So much... during this Social Distancing, I’ve been sharing the love... Dutch Baby and the Apple Butter... and as always... You Rock! Next up Meringue Lemon Bars (squares) I was thinking about what to do with my big bag of lemons, and had settled on lemon bars, when I picked up my phone and there you were, with the TH-cam video! It was like you could read my mind!
I'm going to try this. But quick question, is the apple cider vinegar just for tang/flavor, or does it help preserve the apple butter somehow? I've seen some recipes not use any vinegar and I was curious, and the blog post didn't mention a reason.

looking good chef john!! the one time i participated in making apple butter was in an enormous copper kettle (literally big enough to take a bath in) over an open fire at a reenactment of an irish fleadh. everyone took turns to stir it with a giant wooden spoon. i brought home a few gallons of apple butter to freeze, it was the greatest!
Chef John, this is my Mommie's apple butter. Only Granny Smith's, stirring this all day, only to be able to have it the next morning on cornbread. My favorite. You made me laugh and remember how much I loved being in the kitchen when she was making jams.
Did this today on stovetop, turned out great with 7 hours of cooking. Of course here in Finland I have never tasted Apple butter before but I think mine came out amazing. I'm thinking of doing a larger batch next week and saving some for christmas!
Wow. This morning I decided to make this. 12 hours later it's finally finished. I must say it tasted and smells great every step of the way. It's cooling now, I can't wait to have some on my toast in the morning!
I'm going by what I remember my mother doing, but it also took many hours of cooking to develop a dark caramelized color. She'd turn it off and eventually get it cooking again to avoid burning. But I'm not sure bananas need as much sugar added. There may be recipes out there for "bananada" or banana spread.

We do that too. We make jelly from the peels and cores, and apple sauce and apple butter from the meat of the apple. Add some cloves to your jelly recipe for something truly mind blowing.
I made pectin and put the "mash" through a food mill. I cooked the milled mash into apple butter. I'm ready for grapes with all this pectin and ready for pork chops with this apple butter!
My trees had half a dozen apples this year and only two made it. I don't know if it's an off season thing or the late week of frost just before the blooms came out. It killed all my peach blooms except 3 dozen. Last year's apple crops were full of worms. Well, next year I will look forward to more apples so I can try some of these recipes.
Today is my birthday and this recipe was a great 🎁. I love to use this on a baked ham as a glaze. I only put this on the last 15-20 minutes of bake time and it always comes out perfect. I also add some clove to the spice mix it pairs very well with the ham. Thank you Chef John for your version of a recipe so near and dear to my heart.
Not only do I not peel apples for apple butter, I don’t even core them! We’re straining anyway, but also even the seeds give off flavour and make it thicker. FYI chef John
I love how you kept adding more with every bite. At first I was like “well that’s rather sparingly! You trying to make that jar last forever?!” Then you just started slathering it on and I was like, “that’s what I’m talking about!”
Thanks for this! I’ve always enjoyed apple butter, and have eaten it from childhood. My mom is almost 88 and not in good health. I think I will make her a batch. What a treat that will be for her! Thank you again!!!🍎
Hmm, this reminds me I'm getting critically low on apple butter. I have generally bought it from costco as theirs is pretty good and I was too lazy to realize how stupidly simple this is. I think I'll see about making this in my instant pot. I probably can't pressure cook it, but fortunately it doubles as a really nice slow cooker. This is helpful since my crock pot died...and by died I mean I left the ceramic on the counter to dry after washing and my cat decided it looked better on the floor.
I don't have an IP yet, but my kid does and she loves hers. However, if you're interested in getting another crock for your pot, they're very easily found online. A super quick search had me looking at 25 options on crockpot's website. Not sure what brand yours is, but there's bound to be options for that model as well. I'm also so grateful I no longer have cats. Just sayin.
I made this but didn't time it well so I was bottling it at 3 AM....IT'S DELICIOUS AND I GIFTED SOME JARS AND THEY LIVED IT TOO!! I used Fuji cuz I had two bags of them. I didn't peel them; my husband used his boat motor (immersion blender), BEFORE HE WENT TO BED, and smoothed out the apples. I kind of wished I'd either peeled or strained, BUT when you eat it it on toast, English muffins, anything crumbly, the tiny peels don't matter. Mine came out just wonderful!! I'm planning on making a dozen more half pint bottles. Thanks for all your great recipes AND your sense of humor!! ♡ D
Aww! This video brought back lots of memories of my grandmother. She made hers with apples she dried herself. I loved that stuff. She also made a chilled strawberry jam. Yum!
Forth time making this today. Used fresh picked apples off my tree. 15 lbs and 3 seperate slow cookers. The house smelled amazing! 12 hours of cooking gets it nice and sweet. We jar these in 250 ml jars and give them away at Christmas with my wife's apple crumble recipe that uses an entire 259ml jar as the "sweetener"...that's it. I also have used this apple butter in Chef John's apple fritters recipe as a sub for the sweetener. You don't HAVE to pass it through the fine mesh sieve but it makes it soooooooo smooth if you do.
Very pretty! I make mine for Stack Cakes (Eastern KY...I don't know if it's a thing elsewhere...) & they're amazing. I usually start my apple butter using dried apples (one of my cousins is crazy & dries like half her orchard's apples), which makes the aroma even deeper! I'll remember the apple cider vinegar as I've always used lemon juice, that sounds like a nice change. Honestly, i've put everything from leftover wine to hard apple cider to rosewater in mine...it's always interesting. 〰💙 Great video, as usual, Chef. A reminder to start thinking about Christmas cooking sooner rather than later, lol
The only reason it would be "healthy" is because it has fruit in it. But apples are high in sugar and then you add more so really no, it's not healthier to spread on biscuits than just butter. It's really good on biscuits if you're eating chicken fried steak though!
This is an older one but I just made it with my leftover apples from the fall season! All too mushy and old to eat, but not too old to do this with. Started at like 3pm or so and let it cook overnight on low in the slow cooker. I'm an insomniac so Id occasionally stir every few hours uncovered. Turned out great!
I just made this in my slow cooker and it came out amazing!!! 10 hours and I couldn't be happier with the results!!! The smell in the house while cooking was incredible.
There is a lot of Pectin in the skin of the Apple. This helps make the Apple Butter more firm, and the skin also has a LOT of the flavor and nutrients. Leave that in there. :-)

