How to make the best Chinese spring rolls at home (粤式春卷)

  • I'm excited to share my recipe for Chinese spring rolls with you.
    These tasty treats are the perfect combination of crispy and savory, with a delicate wrapper enclosing a filling of your choice. Whether you prefer the classic pork with shrimp or a vegetarian option, they are perfect as an appetizer, a small bite for parties, and of course, for special occasions such as the forthcoming Chinese New Year.
    As Cantonese, this is what we have enjoyed for decades. So, let's get rolling and bring some oriental flavor into your kitchens during this festive season!
    The name spring roll 春卷 symbolized the arrival of spring. Fried spring rolls also look like gold bars deemed auspicious by the Chinese during the new year.

    Recipe:

    Ingredients A
    70 g glass noodles (冬粉)
    100 g minced meat
    50 g of shrimp
    100 g of yam bean (沙葛 / jicama)
    50 g of carrot
    2 stalks of spring onions
    50g cabbage
    4 dried shiitake mushrooms
    16 pieces spring roll wrappers
    Vegetable oil for deep-frying
    Ingredients B (seasonings)
    1/2 teaspoon of salt
    2 tbsp light soy sauce
    2 tbsp oyster sauce
    1/4 tsp ground white pepper
    Method
    How to cook the spring roll filling
    - Soak the dried shiitake mushrooms in hot water until soft, then cut them into dice.
    - Cut the vegetables (carrot, cabbage, yam bean) into strips.
    - Cut the spring onion into short sections.
    - Soak the glass noodles in warm water until soft. Drain and cut them into two-inch lengths with scissors.
    - Heat some oil in a wok. Stir-fry the meat and shrimp until fully cooked. Remove and set aside.
    - Next, stir-fry the mushroom and other vegetables (except the spring onion) with the remaining oil until soft.
    - Return the meat and shrimp to the wok.
    - Add seasoning B.
    - Stir-fry until the ingredients are thoroughly mixed,
    - Finally, add the glass noodles and spring onions.
    - Remove from the wok.
    Wrap the spring rolls
    - Wrap the spring roll as indicated in the recipe article, or follow the step in the TH-cam video.
    Deep-frying
    - Heat the vegetable oil to about 180°C/355°F.
    - Drop the spring rolls carefully into the oil near the surface one by one to prevent the oil from splashing.
    - After the first minute, push the spring rolls around with a pair of chopsticks and flip them over from time to time to ensure even cooking.
    - Deep-fried the spring rolls until golden brown.
    - Remove and place them on paper towels to remove the excess oil after deep frying.

    This is perfect for my limited small kitchen. I have made your wonton recipe many, many times now. Freezing them lets me make 30-40 so I always have some. I eat a lot of soup and the wontons are the perfect gift for a bowl of soup. You have been a great teacher for me and I thank you very much for all of your lessons!!

    I love this recipe and will try it but going to try it in the air fryer. If I don't think it is good enough in that I will try shallow fry in a pan, But either way it looks delicious. I also made your pepper steak and it is sooooooo good I will have that again and again! Thank you so much!!!!
