    Good morning Paula! This was such a great video. First of all, there is nothing better than fresh salsa especially in the summer. Second, I loved your story about the military. My deceased husband was in The Vietnam war and I have a special place in my heart for veterans, past and present! I’m sure those men and probably women loved being fed by you, the Queen of southern cooking lol! Take care and God bless!

    Looks great Paula. Thanks for the tip on the peaches. The last time I made your peach cobbler, I peeled the peaches by hand. What a job! I have used the frozen peaches and they work well too.

    Yes you need cilantro & it is called Pico de gillo which translated is roosters beak. Salsa is a bit more runny with tomatoes crushed up more & you can have all different ingredients. Pico is great to keep around bc it tops off almost everything...it's great on scrambled eggs!

      Salsa most of the time is cooked where Pico is fresh. Definitely need the cilantro and it's also good with red/purple onions tends to be sweeter. Pico is good on everything.

    Thanks Paula! Have been wanting to start making my own salsa & appreciate this recipe. I will definitely add cilantro. The last time I saw tomatoes put in boiling water to peel was 30+ years ago when my mom would do same before canning whole tomatoes from the garden. Brings back good memories ❤️

    I love Salsa!! I don’t want mine as hot as my husband likes his, but I do want it to have a little kick!! I’m wondering Paula…I need help!! My husband doesn’t like many tomatoes in his salsa. He likes it green. I usually use the tomatillos, jalapeños and onion. He’s very picky when it comes to food! (I was raised when you sit down to eat, you don’t complain or else you may go to bed hungry!!)) My husband, Eddie Collins, his mother would always make him things that he liked-which was different from the other family members. (Eddie was sick when he was a baby and she spoiled him!) I’ve pulled him out of that some, (but not all-we’ve been married for 43 years & 5 months!!) it’s been hard! Also, he doesn’t like cilantro or many fresh herbs. I have been sneaking in dried herbs and I use the green part on the green onions! What else can be added into salsa to make it appetizing? He’s also a diabetic and he’s losing his vision! We still like to take trips, only now I’m the one that drives instead of him! We live in the Western part of TEXAS about 35 miles southwest of Odessa. We love to drive to Ruidoso, New Mexico and go up to Alto, New Mexico (about 10 or so miles out of Ruidoso.) and we go and eat and listen to the “Flying J Wranglers!!” They play instruments, sing, tell clean jokes (family style) and do skits!! You need to get there around 5PM, to get your ticket and a good place to sit so you can see good and it’s usually over by 10PM! They start feeding about 6:45-7PM then they start the show at 8-10PM!! They are fantastic!! We’ve been going there now for about 30-some odd years and we love it every time we are there!! They also have a “Flying J Wranglers Christmas” which is lots of fun!! Christmas 2021, they had “Christmas At The Ranch,” which was at the place where they hold the singing, the feed, they sell their CD’s! (we have all of their CD’s!). They are a fantastic family and group. (Check them out online!) One thing…if you don’t like Country & Western Music, you probably won’t like them. (James & Cindy Hobbs & daughter & son-in-law & other friends in the band!) I’m sorry, I didn’t intend on getting off on another subject, but felt like it was important.
    Paula, I’m sorry this is so long, but if you could help me come up with a Salsa that my husband would really like, he would really be excited about food again! I’ve tried different things but his taste buds were messed up before I got him. lol Anyway, he usually (more times than not) loves my cooking! We love “Mexican Food!!” (Also, he doesn’t like avocados, I do but not Eddie!). Thank you Paula! I have watched & loved you since the first time you were on the FoodNetwork Channel!!

    Thanks for your support in the troops Paula and Theresa and whoever else does that because my dad was in the navy for 20 years so I’m a navy brat he was in the desert storm and was in the first ship over there because they were on the way home from the voyage they were on thought to let you know that he’s passed on since October 1998 and his birthday is this month so as my mom and she’s passed on to this month is her anniversary of her passing

    It ain't Salsa without fresh cilantro. Here in Texas, salsa is the most popular condiment. We usually use plum tomatoes because they aren't as watery. I also chop them up with the skins on them. No need to peel them. Sometimes I will also add a chopped bell pepper along with the jalapeno to give it a kick without added heat. I also add a sprinkle of chili powder and about a teaspoon of olive oil. My adult kids can polish off a quart of salsa in a single evening.

    you best add six cloves of garlic minced one Vidalia onion diced and lime cilantro salt to taste avoid heart burn and boil garlic until done

    It’s called roosters beak because the thing on top,of the beak is called the pico. So pico de gallo is beak of the rooster

    I'm not Mexican, but that is pretty much how I make it, awesome recipe. The skins don't bother me, it always gets cilantro and if I can get them, tomatillos. Don't mess with dull knives! Dangerous and $10-15 gets you a dual grit whetstone. If you can cut with them, you can learn how to sharpen them.

    My recipe is all that plus a little olive oil, a little sugar, black olives chopped, fresh jalapeños chopped, seeds & membrane removed & some red wine vinegar, cayenne pepper to taste. Instead of plain salt, I use seasoned salt, & if U want more spice, add some bottled hot sauce. I’ve just practiced this over the years

      @@charitys.3862 I like to put red and green bell peppers, not too much of the green pepper, purple onion, cucumber, peeled and seeded, fresh parsley, fresh mint, jalapeno, and a few mandarin orange segments, cut in 1/3's. Cider vinegar, salt n pepper, pinch of garlic and some FRESH grated ginger, a hint of cinnamon... Everything to your taste! It's delish, especially with the hint of ginger.....best if made early in day to use for dinner, and I like mine to sit out of frig for a half hour before using. Love it with chicken and pork.