Great recipe, thanks for posting it! I just finished making it, using the aples from our own trees. So I cut back a little bit on the sugar since these apples are sweeter than Granny Smith. Absolutely delicious, very sweet still but amazing flavor!

Dear Chef I made this last Christmas and cursed the 15 hours it took to do so. BUT the result was so delicious I kept all I made and only gave (little) pots to very discerning friends. We ate it with goose and other cooked meats. I certainly hope to make it again Christmas next. One of the best things I have ever made.

Apple butter was my favorite for toast and English muffins when I was a little girl in the 80s/90s but now I can never find it. Guess I'll have to make it muh self 😎
I highly recommend apple butter with toasted cinnamon raisin bread. It’s good stuff. I make bread and apple butter every year and it’s one of the few food combos no one argues with me about.
This looks like the easiest & tastiest apple butter recipe I have seen yet, I can't wait to get some apples & try to make it. The first time I ever had tasted it I was only around 7 or 8 & it made such a big impact on me that I love it on a lot of stuff, like toast, pancakes, waffles & ice cream. Thank you Chef John for sharing such a great way to make a wonderful thing like homemade apple butter!
I purchase apple butter often but I use it as an ingredient for a BBQ sauce. I had a friend, originally from TX, who made BBQ brisket that was to die for. He had his 'secret recipe' for his sauce which he would not give up. Well, long story short, I eventually got the recipe from him and the secret ingredient was apple butter! What a wonderful addition it is and I always get positive comments when I do BBQ for friends and family. I will definitely give this a try. Thank you!
Needed some Apple Butter. Couldn’t find in local stores. Followed Chef John’s recipe exactly but cut in half. Thought amount was too small for slow cooker so used my heavy bottom pot to cook on stove top. After 2 and 1/2 hours, AB was about peanut butter color so I ran it through my Vita Mix. Oh so smooth and oh so yummy!! Returned it to pot. Will cook on low until a deep brown. I am doing other work in kitchen so no problem keeping an eye on my pot of goodness. Bet it’s ready in another hour or so. Looks like maybe 1 and 1/2 - 2 pints. So didn’t take so long. Going to make some cheddar biscuits to test. Also saw an apple butter pan fried pork chop recipe that should be great. Thanks for your recipe Chef!
@@coolingwinds it's similar. I cook the pears in water and apple cider vinegar with a star anise. Then put them through a tomato ricer. Put the mash back in the liquid add 1/2 c sugar per cup of puree. Add cinnamon, nutmeg, and cardamon. Cook until thickened. I make pear butter on the stove as it's easier for me. Apple butter is easier in my slow cooker.
Could you provide us with the quantity of water and apple cider vinegar and also the amount of pears in this recipe? This year our pear tree went crazy and pear butter would be a great way to usea all those pears.
I made this Sun/Mon this week and was blown away at the ease of this and the flavor was WOW!!! I used 1/2 sugar and 1/2 sucralose and substituted the brown sugar (I was almost out) with Lyle's Golden syrup. I strained it and the texture was smooth as silk. Thank you Chef John. Ps. I really liked that you still got the nutrients and vitamins from not peeling the apples. What a great PLUS.
Love this process! I've always made it on the stovetop. This is do much simpler. My mama used homemade apple butter to make old fashioned apple stack cake when she didn't have home dried (non sulphered) apples.
Watch many of your videos. My family has been making apple butter for over 100 years and have a method that uses zero sugar. We always used apple cider boiled down to a thick syrup. Then make apple sauce and add that along with spices to the thickened apple cider. The cider is the secret to strong apple flavor and the necessary sweetness.
@@sk8erin8er Extreme temperatures and light denature sugar. It's why you store spirits in wine in dark places that have controlled and moderate temperatures.

