You have killed this challenge! You are an inspiration, great job! I have managed to either can, dehydrate or freeze 80% of the garden and I am just thrilled with that.
I freeze dry celery leaves for making stock and I powder some for my green powders and salts. Or, if I have freezer space, I put them in the freezer for stock. I know some think it isn't worth the effort, but it's free!

I think you should shred zucchini and freeze-dry it for zucchini powder to add to soups, stews, meatloaf, whatever. Also, cucumbers for Tsatsiki sauce. On every wound that needs a bandage I put raw honey on it instead of antibiotic ointment. I used to not even bandage small scrapes and burns, but I started to get infections. The antibiotic ointment wasn't helping on one I had and I remembered that raw honey can be used. Within 12 hours the signs of infection were gone! I don't use fancy raw honey, just some from the grocery store. A couple years after doing this our dog's scar from a surgery was looking infected. We used raw honey on it and turned it around. When we took her to the vet to get stitches out I mentioned they honey. They said they use it after every surgery when they bandage!
So satisfying for you to see your garden nearly put to bed for the winter and nothing wasted 😊 love working with rose hips , I do a syrup and jelly and an infused oil for skin care ( it’s a process as the rosehips here are bigger and have tiny hairs inside the hip that has to removed before they can be used ) looking forward to watching the winter preparations now the gardens nearly finished 😊

That’s a lot of ginger! I usually freeze my ginger. Basil is one of my favorite herbs. I wish I could handle the jalapeños like you do. They irritate my hands so I have to use gloves. Here in Texas, we love stuffed jalapeños! I stuff them with cream cheese, wrap with bacon and grill them. Delicious! You can also use cheddar cheese to stuff them. That’s such a cool jar!

I opened a pint of cranberry juice. I put cup of cranberries in jar then add light syrup. Water bath. When I open I dilute juice 3 to 1. I add lemon juice and half to 3/4 cup sugar(to taste) the berries I make coffee cake.

Hot Ginger, lemon and honey tea is my cure all in winter. I am sure there is recipe somwhere for making lozenges for colds. My Gran used to have a jar of home made lemon and ginger "lollies" for us as kids.

For something different. If you mix butter honey and whole grain mustard together and then put it on a nice crusty bread and wrap it in tin foil. Then bake in the oven as you would garlic bread. It is delicious. Also powdered ginger in milk for bloated lambs takes the bloat away. So many good uses it has.
IF you strain the hot sauce (that i make by the gallon just like you are), save the strainings.... Dry, powder, DELICIOUS! We like the slices a lot, and the juice makes excellent addition to brines.

There are a couple you tube videos of Alaskans making these different items with the rose hips. Need to remove the seeds those seeds will cause “hairy Butt” itchy end what have ya only use the pulp and skin remove the seeds. The rose peddles are used for making a nice rose drink, rose face cream and essential wild rose. To make the essential oil you will need a distiller. 😊 always on the hunt of new recipes that use Alaska wild products.

The healthiest honey is local raw honey. The bees are collecting from local plants and will better help your immune system. Don't know about freeze dried cabbage, but dehydrated is great just as a snack and in soup and stews.

do you rember back in the day the sold soup starter itbwas in paper can like oatmeal n had freeze dried veggies in it n a packet of the bullion n seasoni gs itbwas very good but I bet you could freeze dried your veggies n kinda make that aswell
Did you know you can just throw whole ginger in the freezer. Just pull it out grate some off as you need it and throw it back in the freezer. This is the easiest way to preserve it. No prep, no muss no fuss. Ok i wrote this before you said it in the video lol
Jessica, stop fiddling with your hair, and using your fingers (with the honey) when preserving food. Living on a homestead with animals there are contamination sources everywhere. Be careful and stay safe!

I’ve learned when you ferment garlic / with honey -- you have to use a qt jar so it will have room to work -- I’ve sooo enjoyed all your videos ❤

try putting a few spoons of honey on the bottom of the jar so the ginger will sink in and top off with honey when done?
