oven with a fan? Do you mean convection oven? I assume you can use a regular oven set at 350 degrees correct?
👍 Yes it is a convection oven, Yes you can use a regular oven, just bear in mind cooking time may vary slightly (you may need to give the bread a little more time) baking temp is 75c (167f) for the first half hr, then turn it up to 150c (300f) for around 1 hr 15 mins but keep an eye on it due to the oven difference. But why add baking soda and baking powder directly to the vinegar? Why not add it last? That way the whole thing loses its meaning, by the time the dry ingredients are in the dough the chemical reaction that would loosen the dough has already taken place...
👍 Hi, You can certainly try adding the Apple Cider Vinegar (ACV) later for even more rise potentially , however it works perfectly well for me doing it like I do - I like to bake in the easiest way to fit in with my busy life so I like to keep it in one mixing bowl so less washing up 😂 I could separate dry/wet ingredients and add the ACV last but i'm happier this way and it works this way anyway. Also I add quite a lot of ACV because it creates a slightly Sourdough taste & I like the health benefits it's not just for the rise! Hope that helps! Happy New Year! 👍

Um, what does the yeast eat, it needs something to make it frothy for rise?
👍 Hello, It rises fine without feeding the yeast as it has plenty ingredients in it to make it rise, but you can try adding a little honey - you may end up with the most beautiful fluffiest bread ever! Let me know how you go! Happy baking 👍

👍 Hi Sean, Thanks for your message. I wasn't sure of the difference so I did a quick Google for you -
"Can I use psyllium husk instead of psyllium husk powder?
While these are technically the same ingredient, the difference in their fineness means you'll need to use less of the psyllium husk powder if you're using it in place of the whole husk. To replace whole psyllium husk with psyllium husk powder, use 80% of the amount called for."
So yes you should be fine bearing in mind the above details.

What is the food source for the yeast?.
Nospikyspiky just used Dried Yeast so no food source needed, you can feed it a little honey if you wish but no need to. Have fun baking! 👍👍👍

Why did mine fall twice. Also did not get completely done. why?
👍 Hi,What a shame, I can't say exactly what went wrong however I would advise longer in the oven by maybe 20 mins as ovens do vary quite a lot in my experience and when you finish baking leave it to stand in the oven for another 10 mins or so with the oven switched off. Sometimes the change in temp can make bread fall. You could also drop down your water to 3/4 of a cup, maybe your ingredients are less thirsty than mine so slightly less water may help. Also check your baking powder and baking soda and yeast are not out of date. Really hope this helps. Best of luck! 👍
My bread wont rise, even bought new yeast..is something wrong with my oven?
👍 Oh dear, there are so many things that can cause this.
It Could be:
-The quality of Yeast
- The quality of the other ingredients
- More mixing required
- Oven related issues
-etc etc...
For more rise you can always add slightly more egg white, Bicarbonate of Soda or Baking Powder and see how it goes.
Some Coconut flours are more thirsty than others -
so If it sinks then you can reduce the wet ingredients slightly.

👍 Hi & and thanks for your message. 🙂 I believe that bread machines are used in order to give the gluten time to develop so it is unnecessary to use one for gluten free bread but by all means try it although Nospikyspiky has never used a Bread Machine since Nospikyspiky is stuck in 1980 however experimenting is fun - let me know the results!