Yeah, as a matter of fact I was! I would have cut a piece of bread, stabbed it with a fork and thoroughly dunked it, that's how much I love apple butter! 🤗
Coming from the south we always make apple butter once a year, we have 2 wine sap apple trees and make apple butter ever year from it. As tradition dictates our copper kettle has been passed down from mother to daughter for 5 generations. John this looks absolutely amazing and would be awesome on some big fresh Cats head biscuts
My aunt makes this for me every Christmas. It’s really good. I planted some apple trees this year and hope to be making it in a couple years from my own produce.
I have some I made almost a year ago ( I made a lot because my family LOVES it) and it's still good. It does have to be stored in the refrigerator though.
I followed this recipe yesterday using apples from our tree (I think they're Gravenstein). Bingo, jackpot, yureka! The sights! The smells! The taste! So gooood. This morning I'm going to try it on oatmeal. I just hope I can discipline myself to add oatmeal. Thanks Chef John.

Get out of my head Chef John! I was just looking at all these apples on my table thinking I should make apple butter 🤔😅
You only sees his right hand & voice lol~
Same!
Stopped at about 0:35 just to admire the apple-y view. You must have a great set up, or been very lucky with lighting/correct apple dewiness!
Made it, and love it. it's very good, though 12 hours is a bit optimistic for my batch. It was closer to 20
Love, love, love this! I am cooking it as I write. I have watched your video several times. Thank you,.
First! Chef John, I like your humor as well as your recipes! “Now I know, I wasted time peeling apples 🤦🏽♀️”.
Great recipe, thanks for posting it! I just finished making it, using the aples from our own trees. So I cut back a little bit on the sugar since these apples are sweeter than Granny Smith. Absolutely delicious, very sweet still but amazing flavor!
My apples are gonna be ready to pick soon this is just in time for my apple season.. I made peach butter the same way... nom nom * I used my oven set low the 1st time I made apple butter..
Dear Chef
I made this last Christmas and cursed the 15 hours it took to do so. BUT the result was so delicious I kept all I made and only gave (little) pots to very discerning friends. We ate it with goose and other cooked meats. I certainly hope to make it again Christmas next. One of the best things I have ever made.
Gonna eat this apple butter with apples. Muhahaha!! 😇
appleception!
Yo dawg...

