    The subtle, funny edits in these videos and Chef Jean-Pierre's personality always cracks me up. The pop-up of the helicopter in this one got me pretty good. Thank you to everyone involved for putting in the work to make this series, it's been exceptionally informative and entertaining to watch.

    It's amazing how effortlessly healthy and balanced these recipes are compared to a number of channels who go for healthy and add all kinds of substitutes and over-processed ingredients like "low fat" this and "high protein" that, then end with a soggy rubber they pretend is tasty and healthy.
    In this stir fry you got the protein, the carbs, the fiber, the fat and a whole range of vitamins. Even the fermented additives for the sauce are good (if they aren't loaded with chemicals).

    Hi Chef JP, I just made my stirfry. I pre-marinade my chicken with soy sauce + sake for 20 minutes. My vegetables were carrots, mushrooms, snow peas, red pepper. i appreciate the tip for "thickening" sauce. I use tapioca starch. Thanks for video!

    The main thing with Chinese food (or ALL food) is get it out of the pan and on the table NOW. Most restaurants could do better if they did this. You can tell JP knows this and enjoys his food HOT. Love JP.

    I used a wok-station for 6.5 years at Red Fox of Mariposa and each wok "burner" had 32 propane "jets" - so even raw vegetables cooked up super fast.
    If you're using a thick-bottomed wok on your stove at home - I can see *those* vegetables taking considerably longer to cook than they should but if you're going to a restaurant and ordering stir-fry from someone like me, you're getting fresh-cooked vegetables made in a large, thin wok, over a very high heat.
    1x oz. oil
    1x oz. chicken stock
    1x oz. teriyaki with ginger
    1x oz. corn starch
    Other than that, it's whatever you want in there.
    All that being said; I love this recipe!
    Chef Jean-Pierre never disappoints!

    I spent an entire day seasoning my wok with food grade linseed oil. About 8 layers. It is now glass hard, very non-stick and black as onyx. Between cooking, I season it with sesame oil, which helps it give very nice Wok-Hei. Every few months I remove the handle and give it a really good clean to smooth the surface and re-season it with linseed oil. The cheapest wok I've ever had, and the best wok I've ever had.

    There you go again.... simple and easy and the sauce was exquisite really. I did a BIG portion thus time for 5 people served with green salad on the side and believe it or not I put some of the sauce with the salad dressing AND it was delicious. Thank you again for your lovely ideas.

    This is great to see and the method can be applied to so many different stir fry variations. I like the simple sauce technique that allows you to control the amount of salt. Never buy pre-made sauces at the store as they are highly over-salted. For those looking to go deep, I highly recommend Chef Chu's books for a master class in Chinese cooking sauces.
    What I would like to see from our lovable French chef one day is how he makes egg rolls, the most notorious item in American-Chinese fare, but sadly, the least perfected.

    I love it when Chef teaches me how to really jazz up something simple, and I love it when Chef shows me how to just keep it simple!!
    I have a request from my poor, sweet hubby who loves seafood, but I am allergic. Do you have any tuna recipes easy enough for a man who rarely cooks to make? I know you have often said "So easy a child could do it" but what about husbands? :)

    The best thing about stir frying is that it's quick, easy and delicious aswell as nutritious!
    Using up all the leftover vegetables in any dish is a great way to learn how to cook and save money.

    Nice one Chef! Apart from the ratio of sauces (and broccoli and asparagus) , you also basically made Thai sweet and sour chicken! Maybe some pineapple and a bit of tomato sauce. Almost the same - Phad Priaw Waan. Delish

    So many vegetables get along with each other, a dish like this is perfect for using leftovers. And I can recommend having some good soy sauce (preferably both light and dark), oyster sauce, mirin, sesame oil and a quality hot sauce at hand at all times. You can do magic with any combination of those.

      Great list. I also include Sweet Chili Sauce and Fish Sauce in my list. The Ka-Me and House of Tsang brands are quite good though for top of the line fish sauce Red Boat is best in my opinion. Some of the other brands can be quite nasty.

    I love this. I love to make things out of what's left over in the refrigerator and use up vegetables.
    And you are so happy while you're doing all this and then when you taste it at the end you obviously are very much enjoying it which I also like.

    I suggest Chef JP marinade the chicken with baking soda. It tenderizes it effectively.

    5 seconds in. im a 8 year strictly 8 year running best thai restaurant in town cook/prep/dish/custodian/deep cleaner.
    almost all i cook atm IS thai style chicken fried rice and pad thai. let’s see what i’d change

    Afternoon Chef J-P, good to see you cooking some stir-fry. Always a welcome dish in our home. Love the selection of vegetables you have used it makes the dish really attractive. We made a sauce to serve separately on the noodles, but making the sauce in the one wok is a much better idea and just enough thickener to coat the chicken and vegetable, another winner for the table.     excellent dish. it is so versatile, like you said. whatever you have in the fridge. perfect for those times that you come home from work and dont want to spend hours cooking. i always like to add julienne fresh ginger, minced garlic, and scallion (white part only, the green i use as garnish) after the chicken is half way done. the aroma of those three is amazing.
