Oh girl you need an inexpensive mandolin slicer, makes slices uniform and quick work of slicing tasks! I've worn several out slicing things for the freeze dryer.
Hi, Jess. I had started making pickled eggs & pulled up your video. And your video is about eggs, beets & rhubarb. I canned rhubarb / strawberry pie filling this spring. Your idea of freezing pie filling in pie pan is a great idea. Your rhubarb looks great. When I was in Alaska in 2015 we walked back a side street to a Gem shop & found a rhubarb plant with a sign that said that plant was over 100 years old. Absolutely amazing. But I can’t remember what town it was in, it was a cruise ship stop.
Another great video. I have never had roasted beets. I love beets so I will have to try that. I love the idea of making flavored salts. I am always buying garlic salt, but making your own is a great idea.
Beautiful beets! Your garden looks fantastic. Thank you for sharing all of your knowledge about the calcium, tinctures, and homemade products! I learn a lot from you. Love your homestead adventures, projects and all of the garden preservations!❤
Your dedication to the EveryBitCountsChallenge, focusing on beets, eggs, and more, is truly inspiring. Your commitment to making the most of every ingredient and creatively incorporating them into your meals reflects a wonderful appreciation for resourcefulness and culinary ingenuity. And I am Floating Village Life.
I have been rinsing my hair with straight vinegar (white or apple cider) since I was a kid. Well my mom started it when I was a kid. Makes your hair soft & resets the PH.
Thank you for another wonderful video!! You are such a dedicated wife and mother, harvesting everything that you grow, hunt, and fish. I love watching your videos. Thank you ever so much!!!
Growing up, my mom always made rhubarb sauce, just the way one would make apple sauce, but it required more sugar, because of the tartness of rhubarb. She also made rhubarb crisp, which was a family favorite, and easiest to make, because it didn't require a crust, but the topping of oatmeal, brown and white sugar, flour, cinnamon, and lots of butter, melted and poured over the crisp topping ingredients, mixed in until it was moist, and would stick together, if squeezed with your hand. My mom's rhubarb was so easy to grow, and didn't take much care at all, except to be cut back, almost to the ground, and covered loosely, with straw. I make my apple pies in the Fall, when apples are the freshest. I started by lining deep dish pie dishes with parchment paper, I wadded up first, to make it easier to form to the pie dish. After slicing the apples, I added the ingredients for apple pies, using the little red box of tapioca, found near puddings and jello, in the grocery store. I basically, follow the recipe on the back of the box, but double it, for my deep dish pans. I pour the filling into the lined pie pan, cover it with plastic wrap, and as you describe, freeze it, before removing the frozen filling from the pan, with the parchment paper, and wrap it well, with plastic wrap. When I go to use one of the pie fillings, I make crust and set the apple filling in the crust, while frozen, dot with butter, sprinkle more tapioca beads on top, and cover with another crust, or a crumb topping, like I put over apple or rhubarb crisp, and bake on a cookie sheet, from frozen, in case of juice overflow! I can't tell you what a time savings it is, to have frozen pie filling, already shaped like the pie pan it will bake in. Last year I made 5, but will double that, Lord willing, because it worked so well, and was delicious!! It's so much better, and tastes fresher, than canned pie filling!
Hello, well that was fun! I have never seen that, that was so interesting! I love beets but no one else in my family does. I will have to think of a new way to cook them and get them to try them. Thank you so much for your video. You seem to be doing so well with this challenge.
Hello Jessica from Cape Cod👋. Wow great video today. You had so much good advice that I had to get a pad. I can’t thank you enough for sharing. You are a wealth of great information or suggestions. Thank you. You are my number one channel. Keep those videos coming. Thank you so much. Take care✌️🇺🇸💖
I really like watching your videos, I don't comment, I believe this is my first. The wooden pounder you used on the eggshells is what I use to pound sauerkraut..It was my Kentuckian grandmother's. I am 67, so it's old.... ahahahahaha ❤ Shannon from Virginia ♥️
Hi Jessica and sweet family! Been a busy lady preserving, but the calcium experiment was awesome. Chemistry was my college love. Hope everyone has a very blessed day!
