- In China, spring rolls are among the most popular foods eaten during the Chinese New Year. The golden color of the spring rolls looks like gold bars. As such, they symbolize wealth and prosperity. This year, the Chinese New Year is just around the corner on February 1st. Let's celebrate by making these delicious crispy lucky spring rolls.
This recipe makes 20 to 25 spring rolls of 1.5 to 2 oz fillings
Ingredients
Fillings
2 oz rice noodles
1.5 lbs green cabbage
10 oz carrots
6 oz celery
2 tbsp minced ginger
2 tbsp minced garlic
Salt and pepper to taste
Optional Meat Choice: Ground pork, chicken, turkey, beef or lamb
Spring roll wrappers (25 pcs)
Sealer
Egg or
Flour paste of equal portions of flour and water

This is really helpful. I appreciate the explanations eg using fine rice noodles as it helps to mop up the liquid from the veggies, also letting the vegetables dry before wrapping for same reason. Very useful info. Thank you! 🙏
Note: oil temperature must be 300-325f or 150-160c

Soy sauce and oyster sauce are a matter of personal preference. Adding starch will make the fillings more dense. Thanks

Could it be that it was not wrapped tight enough? Switch to a different brand of spring roll wrappers and see if that helps.

I was wondering...I've never seen the type of spring roll skin you're showing in the video (certainly because we don't have these in my country) I suppose it's absolutely not the same thing as the rice paper we have to wet in water before rolling it? Maybe it's closer to the brik pastry sheets?
Rice paper has to be wet first before wrapping it into a roll. So, I guess it won't get too crispy when deep-fried. TH-cam has many videos on making spring roll wrapper from scratch with only 3 simple ingredients: flour, salt and water. Take a look if you are interested. Thanks for watching my video.

I believe majority of Asian grocery stores in North America carry the spring roll wrapper.
I buy mine at the chefs store
Other videos have made their own with basic ingredients and rolled thin

Is it possible to completely thaw out the frozen spring roll before cooking 🤔
I'm not sure, and I have never cooked it that way. However, defrosting will make them soggy, and I don't know if they will still turn out crispy. Give it a try but be careful as there could be more oil splatter. Let me know. Thanks

Chinese n Vietnamese dont use vermicelli noodles we use bean thread noodles also called glass noodles.
If you use rice vermicelli you're stir frying rice noodles with cabbage etc. and not making spring rols your recipe is incorrect!😩
i just want to let everyone fucking know....there is no such thing is an Eggroll. Thats just something a white boy call it.
In vietnamese its called: Fry Ham....there is no fucking eggs in it.
