Peach season started weeks ago, but the Elberta’s won’t be ripe in Georgia until……last two weeks in July thru the first two weeks in August. Elbertas are very large and juicy and sweet. Our own family has eaten them for generations. I am turning 80 and clearly remember my grandmother preferring Elberta’s, as well as my parents, down to my generation…….and this year, we are passing it down to two more generations.

Re: Hard peaches. Peaches are picked straight from the tree, as the skins are turning from green to that lovely warm peachy red. They're still "green" on the inside and have to sit for a couple of days -- preferably in a warmer temperature (mid-70s? --) to finish ripening to perfection. If you're getting yours from a store and they're disgusting (it happens), I hope you can find a local grower. I moved from the peach region of NC to southern LA four years ago, and was so disappointed with the peaches from local store -- then last week found local GROWER via Marketplace. Oh, man! Real peaches once again!!!
My step grandmother used to make hers in a pie crust and that was not what a teenager needed! I pigged and this reminds me of her so much. Need peaches to make a peach cobbler pie...!

Know exactly what you mean about fresh peaches - buy them at the grocery store & they're still green &/or hard as a rock. Yuck. Will have to try frozen instead of the canned ones I've been using. No one can make peach cobbler like my Grandma's. She put brown sugar, cinnamon & nutmeg with a little lemon juice in hers, no ginger or salt. Her topping/crust was pie dough sprinkled with a mix of granulated sugar & cinnamon. & any left over topping was cut up & baked with the cobbler for an extra treat for us grandkids. Thanks for bringing back some wonderful childhood memories I had buried from long ago❤.
Pam, great recipe and I just Subscribed! Small tip for you. Your sugar Spice and Cornstarch can be mixed together prior to adding to the fruit This will ensure, all get mixed and no lumps are an issue
Looks so delicious, Pam! This was my husband and I favorite desert, but I can't make it anymore. As you noticed, I said it was our favorite desert. About 7- 8 years ago, my husband became highly allergic to peaches! The doctor told him not to even try to put it in the microwave for 15 seconds. That's what he has to do with apples when he eats them because he had an allergic to the apples' skin. She said if he did try to put them in the microwave and ate them, he would end up in the ER, and he could even die!!! That's how allergic he is to peaches now! So I can't even have them know 😭 because if I kiss him or even touch him after eating or touching one, I could put his life in danger!!!

I have been thinking of things made with peaches lately, and I was not sure if I would be seeing much this year because of the recent issues with growing peaches. But I forgotten about frozen peaches. Looked them up, and they are on sale right now. Going to add that to this week's grocery list.
I think some people just throw like a cake mix on top and it bubbles through it and it makes them you know the Cake part for the cobbler I don't know what they call it dump cake baby but yeah that looks really good you always got everything looking good making people hungry❤😂
My mother used to buy peaches from a farmer and can them and fix cobbler. The last time I bought some from a farmer’s market, they were all bad. Miss Pam, there’s nothing wrong with frozen fruits or vegetables. I know you didn’t indicate such but some people have a weirdness about frozen
I got a basket of small peaches over in Wrens, Ga. I didnt know they werent free stones. I made the biggest peachy mess but the cabobler (kidspeak) was good. Now I know to ask.
