    That is brilliant! I'm 77 - l make mostly Asian food - but my stirfries often turn into veg casseroles before the veg are cooked. I never knew about blanching! But it makes perfect sense when you think of the restaurant stirfries. So thank you again!

      I'm 75 and I am a lover of Chinese food, and determined to learn how to cook it. I never knew about blanching either ! But it all makes sense now. I can't wait to try it out. They never give you amounts !! like a proper recipe. If you want to make a batch of the sauce for later recipes, you still need to have some idea of the proportions of the ingredients that go into it. I always seem to over do the oyster sauce or the soy sauce, and consequently end up destroying the dish (last time it was as salty as anything) and i followed that particular recipe to the letter with my measurements ? so now, I'm still none the wiser.He explained it very well, but proportions would have been helpful.

      If you don't know how to cook vegetables where they aren't mush...then you shouldn't be in a kitchen. You don't know what blanching is?

    When I was a kid back in the early 90's, I dislike eating vegetables. Things changed when my neighbor (who is a Cantonese) cooks like you Sir. Now I must have vegetables everyday. Exactly how I observed them cook, I cook the same now. Just that your way of conveying the information is so detail. I really appreciate your videos. Thank you 😊

      The taste of Cantonese cuisine is light and healthy, and it pays more attention to the original taste of the ingredients, but they use many processing methods to bring out the umami flavor of the food. In my home city of Guangzhou, my parents always cook vegetables for every meal since I was a child, so we have a lot of knowledge about making delicious food with simple cooking methods

      Thanks. An alternative way is to steam the vegetable instead of blanching before stir-frying. This way will preserve all the nutrition.

    I didn't have all the same veg in my fridge, so I used what I had - carrots, red pepper, spring onions and mushrooms. I also added a little mix of dark and light soy sauce to the stir fry sauce during cooking. The best tasting stir fry veg I've ever managed. Thank you very much.

    Thank you so much for your simple recipe. I am very fond of good Chinese food and your simple process makes them so achievable at home. I tried this recipe 3 times at home and they have come out well every time. Once I had a put little more sauce which made the dish a little saucy but other two times were excellent. Just the right amount of sauce to glaze the veggies and the dishes were so tasty and healthy.
    I would try out as much recipes as I can from your library just for the sheer simplicity of your cooking yet the output being so flavourful. Today I am going to try your Tandoori Chicken. Will post how it came out.

    I just made a vegetable stir fry. I added roasted, salted cashew news on the top and also incorporated some pieces of steamed tofu into the dish. I steamed the tofu on top of the rice after it had been boiling for a while. Very satisfying!

      It’s actually more a "method" than a recipe because you can change the vegetables to what you have on hand. For the sauce, you could add chopped ginger, or soy sauce if you don't have oyster sauce. Keep to the basics but substitute if you have to. Shiitake mushrooms, Bok Choi, bean sprouts, whatever you have.

    I appreciate how you teach so simply and thoroughly.
    You explain everything, the "hows and the whys" of it all.. so ANYONE is able to follow you and create a beautiful dish!..
    I learned how to cook by asking questions and watching others..
    Also, trial and error..😬
    ..I believe the most important part of making a delicious stir fry is the vegetables need to be crunchy, not soggy..🤷🏻‍♀️
    Living around all ethnicities, I learned alot of valuable secrets to good tasting and attractive dishes. I appreciate you sharing your SECRETS with us too ! 🙏🏽

    Thank you Kwan, from the UK..I am not keen on turkey for Christmas and my partner and I are going to have roasted duck Roasted potatoes and the usual Vegetables, now that I have seen your stir fry vegetables
    Looks easy to cook, and looks yummy, this is what I am going cook to accompany our Roasted Duck

      Soya sauce goes very well with Chinese cuisine . I too plan to use that instead of oyster sauce .

      Cut the broccoli stem into thin slices should work well.