Love the long videos ! Absolutely love home grown beets! So tasty !! One of my favourite veg to grow , thanks for bringing us along as you process all your harvests 😊
I’ve said it before, and I’ll say it again, your a woman of many talents Jess, what a fabulous video, thanks for sharing so much of your daily life, I’ve followed you from the start as you know, you’ve come so far, a total natural in front of the camera now, take care my friend.. Lorraine ( Wales 🏴 U.K ) xx
Give me a fork!! Good thing I am not at your table today, as I could do some damage to the beet harvest! Roasted is high on my favorite way to eat them list!! Hope you are having some sunny days, post rain storm, as that is nature's way of pulling the fallen plant tops back up . Prior to the invention of the veg clips, I used to make strips from ruined pantyhose!! Cut the legs across into rings, then cut those open to make soft strips. Also, knee high hose make wonderful melon slings! So glad that you can safely transport your bounty to the basement, safely using those steps! That has to be the best improvement you all have made to the house. Not to mention the convenience of eliminating the winter angst! Until our next visit.... keep those beets well preserved!! ❤Momma G.
I love it I love them roasted too! It’s been beautiful I’m sitting on the bank of the Kenai river chatting with my friend! The sun is beautiful and water is green!
Love using apple cider vinegar on my hair. Love the ideas for the scaps and the scallions. It looked like the more expensive will last longer than the cheaper ones. Excited to see how you use the beets once they are freeze dried
Another excellent show, thank you Jessica. When I can get egg's cheep in bulk, I make omelettes, quiches and cakes then I can freeze them. Beetroot is one of my favourite vegetable, I only have one kidney & they are a great detox.
Heidi with Rain Country on YT has in depth tutorials on using ACV for your hair (and lots of other things). Curious, the eggshell and ACV reaction🤔 Thank you Jessica!
I've never eaten rhubarb of any kind, pie or otherwise. What does it taste like? Jessica, you're an amazing gardener with a mega-green thumb! Love your videos!!❤😊
Super super tart. It’s not to much like other things but might be similar to an under ripe berry that’s tart, but it’s truly very good. I didn’t explain it well. Sorry about that
Clear enough. And thank for answering me. I love your videos and anxiously await what's next. I just finished watching your challenge day 6 video. Loved it! 😊❤😊❤
I had to laugh when you had to get a larger bowl for the rhubarb and strawberries. I just said to my husband a couple of weeks ago that I don't know one woman that doesn't try to get by with a smaller bowl, myself included. Why do we do that? LOL
I never got into rhubarb. But I always made complete apple and peach and cherry pies in their fresh seasons. I would take them out and right into the oven. My crusts and all came out perfect.
Re the hair rinse: How long are you steeping the ACV & herbs for? Would you do the egg shells & ACV again, or would you do anything different? 🤷🏼♀️ Loving these challenge videos! 🤩
I am thinking of having my husband grow a couple beets as I have not had them since I was little (and out of a can yuck). Maybe that is why I have not had any more.....Ha! He always wants something new to plant but we live in south Texas so maybe it is not possible in our zone. What is their taste after you roast or pickle them?

I have that one, and I would love to freeze dry eggs for my food storage. Now I have to try the beets freeze dried!! So much good information in this video (as usual), Jessica! By the way, did you make a video about fermenting the beets last year? God bless you all!
Ermm, don't you know the rhubarb stores it's natural sugar in the white part of the stem? If you peel the outer layer of the white bit and add it when you cook it you will e able to reduce the amount of sugar needed to get it to taste sweet. I was told it by my 1st neighbour 35 years ago and I've never wasted any of the rhubarb since.

Do you know why things are kosher. A Rabbi comes to the company and Blesses the food. That way people that are Jewish will be able to eat that food.
