I'm sitting here going crazy over the pepper harvest. I watched it twice. I am a very unsuccessful N Tx gardener. I wish I could grow harvests like that. The plants and baskets of peppers look like art.

I've seen a lot of episodes. I've been watching for years, and for some reason this is one of my favorite ones. Watching harvesting a processing is always relaxing. But watching you genuinely laugh about those jalapeno peppers, just warmed my heart. Haha nice job getting things done

Wow what a day for you. So many peppers and tomatoes to do. I would be exhausted doing all this. Didn’t get that much peppers in my garden this year but then the summer was into the mid 100’s and just too hot. So proud of all you have done. Hearts and flowers coming your way. ❤️💐

Oh my goodness, 😂😂 I can so relate to the all day processing , it's exhausting but rewarding. I'm in Oregon and we still have a few more weeks of nice weather, but I'm actually looking forward to putting the garden to bed for the winter.

I am processing peppers while watching this video. I made cowboy candy. While a very long ad was playing I was able to fill my jars, get them in the canner, clean up the mess and wash a 5 gallon bucket of bell peppers. I’m now prepping them for the freeze dryer. 😊
I so enjoyed learning more about processing peppers. I used to only freeze them, pickle jalapeños and make jelly.

Your harvest is lovely Sarah! I’ve harvested most all my peppers .. a few pepperoncini, red mushrooms and Datil. I’ve got a small bunch of cherry tomatoes left and dozen or so sweet banana. A last harvest of green beans and my garden is done. Yesterday I roasted a bunch of tomatoes for tomato bisque. Harvested the majority of my sweet peppers.. that are green and will dice them up today for freezing. Lovely harvest!

With your tomatoes you could purée them in your vitamix place into your freeze dryer then use your vitamix to turn it into powder. Use the powder as tomato bouillon.

Good morning Kevin and Sarah and Everyone! 🤩😍One way to figure the 5% salt solution is to weigh the water (weigh and zero out the weight of the measuring cup). Take the weight of the water and times by .05, That will tell you how much salt to use for fermenting. Does not matter if you weigh using grams or ounces when using a digital scale.
Bought the KitchenAid version of the Vitamix blender, LOVE it! Game changer making sauces for canning!

We had a threat of frost here yesterday. I didn't freeze at my house but my neighbors 3 blocks away had frost on everything. I think my woods help create a microclimate 😊

Omg! You are a Rock star! It would have taken me 3 days to get all that done! I'm enjoying the freeze drier parts of your video. We bought one over a year ago and it's still in our sunroom on it's delivery pallet. I've been reluctant and dragging my feet on getting it all set up and ready to use. It seems so easy when I see you use it. But when I read how to do it it seems so confusing.

My problem is I've watched too many videos and I'm on a few Facebook freeze drier groups and I've let it intimate me. Also hubby has been pretty busy and we just haven't gotten to it. I've got everything I might need to use it except setting it up in the roomm where we will use it. It's on our to do list.
That was me a year ago. Definitely try to get it set up because if it gets to be over a year since you bought it, it might not be covered under warranty anymore.
I was coming up on a year of having mine by the time I got it set up to use. It didn’t work. It wouldn’t freeze. Went through a whole ordeal with it before they agreed it didn’t freeze. They sent me a shipping box and it had to go back to get repaired. When I got it back I put it to use right away and haven’t stopped since.

I grew the datil peppers last year and made a hot sauce. They are hot little buggers! But the sauce had these fruity undertones.

I used to set at picnic table (under 2 mature trees) & do all my chopping, bagging & so on when i "put up" food stuff. Garden, orchard & meats.
I did save ends of a canning day of everything-- in freezer-- then made rummage relish with cabbage (some from store). So peppers, tomatoes, grean beans, zukez, cukes & all with cabbage & salt, every year was different but yummy. Wish i had known about freeze dryers. I did dry lots of melons & pumpkins & canned them (acorn squash was like candy after dried).
I miss it, but o myyy remember how tired i was with kid & farm too
Try ghost pepper jelly. They'll lose a little heat, probably. Mixed with cream cheese, pepper jellies make a wonderful sweet dip. Beautiful great gifts too.

We got a bumper crop of tomatoes this year! About 8 bu. Made catsup, jam, stewed, sauce and juice. Rest of the garden didn't do well with hot and dry weather.

I noticed that you do not grow eggplants? I spent a lot of summers in Balcan so I love using eggplants a lot. From Middle East to Spain - people cannot cook without eggplants.
I cannot imagine Ratatouille without it.
Egg plants and large zucchini are the inspiration for endless Mediterranean dishes.

My pickling cucumbers and peppers have exploded! I have pickles a million ways including sweet gherkins which take days! More sweet peppers on the plants just days away from ripe. So many in the freezer just waiting for a big enough batch to dehydrate. I have an 8 tray dehydrator. Tabasco, nadapenos, bell and ghost peppers are coming in. Can't wait to harvest and make Tabasco sauce especially. Going to make salsa and diced tomatoes out of my end of season tomatoes and cherry tomatoes. I like to dehydrate peppers so I can use them in pasta sauce when the weather cools. Big preserving days ahead!

Guy from work gave up sliced bery thin haberno equal part red onion. With fresh lime juice to cover & splash of olive oil. So yummy no heat!

Better save some Delicious Juliet tomatoes for Kevin to snack on for a few weeks. They keep well on the counter. Also, make sure have plenty of cowboy candy maybe use swerve or erithrytol. I use my Mennonite dill pickle recipe to pickle tiny or small, firm, green tomatoes and beside dil leaves, i add some hot pepper pieces which makes a delicious pickle. Family favorite. My Mennonite dill pickle recipe uses 3/4 cup vider vinegar to 3 cups water plus 2 T. Salt, 1 T. Sugar or substitute, 2 or more cloves garlic, fresh leafy Dill. Leaves more than seeds. A grape leaf for crispiness. After packing jars, put lids on and water bath can for 10-15 minutes until cucs turn pickle color. Or, keep in fridge as refrigerator pickles

Love this! I have something similar awaiting me and wasn't sure what to do with it all. I'm kinda afraid to go into my pepper patch because I grew some new varieties. I am going to look at your hot sauce and fermenting videos. I love letting your videos run while I'm working in the kitchen except that I have to keep running it back to take notes. You give me lots of ideas.

One thing I like to do is have a waste tray or bowl. I find it easier to then dump in the compost. Or scraps for chickens depending on what veg is being processed. It speeds my clean up just a bit.

I’m done with our garden I have processed everything freeze dried and canned. I am now counting down the long island cheese pumpkins. Some I’m freezing and some are being freeze dried. I think I have seven more to do. So I understand exhausted

I did the same yet I don’t have a greenhouse. I went outside and I looked at everything and I said I think it’s ready to be over… but I wasn’t thinking the plants I was thinking I have preserved and canned and freeze dried so much that I’m done 😂