Some might say that's..... hardCORE 😶
Absolutely love apple butter. Can't wait for my trees to start producing apples so that I can make it completely fresh from the garden.
MY MAN I SAW YOU TWEET ABOUT THIS ❤️❤️❤️
I prefer "my dude."
Food Wishes OKAY MY DUDE ❤️❤️
You can also call him "His Dudeness", "Duder", or "El Duderino". You know, if you’re not into the whole brevity thing.
I have been loving his great recipes for years, and after one video, I cannot get his intonation pattern out of my head. 😀 Seriously grateful for the shared techniques. He is a master.
i wonder if u can do this with pumpkin.. and plum... and pear..
Yes, yes and yes. Also peaches and cherries (skip the brown sugar and only do about 1/2 the spices)
Oh my gawd, CHERRY BUTTER!! Sounds so good!
Yes, peach butter and pear butter is very good. Peach is probably my personal favorite.
Made this yesterday and oh my it’s delicious!!! I put it on a bagel with cream cheese. Thinking of making a white cake and swirling it thru.
Thank you thank you thank uou
Apple butter was my favorite for toast and English muffins when I was a little girl in the 80s/90s but now I can never find it. Guess I'll have to make it muh self 😎
Always bought it from a local producer, now I'm just going to have to try it. Many thanks Chef John.
I highly recommend apple butter with toasted cinnamon raisin bread. It’s good stuff. I make bread and apple butter every year and it’s one of the few food combos no one argues with me about.
Also excellent on homemade buttermilk biscuits.
Was anyone expecting cayenne in the "plot twist"?
I was
Me too...😕
Yes!
Thank you!
If I recall correctly, the only acceptable way to open an English muffin is with a fork.
That was a pre-cut prop muffin.
Food Wishes it looked like Bays
@@foodwishes
Hahahahah, "prop-muffin"
You're amazing, chef.
I like how he spread more apple butter on after every bite. Lol
@@foodwishes Prop muffins to you!
I just made a batch of pear butter and now I want to make Apple butter to.
Amber Smith , mmmmm 😋. Is it made the same way?
Amber Smith sounds so good!
I read your comment wrong: I read ''pea'' butter and thought it sounded atrocious! :-) Pear sounds about right!
Wish I hadn't stopped watching the video. Now I'll never find out that I can do this without a slow cooker.
Wade Wilson He said Go to his blog for that
😂😂😂😂😂😂I knew exactly what you meant. Hilarious.
Love this process! I've always made it on the stovetop. This is do much simpler. My mama used homemade apple butter to make old fashioned apple stack cake when she didn't have home dried (non sulphered) apples.
"If you stopped watching this, you shouldn't have!" Lmao as if the people who stopped watching it are gonna see that 😂
Watch many of your videos. My family has been making apple butter for over 100 years and have a method that uses zero sugar. We always used apple cider boiled down to a thick syrup. Then make apple sauce and add that along with spices to the thickened apple cider. The cider is the secret to strong apple flavor and the necessary sweetness.
Why does fruit taste plenty sweet fresh, but when we make them into anything we need so much more sugar to make it sweet again?
Sugars lose some of their sweetness as they cook, so we add more to bring it back. I think. I'm not an expert.
@@sk8erin8er Extreme temperatures and light denature sugar. It's why you store spirits in wine in dark places that have controlled and moderate temperatures.
Eons ago when we'd go skiing in VT my mother always stopped at this tiny general store to stock up on jars of homemade apple butter made by the owners...unbelievably delicious, both in taste and memories! Great recipe for a rainy Fall weekend (with of course football...)
I love you, Chef John!
I put orange zest and orange juice in my crock pot apple butter. And it is an essential ingredient in my bbq sauce! Also great slathered on baked chicken the last few minutes in the oven. Thank you for this video!
How about pears in lieu of apples ?
You better believe it. My ex-wife's mother made pear butter all the time..it was great.
Pear butter doesn't sound like it should work, 'cos pears aren't sugary enough... but if you try it, let us know how it turns out!
@@TOASTEngineer granny smith apples aren't sugary either, that's why he added a decent amount of sugar. Pears are sweeter than granny smiths anyway so it should still work fine.
I think pears are too watery to work for this. But I might be wrong
Peach butter and pear butter is amazing. Peach is probably my personal favorite.
I've made apple butter once. It cooked in my crock pot for 2 days before I declared it finished. Everybody loved it. I might have to try it again using this method.
Anyone else disappointed that was all the Apple butter he smeared on the bread?
JulieAnkha N. But then he realized and added more
Same. I was like damn that’s no where near enough. Then he added more and I was like damn that’s better but still not enough. Lol. I put like a quarter inch layer on my tortillas. I’m addicted.
Yeah, as a matter of fact I was! I would have cut a piece of bread, stabbed it with a fork and thoroughly dunked it, that's how much I love apple butter! 🤗
Was hoping for clotted cream
No.
Fact: Granny Smith Apples are the best
Cox Orange Pippin varieties are the best for eating raw (in my opinion).
Ingrid Marie is the best

Opal apples are the best
I made this same recipe except I used some peach-plum hybrids and the smell in the house is amazing, great flavor too!
I'm gonna make this tomorrow!!!! How long can you store it in the fridge?
Apple butter lasts pretty long in the fridge even longer if frozen
I made this in October from apple picking and froze a jar for Thanksgiving and a few others for Christmas and they were great.
Just made this, and it’s delicious.😋 Thank you for this delicious recipe 🥰
"Maybe it's too flavorful and they're afraid people can't handle it." 😄
My aunt makes this for me every Christmas. It’s really good. I planted some apple trees this year and hope to be making it in a couple years from my own produce.
How long does this store for?
When you find out how it tastes, you will know that it doesn't need to store for very long
I have some I made almost a year ago ( I made a lot because my family LOVES it) and it's still good. It does have to be stored in the refrigerator though.
I make something similar with my garden tomatoes this time of year. And yes it takes hours if not days. mmmm so good!
This stuff on a homemade cheddar biscuit is too die for
I followed this recipe yesterday using apples from our tree (I think they're Gravenstein). Bingo, jackpot, yureka! The sights! The smells! The taste! So gooood. This morning I'm going to try it on oatmeal. I just hope I can discipline myself to add oatmeal. Thanks Chef John.
