Hi Lisa. Don't worry - it won't ruin you recipe. Non-metalic is simply the advice from canning companies because it decreases the chance of oxidizing metal touching the food. You'll be just fine. :)
I heard it wasn’t safe to can things without sugar? Like the acids and the sugar are what keep it safe to can and keep shelf-stable. Is that true? Does it matter whether you are plain water-bath canning or canning in an instant pot with pressure?
Great question - it's actually not true that you have to can things with sugar to be safe. That may have been true a century ago before we had better kitchen and cleanliness practices. But, this recipe is totally safe for canning! You can use a plain water bath or use an instant pot with pressure - I prefer plain water bath as it is fast and easy :)

I ran a plastic knife around but still have air pockets. My lids did pop. Do I need to be concerned?

Sugar free and no added sugar are two different things.
Looks good but you need to take the Rings off before Storing them.
